“In the 1950s nothing was here,” says Tanya Pons Allon, an Arava farmer and director of the Kasser Joint Institute for Global Food, Water, and Energy Security, a cooperative venture at Arava R&D in partnership with the Jewish National Fund-USA, the University of Arizona and the Central Arava Regional Council.
“And then two idealistic pioneers in their 20s wanted to start a community here in the Arava and everyone thought they were mad crazy, that they’d die of dehydration and lack of everything. But [Israel’s first prime minister) David Ben-Gurion, who really believed in settling the Negev, signed a paper allowing them to settle this area,” she says.
“He sent experts to test the soil and water. Everyone agreed nothing could grow here, except one agronomist who said if you could use water in a more efficient way, or change the soil somehow, maybe it could happen. Ben-Gurion said, ‘That’s good enough for me.’
“And what we see here today proves that with determination and thinking outside the box and not accepting no for an answer, you can accomplish anything,” says Allon, who leads tours on behalf of JNF-USA at the Arava R&D’s Vidor Visitor Center.
“We now have 4,000 residents in this region and new communities are being built. This area would not have thrived without people believing it could.”
But where does the water come from?
Kitron says the average annual rainfall in the Arava Valley is 50 millimeters (2 inches). This year, less than 20 millimeters fell.
“Our water comes from about 60 wells we’ve drilled, all connected to one control system in Eilat,” she says, and now they’re also getting some water piped from a desalination plant in Ashkelon.
The saline well water must be treated, but the upside is that irrigating with saline water results in sweeter produce. (Kitron explains that’s because of osmosis: the salt concentration of the water causes the plants’ roots to release more sugars.)
“The average farm here is 12 acres and each has a daily, monthly and yearly water quota,” she says.

“And yet, in our glory days we produced 60 percent of the vegetables exported from Israel, mostly [bell] peppers,” she says.

The Central Arava R&D Center was established in 1986 by the Israeli government and KKL-JNF as part of the Negev-Arava R&D program.

Raising fish sustainably
The Kasser Institute’s first focus is Kenya, where 70% of the country is off grid. Researchers in Arizona and in the southern Arava are discovering what crops grow best under solar panels.
Here in the central Arava, there’s an experiment in sustainable aquaculture for Kenya.
Allon introduced us to Steven, 29, a Kenyan graduate of the nearby Arava International Center for Agricultural Training (AICAT).
Steven, a tilapia farmer, explained that fish feed is very expensive. At the Kasser center he’s learning to use a solar-powered circular system that provides the fish with nutrients given off by duckweed grown hydroponically with water from the fish tank. He will go back not only with knowledge but also with AICAT’s connections. “The Israeli Embassy in Nairobi has been giving grants to AICAT graduates to start initiatives in Kenya,” says Allon.

CBD, or cannabidiol, is used increasingly in cosmetics—so-called cosmeceuticals—and has been approved as a treatment for childhood epileptic seizures. It is being investigated as a therapy for numerous conditions, including anxiety, Parkinson’s disease, and chronic pain.
But medical research on the more than 100 other chemicals in marijuana has been difficult, because the chemicals occur in tiny quantities, making them hard to extract from the plant. Inexpensive, purer sources—like yeast—could make such studies easier.
Plus, he adds, there is “the possibility of new therapies based on novel cannabinoids: the rare ones that are nearly impossible to get from the plant, or the unnatural ones, which are impossible to get from the plant.”
‘Green’ drug factories
Cannabinoids join many other chemicals and drugs now being produced in yeast, including human growth hormone, insulin, blood clotting factors, and recently, but not yet on the market, morphine and other opiates.
One of the pioneers of synthetic biology, Keasling has long sought to exploit yeast and bacteria as “green” drug factories, eliminating the expensive synthetic or extractive processes common in the chemical industry and the often toxic or environmentally- damaging chemical byproducts.
Cannabis cultivation is a prime example of an energy-intensive and environmentally destructive industry. Farms in northwest California have polluted streams with pesticide and fertilizer runoff and helped drain watersheds because marijuana plants are water-hungry. Illegal grows have resulted in clear-cutting and erosion.
Indoor cultivation under grow lights with ventilation fans uses a lot of energy, accounting for a growing percentage of annual power consumption. One study estimated that California’s cannabis industry accounted for 3 percent of the state’s electricity usage. Indoor grows have caused blackouts in some cities, and energy consumption can add more than $1,000 to the price of a pound of weed.
