New dish I created. I love my colors Kinda dig the plate, the actual plate. Plates do so much for the aesthetic I love octopus charred and with Spanish flavours like romesco and chimichurri. This is somewhat of an Iranian twist with beet borani. Pretty unique flavours here, but still a very simplistic dish. Hand made pasta, tossed with a sea urchin enriched lobster bisque topped with perilla leaf( shiso),uni( sea urchin) and ikura( salmon roe). A rich pasta,creamy from the sea urchin but no cream added. Has a very deep umami flavour( earthy and/or natural ocean saltiness). If your a seafood lover, you will love this. If you like asian flavours, you will love this. If your like me and you like both, you will love this and you will put this in your back pocket as a show stealer. This is a dish where if your ingredients are of the highest quality, its the simplicity you will remember.
