My headcanon about the Stolls' mom is that she is a badass (maybe international) thief and hacker, because the surname Stoll absolutely can not have been organically the surname of children on Hermes and Rick's naming habits aside, the way it makes more sense to me is that she, at the point of having her sons, had a fake identity that she registered them under.
