It must be Autumn, chestnuts are here. If you've ever visited London or New York in winter you would have lovely memories, as I do, of roasted chestnut stands radiating their warmth and smell on the cold streets. It's unfortunate that we don't get them here, though it's never that cold I guess. They do taste delicious freshly roasted. The trick to roasting your own is quite simple; use a turning knife (the curved one pictured) and use the point to score a cross across the flat side of the nut, then roast at a high temperature so the shell blisters and opens where the cut is. Some chefs deep-fry them to split the shells as they can be a bit of a challenge, and both these methods are effective. Hearty winter herbs such as sage and vegetables like roasted celeriac and beetroot are perfect additions if you want to flesh them out into more of a meal, too. #chestnuts #autumn #itscoolingdown #instafood @gourmettraveller
