A Yoko headcanon of mine: Her hair acts as a mood ring for how she's feeling at the moment. Just check the gray to colorful ratio and you can get a decent idea.

Almost fully gray means she's miserable, but if it isn't visible anywhere, it means she's doing pretty good right now (i say this cause you don't see gray in the valentine's day art, and it makes.me think she's pretty happy right now)

For me it's somewhat similar, I think the gray is the neutral color as a base of her ink main color (like when you mix all clays of color and you dont get a rainbow ball but a ugly gray, something like that) and its the colored ink that tells her mood (more vibrant and most space taken, the better mood she's in)