Hence Keasling’s interest in finding a “green” way to produce the active chemicals in marijuana.
A tough challenge
“It was an interesting scientific challenge,” he admits, that was akin to other challenges he and his team have successfully overcome in yeast: producing an antimalarial drug, artemisinin; turning plant waste into biofuels; synthesizing flavors and scents for the food and cosmetics industries and chemical intermediates for making new materials. “But when you read about cases of patients who have seizures and are helped by CBD, especially children, you realize there is some value in these molecules, and that producing cannabinoids in yeast could really be great.”
With approval and oversight by the US Drug Enforcement Administration—cannabis is still illegal under federal law—Berkeley postdoc Xiaozhou Luo and visiting graduate student Michael Reiter, who led the project, started assembling in yeast a series of chemical steps to produce, initially, the mother of all cannabinoids, CBGA (cannabigerolic acid).
In both marijuana and yeast, the chemical reactions involve the acid form of the compounds: CBGA and its derivatives, THCA and CBDA. They readily convert to CBG, THC, and CBD when exposed to light and heat.
Turning yeast into chemical factories involves co-opting their metabolism so that, instead of turning sugar into alcohol, for example, yeast convert sugar into other chemicals that are then modified by added enzymes to produce a new product, such as THC, that the yeast secrete into the liquid surrounding them. The researchers ended up inserting more than a dozen genes into yeast, many of them copies of genes used by the marijuana plant to synthesize cannabinoids.
One step, however, proved to be a roadblock for Keasling’s group and competing groups: an enzyme that performs a key chemical step in making CBGA in the marijuana plant didn’t work in yeast.
Rather than engineer a different synthetic pathway, Berkeley postdoc Leo d’Espaux and graduate student Jeff Wong went back to the plant itself and isolated a second enzyme, prenyl transferase, that does the same thing, and stuck it in the yeast.
“It worked like gangbusters,” Keasling says.
Once they had yeast-producing CBGA, they added another enzyme to convert CBGA to THCA and a different enzyme to create a pathway to CBDA. Though the products the yeast produce are predominantly THC or CBD, Keasling says, each must still be separated from other chemicals present in tiny quantities.
They also added enzymes that made the yeast produce two other natural cannabinoids, CBDV (cannabidivarin) and THCV (tetrahydrocannabivarin), whose effects are not well understood.
Surprisingly, Xiaozhou and Michael discovered that the enzymatic steps involved in making CBGA in yeast are flexible enough to accept a variety of starter chemicals—different fatty acids in place of the one used by the marijuana plant, hexanoic acid—that generate cannabinoids that do not exist in the plant itself. They also got the yeast to incorporate chemicals into cannabinoids that could later be chemically altered in the lab, creating another avenue for producing never-before-seen, but potentially medically useful, cannabinoids.
Keasling and colleagues report their work in Nature.
Keasling subsequently founded an Emeryville, California company, Demetrix Inc., which d’Espaux and Wong later joined, that licensed the technology from Berkeley to use yeast fermentation to make cannabinoids.
“The economics look really good,” Keasling says. “The cost is competitive or better than that for the plant-derived cannabinoids. And manufacturers don’t have to worry about contamination—for example, THC in CBD—that would make you high.”

Our country has been plastered by hurricanes lately.
First there was Hurricane Harvey, which turned much of Houston, Texas into a lake, along with Corpus Christi, Rockport and the surrounding area. Then there was Hurricane Irma, which brushed by Puerto Rico and then tried to devour the Florida Peninsula. Finally, the third villain in this story was Hurricane Maria, which demolished Puerto Rico.
While Hurricane Maria was the “weakest” of the three, only a Category IV hurricane, it probably did the most damage. That damage is exacerbated by the fact that Puerto Rico is an island, making it harder to get relief workers and supplies in. Unlike Houston, access to Puerto Rico is limited to a few ports and airports, both of which were damaged by the storm.
Thousands of homes in Puerto Rico were destroyed by the hurricane, some only having their roofs torn off, while others were flattened entirely. Entire apartment buildings are standing with the façade torn off by the high winds, leaving the apartments exposed to the elements.
But the really serious damage from the hurricane wasn’t to people’s homes, although that is rather serious, but rather to the electrical grid. Over 95% of the island is currently without electrical power, not because of damage to the power plants, but rather to the near-total destruction of the transmission lines that carry the electricity produced to people’s homes, offices, stores and companies.
