Aunt Shelia’s Baked Mac and Cheese
My Great auntie’s famous baked Mac and cheese is a family favorite. This is a dish we all look forward to on special holidays. I feel that what makes this dish even more special is the fact that we only have the chance to eat this meal twice a year. Which is usually on Christmas and thanksgiving!
This is due to the fact that my family is spread out across the country, in states such as Texas, North Carolina, Utah, Tennessee , and Georgia. So when we all gather together for Christmas and thanksgiving dinner it is a time to rejoice and eat!
I have decided to include this dish because this is one of my favorite meal to eat! Over the years, I have learned to create my quick on the go version of baked Mac n cheese which includes, noodles and shredded cheese, but it has absoutely nothing compared to my Aunt’s famous baked Mac and cheese.
My Aunt Shelia is always full of joy and positive energy. I love hearing hearing my Great Aunt stories, while we’d prepare the Mac and cheese for our family dinner. She’d tell us the many stories of her and my grandmother and the trial and tribulations they have faced growing up in the 1950′s with 8 other siblings. Her story motivates me to be strong and reminds me that I can do anything if I Try!
Her delicious baked Mac and cheese is cooked to perfection with 3 types of cheeses, whipping cream and milk ,lots of garlic and love! This scrumptious recipe creates a cheesy and moist meal that you can not get enough of.
Ingredients
(2) 16 oz elbow macaroni,
1 tbsp extra virgin olive oil
6 tbsp unsalted butter
1/3 cup all purpose flour
3 cups whole milk
1 cup heavy whipping cream
4 cups sharp cheddar cheese
2 cups Monzerella cheese
salt and pepper to taste
1/4 tsp smoked paprika (or regular paprika)
Recipe
Step 1: Preheat oven to 350F. Combine shredded cheeses in a large bowl and set aside.
Step 2: Cook the pasta, drain, and then place in a large bowl.
Step 3: Drizzle pasta with olive oil and stir to coat pasta. Set aside to cool while preparing cheese sauce.
Step 4: Melt butter 2 sticks of butter in saucepan and Whisk in flour over medium heat and continue whisking for about 1 minute until bubbly and golden.
Step 5: Next carefully whisk in the milk and heavy cream until nice and smooth and then add in your salt and pepper.
Step 6: Add in your all of your Cheese and mix together thoroughly and then stir in the cooled pasta until combined and pasta is fully coated with the cheese sauce.
Step 7: Pour half of the mac and cheese into the prepared baking dish.
Step 8: Lastly, In a small bowl, c Parmesan cheese, melted butter and paprika. Sprinkle over the top and bake until bubbly and golden brown, about 30 minutes. Then you are ready to eat!

“..it’s too much.. I’m never going to make it.” Laffy’s face was buried into the tablecloth. Little impatient whines were becoming audible, but to the point only Yakko could probably hear.
She sat up suddenly, all fine and alert. “Oh! Hey! Our food is h-...oh nooo? Nooo..Not.. not ours...Waaaaah...” Her cheek fell to the table again as she started poking at the monzerella sticks half-heartedly. “I suppose...the appetizer, will suffice me...maybe. If I die, just know I luvs yoou~”
