This is by no means a comprehensive list, but here are a couple of Saeran fics and/or writers I can recommend off the top of my head.

I can only assume you've already been through @marshmallowprotection's blog, yeah?? Kait has many excellent fics (both oneshots and multi-chapters), and is also just a literal treasure trove of Saeran content. Everything here is gold.
