Acetic acid is also used as a food additive to control acidity and acts as a preservative.
This acid can enhance the acidity (and lower the pH) of food products and advance the organoleptic quality by supplying the product an acid flavour - such as salt and vinegar chips.
The acid is also a common preservative as it prevents bacterial growth in dressings, sauces, pickles and cheese. Acetic acid/vinegar is used in pickle foods, which is a type of preservation process. When used with baking soda, acetic acid also acts as a chemical leavening agent.
