GF breaded chicken with a basil mozz salad👉 INGREDIENTS 👇 2 chicken breasts 1 egg ~1/4 to 1/3 cup of Italian breadcrumbs (I used @appelfoods nut crumbs) 1 cup of whole cherry tomatoes 1/3 cup of mozzarella pearls 12 large basil leaves 1/4 cup of green olives 1 tbsp balsamic vinegar Arugula Balsamic glaze 2 tbsp of olive oil *Serves 2 . 👉DIRECTIONS Whisk the egg in a bowl (with salt & pep) & place the breadcrumbs on a plate. Coat the chicken with the egg & then transfer to the breadcrumb plate. Coat front and back of the chicken with bread crumbs & place on a heated plan with olive oil. Put the top on, let sit for ~4 min & flip. Place the basil leaves on top of each other, roll into one large log, then slice several times down it (this’ll make strips of basil). Add to a large bowl, along with the cherry tomatoes (sliced), olives, mozz, balsamic vinegar, and salt + pepper to taste. Once the chicken is done, place over arugula and serve with the basil salad as well. Drizzle balsamic glaze over everything. We love a fridge dump salad Lemon oregano salad with baked salmon Ingredients 👉 Honey garlic salmon: .85lb salmon 1 tsp minced garlic 2 tsp coconut aminos 1 tsp honey 1 tsp lime juice 1/2 tsp salt (to top the salmon with before going in the oven) . 1/2 of a large avo Handful of cherry tomatoes 1 tbsp @followyourheart dairy free feta crumbles 1/2 of a head of organic romaine 1/2 of a large lemon 1/2 tbsp olive oil 1 tsp dried oregano 1 tbsp pumpkin seeds 1/2 tsp salt + pepper *Note portions for the salmon are for 2-3 (this was just prepped before hand) but the rest are just for one! DM me if you have q’s :) . DIRECTIONS Wash the romaine, chop, add to a large bowl, & pat dry with a paper towel. Squeeze in lemon juice, olive oil, and sprinkle oregano, salt & pepper, and pumpkin seeds. Let the greens chill in the fridge while the salmon cooks. Put the salmon in a baking dish, combine the salmon marinate ingredients, and pour onto the salmon in the dish. Bake at 400 for ~12 min then broil for 5 min. Top on your salad along with the rest of the ingredients. Honey garlic salmon with basil & lime broccoli slaw INGREDIENTS Broccoli slaw: 5 cups broccoli slaw (from @traderjoes in produce section) 2 tbsp lime juice 1 tsp honey 1 tsp minced garlic 1 1/2 tbsp coconut aminos 1 tbsp rice vinegar 1/2 tsp salt 2 tsp sesame oil 2 tsp black & white sesame seeds 8-10 large basil leaves . Honey garlic salmon: .85lb salmon 1 tsp minced garlic 2 tsp coconut aminos 1 tsp honey 1 tsp lime juice 1/2 tsp salt (to top the salmon with before going in the oven) . DIRECTIONS Pour the entire bag of broccoli slaw (it’s about 5 cups) into a large bowl. In a small dish, mix together all the ingredients to make your sauce. Pour into the big bowl, add the sesame seeds & basil separately, & then mix thoroughly. For the basil, I lay them on top of each other then roll them from the bottom up (into like a little basil strip) & cut down the strip. I hope that made sense lol. Next, put aside to marinate. . Put the salmon in a baking dish, combine the salmon marinate ingredients, and pour onto the salmon in the dish. Bake at 400 for ~12 min then broil for 5 min. . Try the slaw & make sure it’s to your liking! Add more lime/coconut aminos as needed.
