Vegan Tofu Jalfrezi is a flavorful and spicy Indian dish made with tofu, bell peppers, onions, tomatoes, and aromatic spices. It's a satisfying vegan version of the classic Jalfrezi curry, perfect for a hearty meal.
Ingredients: 300g firm tofu, drained and cubed. 2 tablespoons vegetable oil. 1 onion, sliced. 1 red bell pepper, sliced. 1 green bell pepper, sliced. 2 tomatoes, diced. 3 cloves garlic, minced. 1 tablespoon ginger, minced. 1 teaspoon ground cumin. 1 teaspoon ground coriander. 1/2 teaspoon turmeric powder. 1/2 teaspoon chili powder. 1 teaspoon garam masala. Salt to taste. Fresh coriander leaves for garnish.
Instructions: Heat vegetable oil in a large pan over medium heat. Add tofu cubes and fry until golden brown. Remove from the pan and set aside. In the same pan, add sliced onions and cook until translucent. Add minced garlic and ginger, cook for another minute. Add sliced bell peppers and cook until slightly softened. Stir in diced tomatoes and cook until they start to break down. Add ground cumin, coriander, turmeric, chili powder, garam masala, and salt. Mix well. Return the fried tofu to the pan and stir to coat with the spices and vegetables. Cook for another 5-7 minutes until everything is heated through and flavors are well combined. Garnish with fresh coriander leaves before serving. Serve hot with rice or naan bread.
