Instructions:
In a large pan, dry roast the red chili peppers over medium heat until fragrant and slightly darkened, about 2-3 minutes.
Add the coriander seeds, cumin seeds, caraway seeds (if using), fennel seeds (if using), cloves, black peppercorns, cinnamon sticks, cardamom pods, mace (if using), and nutmeg. Stir continuously until fragrant, about 2-3 minutes.
Remove from heat and let the mixture cool to room temperature.
Transfer the roasted spices to a spice grinder or blender, along with the turmeric powder.
Grind until a fine powder is formed. Store in an airtight container in a cool, dry place for up to 6 months.