Without electricity, much of what people depend on to survive is eliminated. There is no running water, no communications, and most stores are unable to operate.
Between the lack of electric power to run their cash registers and the communications necessary to reorder stock, even if they sell their inventory for cash, using hand-written receipts, the stores will be empty of critical supplies, such as food, within less than three days.

But coming up with that cash will be difficult for most people, as the ATM machines that they need to use and the computers for the banks are without power and communications as well. Since few people hold onto much cash these days, but rather use plastic for all their purchases, they are left without the ability to buy even the most basic necessities of life.
While relief efforts are pouring in, there isn’t enough and it’s not getting there fast enough. Unlike the rest of the country, the people of Puerto Rico are limited by being on an island. There isn’t anyplace they can go themselves, to get away from the problems or get what they need.
But getting supplies to the island is only the beginning of the problems. Once the supplies get there, workers encounter problems moving them to those in need. Roads are damaged or blocked by felled trees and other debris and gasoline is in short supply. Those nearest the ports and airports have the best chances of receiving relief supplies, while others, on more remote areas, may receive none.
Medical Issues
The problems that ordinary people have are bad enough. But they don’t hold a candle up to the problems faced by those with serious medical conditions. Hospitals are overrun, between the people who were injured by the hurricane and the normal problems they have to deal with.
On top of that, diesel fuel to run the hospitals’ generators is running short, limiting their ability to treat patients.
The lack of electricity is causing other medical problems as well, such as there not being power to run kidney dialysis machines. People with kidney failure need this treatment three times per week. Without it, their body accumulates too many minerals in the bloodstream and organs, leading to heavy-metal poisoning and death.
The same can be said for many other medical treatments which require electricity to run the equipment.
Medicines themselves are becoming an issue as well. While pharmacies and hospitals were well stocked before the storm, some medicines are running short. The worst of this are medicines which require refrigeration, like insulin. Without refrigeration to keep insulin supplies fresh, diabetics will soon find themselves without this life-saving drug.
Recovery from the Disaster
Rebuilding and restoring Puerto Rico is going to be a major project. The damage was so severe and widespread, that there isn’t any place “safe” on the island that people can go to, to get away from the problems. That also means that there is no good starting point to work from in rebuilding the island. If only part had been damaged, they could use that as a base for rebuilding the rest.
Unsurprisingly, officials have decided that the first focus of restoration has to be government facilities and hospitals. While that makes sense from the viewpoint of needing those to be functional in order to rebuild the rest of the island, it can also be seen as government bureaucrats taking care of themselves.
The first thing that has to be restored is the electrical grid. With so much of the grid damaged, repairs are impossible. Rather, the distribution grid needs to be rebuilt. This little project is projected to take six months, which probably means it will take much longer.
In the mean time, the loss of electricity will mean that people will be without clean running water, power in their homes, refrigeration and the distribution of products to retail stores will be severely limited. As all the farms in the country were destroyed by the hurricane, all food will need to be shipped in for at least the next year, until the 2018 harvest comes in.
While the death toll from the hurricane is officially stated as 16 people, that number will surely rise. Between the lack of necessary medical attention and the lack of clean water, they can expect to see more and more people dying, either of pre-existing conditions or from disease spreading easily due to lack of sanitation. The situation isn’t pretty and it’s likely to get worse, even with all of the efforts being thrown into relief and recovery.
This problem is amplified by the Puerto Rican government’s poor financial condition. With an economy that is near the bankruptcy point, there isn’t the money needed to rebuild the island. Fortunately for them, President Trump has waived the normal requirement for states to pay 25% of disaster relief and recovery funds.
Lessons to be Learned
This disaster was just about as serious as they come. While the process of rebuilding won’t be as bad as it would have been with an EMP, the outright destruction is much worse. The people of Puerto Rico, American citizens, are going to be hard pressed to survive this disaster and come out on top.

Nevertheless, there are a lot of lessons that you and I can learn from this disaster. Lessons that we should apply to our own prepping plans, so that when our turn comes, we are not left in the same boat as our countrymen find themselves.
If we don’t take the opportunity to learn, then we could say that their suffering would be in vain.
Shelter
One of the biggest lessons that we can take away from this hurricane, as well as the ones that hit Houston and Florida is that American homes are not built to withstand natural disasters, especially disasters that involve enormous amounts of water. Our homes are easily damaged in any sort of flooding, which ends up soaking into the materials and destroying them.
