Lemon (or orange, or whatever you like) mug cake recipe!
Ingredients:
1/4 cup + 2 Tbsp flour
2 Tbsp sugar
<1/8 tsp salt (I handle this + baking soda by adding both to a 1/4 tsp measure at the same time and ensuring they don't fill the whole thing. it's not too precise)
<1/8 tsp baking soda
1/4 cup + 1 Tbsp milk
1 Tbsp citrus juice
1/4 tsp citrus zest
2 Tbsp melted butter
honey (optional)
Steps:
Whisk dry ingredients in a bowl
Combine milk, juice, and zest in a measuring cup
Melt butter
Add milk and butter to dry ingredients, whisk until smooth and well-combined
Pour into microwave-safe container - look, I know mug cakes are supposed to be in a mug, but the tallness of mugs really isn't optimal for microwave cooking and it comes out so much better if you divide it into two mugs to make very short cakes, or honestly, just leave it in the mixing bowl if it's microwaveable, it'll cook so much better.
Microwave approx. 2 min 10 sec on high (start with a shorter time and check periodically the first time you make it, as microwaves vary greatly)
Optional: drizzle a little bit of honey over the top, it's delicious.
Recipe adapted from this one. You may notice I used baking soda instead of baking powder; since the citrus juice provides acid you don't need baking powder and can just use baking soda. Also I don't have baking powder.
