I unfortunately think that part of getting healthier is NOT making and then eating half an entire dessert every day......
But i made all my lentils for the week and roasted 1lb of beets which came out to like. A handful of actual beet pieces after trimming and peeling and dicing and then ultra-roasting TT TT
Then of course another soup - this time a cannelini bean & kale. Well i didn't have cannelini so i used great northern. And i didn't have a potato so i used some of my gnocchi from a couple weeks ago. And the recipe wanted me to add an entire can of diced artichoke hearts which was FINE but it was just kind of.....there??? In the soup?? Added a bouquet garni except the sage and rosemary stems were HUGE and then i lost them and then the broth started smelling medicinal so i fished them out. But that's lunch for the rest of the workweek done.
Still torn abt the lentil and beet recipe i need to mix in all this "tangy vinaigrette" to the beets and lentils AND THEN add in another "creamy herb sauce" like. What are we doing here really.
