Punjabi Kadhi Pakode-wali | A Mad Tea Party
A bit more spoon-intensive than I probably really needed this evening, but totally worth it. I’m still stuffed, but the smell is making me want to get a little more food before long anyway.
I’d thought before that the tart homemade kefir would probably work really well as a substitute for the buttermilk or yogurt in a dish like this, and it did turn out great. I halved the quantities here, and it made plenty of saucy goodness for two hungry people plus some.
Next time I may have to try some combo onion and potato pakoras as suggested there, because that does sound really good. (Also just to eat on their own.) But, we were unexpectedly out of potatoes and I didn’t want to go out after more, so tonight I just made the usual no real recipe onion pakoras/bhajis to throw in there. Light on the seasoning like in the recipe, since they were going into the sauce. But with some salt included, since I couldn’t resist making a few extra for us to gnaw on so nobody starved while the kadhi and rice cooked ;)
I also threw together a simple mixed vegetable dish (with a frozen veggie mix) to round things out some, which turned out yummy too. So of course we have plenty of everything left for another meal. Not about to complain, even if the pakoras do fall apart sitting in the sauce. Still a welcome lunch!
