Pad Thai with Kelp Noodles Peanut butter adds about 6 net carbs to this dish. I little one note in color; will add more carrots and string beans in the future for color. Kelp noodles are fantastic and a perfect solution for carb heavy noodles. Soak Kelp noodles in warm salt water for at least 20 mins prior to using. Chicken and scrambled eggs add a bunch of protein.

Pork Roast with sautéed zucchini and mushrooms, steamed broccoli, and a bit of mashed potatoes. Beautifully crusted pork roast finished in the oven to an internal temp of 145. Zucchini and mushrooms sautéed in the pan the roast was encrusted and seared in. Basic steamed broccoli. The mashed potatoes add about 8 carbs to this dish, the days balance was at about 3 carbs so this was a permissible “cheat.” Serving plate is a small dessert plate.

Pizza with a cauliflower crust Super low carb. This features a basic cauliflower crust, the trick to this is pulling all of the water out of the steamed cauliflower. Lint free tea towel and muscle power is what it takes. Added oregano, parsley, basil, and garlic to the crust. Bake it on a pizza stone at 400 for 20 mins then add those toppings. If you’re using “juicer” toppings like pineapple, let the crust cool a bit before adding the toppings to prevent the crust from absorbing too much moisture.
