One of the entirely unique main events of Courir de Mardi Gras is the live chicken, acquired through pantomime begging, that is thrust into the midst of the Mardi Gras to be chased. Whilst traditions vary between the communities of the Acadiana region of Louisiana, it is generally agreed that the day's celebrations result in a shared feast of gumbo, before the strict rules of Lent are enforced on Ash Wednesday, the following day. . Courir de Mardi Gras celebrations are led by a character known as 'Le Capitaine', a cape-donning, whip-brandishing character on horseback. The costumed merry makers, known collectively as 'Mardi Gras', follow their leader in alcohol-fuelled mischief making with the goal of gathering the ingredients for a gumbo (the official state cuisine) through begging. In calling on the community, costume play, and trickery, Courir de Mardi Gras is similar to other originally European traditions such as Halloween, Wassailing, and Mummer's Plays. . Today has many names: Shrove Tuesday, Pancake Day, Mardis Gras, or Fat Tuesday. In many Cajun communities of South Louisiana, however, today is Courir de Mardi Gras. Or, in Cajun French, 'Fat Tuesday Run'. The festival has its roots in Catholic medieval France and uses the church as one of many ideals against which to rebel. Through costume play, revellers also subvert societal norms of gender, race, and class. Class is particularly important, as Courir de Mardi Gras is derived from the Fête de la Quémande, or 'Feast of Begging'. In medieval times, when poverty and class disparity were severe, a day on which poorer people could beg or perform for provisions from wealthier landowners was a blessing. Reflecting their poverty and creativity, they invented disguises and fashioned costumes out of old scraps, which has directly influenced the homemade, patchwork style of modern Courir de Mardis Gras outfits. .
