Hello Anon! Ah, well, as you maybe know I’m no fan of the Kuro anime, s1 included and s1′s ending in particular (s2 doesn’t exist).
I know more than a few readers like to sometimes theorize about the manga’s future developments while comparing the current story with s1, but I don’t think it works everytime and I would dislike it if the manga ended similarly to s1.
First of all, while I do see Ciel die in the manga, I don’t think Seb will necessarily get to eat his soul, because I believe it’s possible that at some point Ciel will question the reality of the contract binding him to Seb.
Secondly (and considering that I believe that Brown and Victoria are the big bad [x][x]), like I explained above & several times before, I prefer the idea that Brown is a demon, or even least a Shinigami’s higher up rather than an angel, because I disliked in s1 that an angel ended up the absolute big bad while ‘uwu Seb teamed up with Shinigamis uwu’, despite despising them in general.
S1′s ending just... doesn’t make a lot of sense with the worldbuilding and the dynamic between the different supernatural groups so far in Kuroverse.
Don’t get me wrong, I’m not vouching that “Angels are Good and Demons are Bad”™, but Sensei still defined Christian theology in Kuroverse in a certain way and as such...
...if denying God’s existence can lead to summoning a demon and suicide leads to post-mortem slavery, then I can’t imagine angels launching chaos in the human world and demons stopping them.
Besides, whatever happened to Vincent & Rachel (and even Claudia), it makes more sense that politics and/or personal revenge are what motivated Victoria, rather than a supernatural being having some beef for over two generations with the Phantomhive family.
Finally, as you said, there is the bizarre dynamic between Brown and Victoria, considering ch138: to establish the contract, Ciel played ‘chess’ against Seb and found three ways to control his actions and behavior. However, who knows if Victoria’s sadness over Albert’s death made her lose sight of reality and...
...that’s why Brown is the one with the upper hand. Therefore, he does as she wishes (the attack on the Phantomhive manor 4 years ago, possibly investigating UT’s shenanigans as ‘Jane’, etc), but she may not always be in charge.
If John Brown is no demon (which is possible, even if Seb already knows something’s up with him, thanks to the Green Witch arc) then, before being an angel, there is still the Shinigami higher-up possibility to consider.
And why? Because UT probably found some huge dirt about the Shinigamis’ Organization, which led to his desertion. That part is especially relevant when it comes to the worldbuilding, because it could imply that the Shinigami higher-ups have an impact on the human world, possibly through influent rulers/leaders.
However, in that case, since we don’t know yet what the higher-ups are like (how powerful they are and what abilities they possess), it’s hard to consider that John Brown = Jane (no, Shinigamis don’t shape shift in the manga, not even Grell).
TL;DR No, I didn’t like s1′s ending, mainly because I think an angel as the big bad is not very relevant with the series’ worldbuilding.
That’s why I very much enjoy the idea of Brown being a demon...
...knowing that he doesn’t have to be a demon similar to Seb at all.
Besides, even if revenge is a main theme of the series, it is still described as bringing nothing but despair, so in my opinion it’d be quite ironic (thus fitting) that Ciel actually sold his soul to a demon to get back at someone who also sold their soul to a demon (possibly because of his family).
Finally, Jane’s character has to be relevant somewhere, aside from just this mini arc and it seems clear that she’s no part of the Aurora society, so...
...we may as well tie her to another relevant part that has yet to be addressed (whether she’s Brown or not, because she could also be a well-trained maid working for the Queen, like the Double Charles).

Jane is actually John Brown in disguise, because the Queen has been interested in UT’s shenanigans since the end of the Weston arc and so I wouldn’t be surprised if she sent him to investigate one of the current BD’s “food” sources
If that’s the case, rejoice people who enjoy foreshadowing from the first anime season ( @frederickabberline :)), because that’d definitely parallel the whole Angela/Ash angel thing except in the manga they’re called John/Jane.