Granted, many of the homes which were the worst hit in the hurricane are those of the poor. As such, they aren’t built according to normal American standards, but rather, in any way possible. So they are not as strong as a typical American home.
But that really doesn’t make much difference.
In a time of major disaster, we have to assume that our home will be damaged, unless you happen to live in a concrete box. With that in mind, there are two things that we should do.
The first is to be ready to make emergency repairs to our home, having the necessary tools, materials and skills on hand to accomplish those repairs. The second is to have an alternate means of shelter that we can use, if our homes become completely destroyed.
I had previously thought of using a travel trailer as my alternate shelter, in case of a hurricane destroying my home (I live in a hurricane zone as well). However, looking at the damage in Puerto Rico, it is clear that such an idea was ill-founded; a travel trailer would not survive.
It would be best to have a shelter somewhere away from your home, the classic survival retreat that we all aspire to. But if you can’t afford that, at least make sure that you have a good tent or two that you can count on.
Water
The lack of clean water in Puerto Rico is going to account for many deaths. Had those people but had some means of purifying their water, they could survive. Yet few actually did. While I have no idea how many preppers there are in Puerto Rico, it is clear that there aren’t enough.
But I see something else here as well. This is one area, in which we, as preppers, can really serve our communities, earning their respect and hopefully giving them a reason to not attack us. That is, for us to be ready to provide water filtration to those around us. For us, this is easy, as we already plan on purifying our own water. All we really need to do is increase our capacity.
Another lesson that we can take away from this is the need to be ready to harvest rainwater. While a lot of us are already using rainwater capture, we probably don’t have anywhere near the capacity needed to capture even an infinitesimal amount of the water that would fall on our homes in a hurricane. Increasing that capacity would also increase our chances of survival.
Food
With the island’s farms in a shambles, food is going to be a real challenge for the next year, with prices considerably higher than normal. While food shortages aren’t a major issue yet, they soon will be, as people and stores run out. FEMA and other relief agencies just can’t get food to the island quick enough.
This pretty much answers the question of whether or not it is unreasonable to have a year’s worth of food stockpiled. For the people of Puerto Rico, a one year supply of food seems like a minimum, right now. Those that don’t have that much (most people) are probably going to end up losing weight.
There’s something else that this disaster brings up in the food area, as well. That is, protecting your food stockpile from destruction. If my home had been in Puerto Rico for the hurricane, it looks to me like much of my food stockpile would have been damaged or even floated away. I need to rethink my food storage, looking for ways to make sure that my food stays at my home site, even if my home becomes damaged.
One way to do this is to bury some of it. Five gallon buckets, filled with food will bury just fine, protecting the food. About the only thing that could happen to it, to destroy it, would be driving a vehicle over the top.
Electric Power
As usual, the electrical grid is one of the first things damaged by any storm. Therefore, none of us can count on electricity after a disaster. We either need to be ready to do without, or to produce our own.
In this case, people who had solar panels or wind turbines probably saw them damaged by the storm. High winds can be hard on both, especially if they are not properly anchored. In that case, their preparedness wouldn’t have helped them at all.
When Hurricane Harvey was headed for my home, before turning and making landfall at Rockport, I took down my wind turbine, strapping it down behind a cement wall to protect it from the storm. Had it been up and the hurricane hit our area, I am sure that it would have been destroyed.
Medical Needs
As I mentioned above, one of the biggest problems facing the citizens of Puerto Rico is medical services and supplies. This is not uncommon in any disaster situation, as medical services tend to become overwhelmed.
But there is a big difference in this case, that is, their generators are going to prove to not be enough. When the supply of fuel is exhausted, the hospitals and all their equipment will be down.
The only medical services we can truly count on in a time of emergency are those that are already in our possession. If anything, we had better count on needing more than we thing, not less. Chances are, we’re going to find ourselves in a position where we won’t be able to count on the medical community.
Self-Defense
It didn’t take long for the two-legged predators to come out of the woodwork and start taking what they wanted. I’ve heard stories of gunmen at gas stations, threatening others so that they could get in line first. While a fairly simple example, this is indicative of what is going on in other areas as well.
As supplies become even shorter, people will become more desperate. More and more acts of violence will break forth, with people fighting over food, water and other basic necessities. Those who are not prepared to defend themselves will be the loser in this game.
