The main thing with latkes is you want to squeeze out all the excess water before you fry them, otherwise they get all soggy. As long as you do that I don't care what you put on them (except ketchup. You monsters)
I think I can come up with worse than ketchup to be honest, but yes. Agreed on the squeeze. No soggy latkes!

southeast USA jew here-- i actually know some farmers that hook me up with the stuff i need to make my own honey butter. it's delicious. and i am looking at my latkes... and Wondering. thoughts? advice?
First of all, you are so lucky you have that connection with local farmers; that sounds top tier, and second of all.... I don't see why not give it a shot?

on the latke alignment chart, you鈥檙e so close, if you鈥檇 switch eggs/lox and applesauce/sour cream
So there actually was a logic to how I did it (not just personal preference, although obviously that played a role.)
The traditional toppings and the combo of them had to be in the lawful column. The weird (or innovative, depending on how you look at it) ones had to be in the chaotic column. And the non-standard but common ones had to be in the neutral column.
From there, I ranked the traditional toppings by my preference. Sour cream is what I prefer, but I can understand why people like applesauce even if I don't. I really don't think the combination goes well together and tbh it looks gross to me.
True neutral had to be the closest thing to no topping, i.e. - salt. Ketchup is common but jumblr has decided it's evil and personally I don't get why you would bother to make something as tasty as latkes only to put something as banal as ketchup on it. It's like putting ketchup on steak imho. Like idk you do you but I don't get it. Garlic aioli is delicious and I would try it on latkes, but it too suffers from the same problem that ketchup does - it's like putting A-1 or Worchestershire sauce on an already seasoned steak. Tasty, but neither traditional nor innovative (weird).
Then you get to the weird stuff. Eggs and lox are delicious (throw in some capers and onion too tbh) and it's delightful but strange. (My opinion, obviously.) YMMV if you're one of those people who doesn't like lox for some reason.
Horseradish and mayonnaise honestly seems like it should already be A Thing, but apparently it's not?? Hence chaotic neutral. The chocolate sauce thing is just wild and tbh if you can enjoy such a travesty, more power to you lol.
