Freeka/fareeka/ freekeh which ever way you pronounce it or know it as. This beautiful tasty and nutritious grain arrived from Lebanon. A home prepared grain, not commercially bought. Freeka is an old grain I grew up with. Now it has been adopted by many chefs in the west. It is wheat picked green then charred over open fire, and finally rubbed to get rid of the charred bit, although the smokiness stays and flavours this amazing grain. Cream of lentils is a very tasty soup. Using any lentils you like cook until soft, put in a blender and cream to a pulp, put in pot and add a handful of rice and onion sliced lengthways salt to taste and an optional knob of butter. Serve it with toasted flat bread, lemon juice. I love to eat it with Lebanese olives and radish. Shish Barak/ meat dumplings cooked in my own goats yoghurt. It’s another recipe uploaded on my YouTube channel. Please remember that the videos are shot and edited by yours truly so please forgive the air of naïvety if any! Shish Barak is a Turkish name, it’s an old recipe been documented in a book dating back to the 15th Century. Many people serve it with kibbeh balls and also some like to serve it with rice on the side. I make it the way my mum used to make it served on its own and the rice is not on the side but stewed in the yoghurt .