FEMA
Once again, FEMA has proven that they are unprepared to deal with any emergency, especially a major one. While their workers are hard at it, trying to coordinate relief efforts, they are behind the curve. Without others pitching in to help out, FEMA will be unable to meet all the needs.
There is a stark difference between what is happening in Puerto Rico and what has happened in Houston. While I don’t have any actual figures for how much aid is reaching Puerto Rico or how much of that is from FEMA, most of it seems to be coming from FEMA or through the Red Cross. On the other hand, the large Christian community in Texas provided most of the help to the citizens of Houston. In fact, there was so much aid given by the Christian Community, that news agencies who are normally hostile to Christians commented positively about it.
Anyone who is dependent on the government to provide them with aid is asking for trouble. While government relief workers do their best, it’s never enough.
We must be ready to take care of ourselves, and if possible, those around us as well. Are you prepared?

Black Cohosh Supplements Guide

What is Black Cohosh?
The black cohosh is a flowering plant, a member of the buttercup family, which is indigenous to North America. It’s commonly found in wooded areas in eastern North America, along the coast from Ontario to Georgia and inland as far as Missouri.
Also known by several nicknames, including black bugbane, snakeroot, rheumatism weed, rattleweed, squawroot, and fairy candle, the black cohosh plant has been used medicinally for centuries by Native American tribes. In addition to treating hot flashes and other hormonal symptoms, Native Americans traditionally used black cohosh for a variety of ailments, and also as an insect repellent. Chinese herbalists and early American settlers have also historically used this herbal remedy.
The plant itself, which can grow up to eight feet tall, is characterized by jagged green leaves and large, knobby roots. Black cohosh stalks bloom with long stems of white flowers in the spring, and bear dark blue berries during the fall months. The roots and underground stems of the black cohosh are the parts used for medicinal purposes.
Benefits of Black Cohosh
There are a surprising number of potential benefits of black cohosh supplements. Of course, the most common use of black cohosh is the treatment of menopausal symptoms. Women experience menopause, which is when menstruation stops and signifies the end of the reproductive period, typically between the ages of 40 and 55. There are a number of uncomfortable symptoms that occur during and after menopause, which typically include:
Hot flashes (hot flushes)
Night sweats
Vaginal dryness or irritation
Heart palpitations
Tinnitus (ringing ears) and vertigo (dizziness)
Nervousness and irritability
Sleeplessness and / or insomnia
Black cohosh supplements can help to greatly reduce and ease the symptoms of menopause, and may even help regulate symptoms that occur with menstruation. This natural treatment is particularly effective against hot flashes, and has seen some effectiveness in treating these symptoms for some cancer patients, including breast cancer and prostate cancer.
Perhaps due to its usefulness in treating menopausal and hormonal symptoms in women, black cohosh can be used to help ease symptoms of other female health disorders. For example, some studies indicate that the supplement can help those with polycystic ovary syndrome (PCOS). It has also been useful in managing uterine fibroids, which are benign growths that can appear in the uterus during a woman’s peak fertility years.
Because black cohosh has anti-inflammatory properties, this supplement can help to relieve symptoms of arthritis, specifically osteoarthritis and rheumatoid arthritis. When used to treat arthritis swelling and to manage pain, black cohosh is often blended with other herbal anti-inflammatories including willow bark, giaiacum resin, sarsaparilla, and poplar bark.
Additionally, some studies have suggested that black cohosh supplements, which contain plant-based estrogens called phytoestrogens, can help to delay or inhibit bone loss. For this reason, people with osteoporosis may benefit from using black cohosh.
Finally, at least one study has shown that black cohosh may be a promising treatment for diabetic patients, as it has the potential to help reduce body weight and improve the body’s capacity for processing insulin.
Are There any Side Effects?
While most types of medication, including natural supplements, come with potential side effects, the observed side effects of black cohosh are surprisingly few. Most clinical trials indicate that people who have taken black cohosh for up to 12 months experience no or very mild side effects, with the most common being upset stomach and temporary rashes.
Outside of clinical trials, some people taking black cohosh supplements have reported potential side effects such as headaches, nausea and vomiting, diarrhea or constipation, weight problems, low blood pressure, or seizures. However, these symptoms may be caused by some commercial manufacturers mis-identifying the black cohosh plant.
