A good number of years ago, I created this soup for Harvest Fest in Bethlehem. It is called Shanagarry Squash. It is a Curried Coconut Butternut Squash Soup. Back then it was a good solid vegetarian soup (as well as a two time winner of the soup contest for the fest!). But it was time to reinvent and take it another step further. This version in 2019 is completely vegan! The cream has been taken out and replaced with a great technique of roasting white onions until they are pulpy and puréeing them until they are smooth and viscous. The final result turned out better than I had imagined it. I toasted up the butternut squash seeds with some garam masala and garnished it further with some chill oil and chopped coriander. I also made a vegan version of Irish Wheaten Bread to go with it. As I stated previously, I am sensing some sort of change coming about. It feels as though it is positive. It feels as though it has something to do with A Kilt and a Cuppa. As I also stated, I cannot put my finger on it. I am focusing on meditation and creating. I am focusing on reading inspiring material. The main thing I am getting from the meditation that I am doing right now is breaking out of laziness. Too many days it is easy to sit and do nothing when I know I have things that I want to accomplish. That is not to say that relaxing is bad. There needs to be downtime. But, I need to be able to prioritise those things that are important, rather than saying I can do them another time. Then, "another time" becomes never. The following is a piece by the Irish author, poet, and scholar, John O'Donahue. It was originally about retirement. As I read it, I find meaning in starting a new chapter in life also. This is what I am meditating on: In out-of-the-way places of the heart, Where your thoughts never think to wander, This beginning has been quietly forming, Waiting until you were ready to emerge. A very heartfelt thank you to all who supported us during the autumn and winter holidays this year. It was a pleasure to have your business, and to prepare traditional goods for you. In reflection, I have decided to dismantle the store for the time being. While I thought I would find the fulfilment that I felt I lacked, the exact opposite occurred. I walked away with a sense of emptiness.I felt this way at the end of last season, and thought it would be different this year if I made some changes. Nonetheless, I do not feel differently. Once again, I put our own needs and feelings on the back burner, if you will. I now realise that when I find fulfilment and satisfaction in my work, it is through writing and photography. So, I need to go in the direction that my heart is calling me. This is not to say that I will not return to the Shoppe at another time. It is for now that I have a lot to figure out. I need to make 2019 better than 2018 was. This year was just a bleak and depressing year. Yes, there were good moments. Overall it left me feeling empty and lost. Oddly enough, this is also the year that I did not do much writing. I need new adventures, stimulation, and creativity in 2019. I need a new direction. I need change. That is the beauty of this time of year. We sit on a threshold of the old and new. It is a time to renew. It is a time to make things better. I have no clue what exactly that entails as I write this. As is often in this wonderful season of the year, I look upon the new year with the amazement and wonder that I did as a child, and see a world where anything is possible. Once again, my thanks to all of you for your support. It has meant so much to me. I am hoping, as are we all, for better days and times ahead. May the peace of this season find you all in a good place. May the new light that has illuminated our hearts in this season of darkness renew our positivity and our spirits. God bless. Blessed be.
