MMCCB Recipe

This recipe came about whilst after years of having to improvise and find pleasure in the small creations and time spent together. Time spent with your loved ones is something which is invaluable and can be jam filled with life lessons. My daughter titled this creation (which I’m sure is not entirely original) ‘MMCCB - M and Mum’s Cheesy Chicken Bites.’ I must confess that the name required several revisions before we concluded that readers needed to know that they were cheesy and chicken…

This recipe has been endorsed by M as the perfect dish for anyone who enjoys chicken, cheese, and schitzel! We hope you enjoy!

Cooking together with your children can also present an opportunity to highlight the importance of doing one thing at a time, and following processes to achieve a desired outcome. On this occasion, we practiced her handwriting and spelling as well. I uploaded the unedited version, because I thought it was much more adorable ☺️☺️.

Of course, if you are an adult, you are certainly not obliged to indulge in this carb heavy treat… The second evening, my daughter decided she wanted more cheese so we sprinkled the bites with Parmesan. Do this with caution, as she said it was too cheesy as soon as we had done it.

This week is #CarersWeek Mum this is for you 🤍

Never did I think that in my twenties I would need the help of a carer but life is unpredictable and things happen.

I still struggle with the idea of needing a carer, someone to help me achieve the simplest & basic’s of tasks.

My wonderful mum just stepped up, no questions asked.

Even though she works and has her own health issues, she took on the extra burden of caring for me, more than just the normal parenting and became my carer.

She’s with me every step of the way, she never complains, she takes everything in her stride and she goes above and beyond to make sure that I still find the joy in life.

I trust her with me & my health.