In some cases, black cohosh may have a detrimental effect on the liver. Those who currently suffer from liver disease or disorders should refrain from using black cohosh supplements. If you develop symptoms of liver problems, which include abdominal pain, jaundice (yellow discoloration of the skin), or dark urine, discontinue the use of black cohosh.
While research is not extensive, black cohosh does not appear to cause issues when interacting with other medications. However, it is recommended that you consult a doctor about black cohosh if you take medications, if you are pregnant or nursing, or if you suffer from a hormone-sensitive condition such as breast cancer.
Finally, black cohosh should not be confused with blue cohosh, which is an herbal supplement for treating entirely different symptoms and conditions.
How to Take Black Cohosh
Like most herbal supplements, black cohosh is available in a variety of forms. The most commonly used type is the tablet or capsule form, though you can also purchase black cohosh as a tincture, a tea, or simply the dried root of the plant.
When taking black cohosh supplements for menopause, the optimal dosage is between 80 and 160 milligrams per day, taken in either two or three doses. Typically, you would take 40 to 80 milligrams twice per day. Most black cohosh capsules and tablets contain 20 milligrams each. You can increase or decrease the dosage as needed in order to achieve results.
However, it’s important to keep in mind that more than 900 milligrams of black cohosh in a single day is considered an overdose. Also, some studies claim that no one should take black cohosh supplements for more than 6 months to one year at a time.
Black cohosh liquid extracts and tinctures are also available, and can be added to food or mixed into water. The same dosage recommendations apply to these mixtures. There are also several varieties of black cohosh tea available from various retail outlets and health food stores, including black cohosh root tea and tea blends that include additional herbal ingredients.
What to Look For in a Good Black Cohosh Product
As with all herbal supplements and health products, the most important aspect in choosing a black cohosh supplement is to identify a high quality product that is manufactured by a reputable company. This is especially important considering some commercial black cohosh treatments have been found to contain the wrong herbs, or an ineffective herbal blend that doesn’t provide the true benefits of black cohosh.
The active ingredient in black cohosh is labeled as triterpene glycosides. The standardized extraction for this ingredient is at 2.5 percent total, which is the minimally acceptable level, though some black cohosh supplements can contain up to 4 percent active triterpene glycosides.
Search the labels of black cohosh supplements for third-party certifications from recognized health groups, in order to determine which black cohosh brands are safe and high quality. Eat This, Not That for Longer Life Dr. Mercola By Dr. Mercola You've probably heard that "eating right" can go a long way toward keeping you healthy, while it stands to reason that if you don't, just the opposite will happen — at least sooner than it might have otherwise. It turns out this is more than just conjecture, since a new study, published in the Journal of the American Medical Association (JAMA), reports that if you eat the right foods in the right amounts, your risk of dying from heart disease, stroke and type 2 diabetes — among the most common killers in the U.S. — could be cut nearly in half. That's pretty impressive, but what does "eat the right foods" even mean? It turns out there's a "substantial body of evidence" showing that "suboptimal" diets are undeniably culpable in causing the development of these illnesses, collectively known as cardiometabolic diseases (CMD), for several reasons. Specifically: "Dietary factors studied have included individual nutrients (macronutrients, micronutrients, minerals, vitamins, electrolytes, and phytochemicals), foods, and overall dietary patterns."1 Lead study author Renata Micha, from the Friedman School of Nutrition Science and Policy at Tufts University in Boston, said the scientists' most important finding of the review was that scientists now understand more about which foods would help keep people in the U.S. from dying prematurely from these diseases. The challenge, however, is getting people to sit up and take notice. But instead of focusing on foods that are bad for you, Micha asserts that a more compelling approach might be to emphasize the merits of eating beneficial foods and the nutritional aspects they offer.2 Good Foods, Bad Foods and How They Affect Your Health If you're at a loss regarding what's really good for you and what's really not, the study examined several types of foods to clarify their good and bad aspects. Researchers combed through numerous studies, including National Health and Nutrition Examination Surveys between 1999 to 2002, and 2009 to 2012, for evidence regarding what foods and/or dietary components affect your health most. Those included: ✓ Vegetables ✓ Fruits ✓ Processed and unprocessed meats ✓ Soybean and corn oils ✓ Omega-3 fats ✓ Sugary drinks ✓ Seafood ✓ Grains, nuts and seeds Of the 702,308 deaths from the top three diseases, 318,656 were determined to be a result of dietary factors from eating too much — or not enough — of these foods or dietary components. Not surprisingly, information from this study echoed what scientists had already concluded regarding how the right foods can help, such as heart health.3 Not eating enough nuts and seeds was tied to 59,374 deaths; too much processed meat like bacon was tied to 57,766 deaths; too little fatty fish, such as salmon and sardines, were implicated in 54,626 deaths, and not enough vegetables to 53,410 deaths. Additionally, 51,695 deaths were tied to too many sugar-sweetened beverages. Interestingly, the study showed that more women than men die of cardiometabolic diseases due to unhealthy diets. Additionally, younger and less educated people, blacks and Hispanics are at greater risk than older, more educated and white people.4 Eat More of These Foods for Optimal Health In the U.S., most people follow family tradition for meals so that generally, they'll consist of protein (meat), vegetables such as potatoes or corn, grains including bread, rice or pasta, a salad and, often, dessert. That's not all bad, but there are factors to consider. One is portion size, and the unfortunate trend nowadays is that too many people get too much of a good thing. Optimal amounts of good foods for a healthy diet, the study showed,5 will include: 3 pieces of fruit a day 2 cups of cooked or 4 cups of raw veggies per day 5 1-ounce servings of nuts or seeds per week (about 20 nuts per serving) 8 ounces of seafood weekly 1 5- to 8-ounce serving of red meat per week Meat and Seafood: Eating to Optimize Your Health Protein is necessary for good health, but serving sizes are critical because your body can only use so much. Excess protein requires your body to rid itself of excess nitrogen waste from your blood, stressing your kidneys, and may lead to dehydration. It can trigger the pathways rapamycin (mTOR) and GCN2, involved in cancer and aging. Most people eat twice as much meat as they need, but how it's cooked is another factor to consider. Grilled meat, for instance, undergoes a chemical reaction that may produce heterocyclic amines (HCAs), advanced glycation end products (AGEs) and polycyclic aromatic hydrocarbons (PAHs), each linked to deadly diseases. As for chemically "enhanced" and processed meats, including bacon, salami, pepperoni, ham, pastrami, hot dogs, some sausages and hamburgers, you may be interested to know they're now classified as carcinogenic (along with tobacco and asbestos), as studies show they can cause cancer in humans. Further, they may cause male infertility. Most meat sold in the U.S. comes from animals raised in concentrated animal feeding operations (CAFOs), associated with antibiotic-resistant disease. Organic pastured meats have a better nutritional profile overall with far lower risk of pesticide contamination. There's also a reduced risk of contamination with drug-resistant microorganisms that can cause illness. Regarding seafood, there are factors that have changed the dynamics over past decades. Some of what was once considered good for you is now potentially toxic, including shrimp and tuna, two of the most popular. Fish from all over the world are now largely compromised due to toxic waste, fish farming operations and mercury contamination, which become cumulative as large fish consume smaller ones — all factors to consider when choosing seafood. Salmon, an excellent source of omega-3 fats, must be wild-caught Alaskan salmon, not farmed. Why You Need Omega-3 Fats, Nuts and Seeds To improve your health and advance your life, add optimal amounts of omega-3 fats, as well as nuts, seeds, fruits and vegetables to your diet (if you haven't already). At the same time, eliminate sodas, as well as processed meats and meats from CAFOs. Omega-3 comes from both animal and plant sources. The primary animal sources are krill oil and fish oil, which provide eicosapentaenoic acid (EPA) and docosahexaenoic acid (DHA), which are heart protective, and in fact markedly reduce the risk of heart attack, stroke and premature death.6 What sets krill oil apart from fish oil is that its omega-3 fats are in a much more absorbable form that's ready to be used by your body. The primary plant sources of omega-3s are flaxseed, chia and hemp. That introduces the topic of healthy nuts and seeds, specifically tree nuts (peanuts have the name, but are actually legumes, and not one I recommend) and seeds. A handful of raw nuts is a great snack and contains healthy fats, fiber, protein, antioxidants and minerals and, as such, is great for your heart and may even help control your weight. Eating raw seeds, such as pumpkin seeds and sunflower seeds, with their high level of good fats and oils, vitamins, minerals and antioxidants, helps boost your immune system, fights free radicals and may help improve insulin levels, as well as benefit your heart and immune system. The Facts About Soda and 'Not Enough Fruits' One of the dietary components identified by the study involved fruit, with an admonition that people don't eat enough, which they attributed to 52,547 deaths. Closely connected is the fact that in the study, soda was a definite no-no, and there are exacerbating circumstances for both. Regarding fruits, they offer many vitamins, enzymes and minerals, but should be eaten in moderation due to fructose content. Drinking fruit juices with added sugars does not provide the same benefit as consuming whole fruits. Another important point is to eliminate high-fructose corn syrup, or HFCS. In a laboratory, HFCS is considered similar to table sugar, but contains higher levels of fructose. Some manufacturers say it contains no more than 55 percent fructose (with 45 percent glucose), which is comparable to white sugar. But tests show the fructose in HFCS can reach as high as 65 percent, which explains why HFCS is so much worse for you than refined sugar. Soda consumption, even sugar-free soda, packs on pounds rather than helping you lose. Artificial sweeteners in diet sodas are not a suitable replacement for HFCS, as they're linked not only to weight gain, but to diabetes, insulin resistance and leptin resistance. It's worth noting that soda and fruit juice have something in common: Both can cause gout. Plus, one study showed that women who had a single soda or a 6-ounce glass of fruit juice had a 74 percent and 41 percent higher risk, respectively, of this debilitatingly painful foot problem.7 Something else you should know is that virtually all processed foods contain HFCS, and much of it is hidden. My best recommendation for fructose is to limit it to 25 grams per day, from all sources, and as little as 15 grams a day if you're diabetic or have chronic health issues (including the fructose from whole fruits). Another thing to note is that pesticides render some of the most delicious and nutritious fruits and vegetables rather contaminated. The "Dirty Dozen" list8 for 2016 reports the most pesticide-sprayed fruits and vegetables. Peeling them can greatly diminish the hazards contained in these fruits, but then you're also losing some of the most valuable nutrition. There's also the "Clean 15" list of the least contaminated. Excess Salt Isn't the Problem — Not Enough Potassium Is The featured study also noted that ingesting too much salt was tied to 66,508 deaths. However, it's an unbalanced sodium-potassium ratio that leads to hypertension. Studies show that 1 in 3 adults in the U.S. have high blood pressure.9 To say that maintaining balanced levels is crucial for health is not an understatement. Potassium may be one of the least understood minerals. Suffice it to say that it's crucial not just for optimal health, but for life. Unfortunately, however, only about 2 percent of the U.S. adult population gets the recommended daily index (RDI) of 4,700 milligrams (mg) per day; the other 98 percent get far less than that.10 Potassium needs to be kept in proper balance with sodium in your blood; if you consume too much sodium, which is common if you eat a lot of processed foods, you'll have an increased need for potassium. With enough potassium in your diet, your hypertension and stroke risks diminish.Also, when you eat the right vegetables, so too does your risk of developing heart disease. Potassium is an electrolyte and as such, helps conduct electrical charges in your body, along with calcium, magnesium, calcium and chloride. It's important to help maintain a balance between the chemical and electrical processes in your body. What Makes Potassium so Important Potassium is considered a "major" mineral because it helps your muscles contract, regulates your body fluids, balances low blood sugar, transmits nerve impulses and lowers blood pressure. Leafy greens are one of the best potassium sources. While getting the right amount can decrease your risk of stroke and heart disease, not getting enough can cause your blood sugar to plunge and kick in symptoms such as weakness, trembling, sweating and confusion. Further, low levels can contribute to the development of kidney stones and high blood pressure. One of the amazing things about including potassium-rich foods, such as beet greens, avocados, bananas, wild-caught salmon, raw organic, grass-fed yogurt and black beans, in your diet is how quickly your body responds by lowering your risk of such problems, including that of heart disease. Also, organic is always best. How to Change Your Eating Habits Without Becoming Overwhelmed While there's no "silver bullet" in regard to foods that will eliminate your risk of developing these or any other disease, the study's senior author, also dean of the Friedman School at Tufts University, Dr. Dariush Mozaffarian, believes the way the food system is set up needs to change. Mozaffarian's advice for people who feel overwhelmed by the prospect of changing their eating habits is to choose one area to improve and nail it down before moving on to another. An example, you might start your quest for better health by eliminating HFCS or soda, which undoubtedly would bring about a huge health improvement. With each upgrade, your risk factors for these and many other diseases will begin to diminish, and you'll even feel better. To quote Micha, "Eating healthy is key, and if we remember that simple fact, most of us can have healthier and better lives."11
