1. a quick chickpea curry is my favourite good but easy meal. just need chopped onions and tomatoes and some garlic. fry that shit in a pan till it smells good and let it simmer for a bit. look for the tomatoes to start breaking down. add in canned chickpeas. season with salt, pepper, and some curry powder (i use spices i get from the indian store that are more fancy but curry powder is ok too) while it cooks. add some water to loosen it up a bit. let it cook for like 20 mins and you're done. i usually make this in bulk and it's even better the next day. serve with rice, bread, flatbread or just eat it like that. sometimes i also throw in leftover vegetables from the fridge. stuff i have tried - potatoes, sweet potatoes, zucchini, aubergines. you can use the same sauce and spice base of tomatoes, onion, garlic for other beans too.
2. a good scrambled egg takes 10 mins and is so filling! crack eggs, whisk, season with salt pepper whatever. heat a pan, add butter, wait for it to melt, throw the eggs in there, whip them around for a couple of minutes and you're done. if i'm feeling fancy, i top the eggs with some parmesan. usually eat it with buttered bread. 2-3 eggs depending on how hungry you are, i think. also, like, omlettes. instead of putting the eggs in first, if u just stir fry some peppers, onions, mushrooms, whatever you're feeling, and then add the eggs and maybe top with cheese, wait for it to set, you'll have an omelette.
3. if you have an oven - just roasting some vegetables is so good (potatoes, sweet potatoes, zucchini, aubergine, mushrooms, peppers) after tossing them with some oil, salt, and pepper. i usually eat them topped with some kind of a sauce/quickly whipped guac or whatever. if i'm super hungry, i'll have the roasted vegetables with some quinoa/rice (which can cook while your vegetables roast - i do it at around 150-170 C for close to 15-18 mins)
4. i survived so many hectic exam weeks on this meal - boil pasta, whatever kind you have (maybe not a spaghetti or anything long like that), throw in some frozen broccoli when it's almost boiled so that your broccoli softens. drain when pasta and broccoli are done. thow in some olive oil and store-bought pesto. mix and eat. i eat versions of this meal quite often. super satisfying and only takes as long as it takes the pasta to boil.
5. laziest meal ever - cook some rice. throw in some frozen vegetables + salt + any spice mix you lile while it's cooking (i do it with an Indian store spice mix). After its done, eat with yogurt. i eat this like once a week because i can't be arsed to cook after work.
(i am assuming you know how to cook rice but if not its SUPER easy. so easy that it's the first thing i learnt and now most my meals centre around it. i learnt how to make lentils taste DELICIOUS recently so now lentil soups are also in my adult meal arsenal. if some of these look like bastardised indian food, it's because it is. SORRY i make good indian food also, the way its supposed to be cooked, but can't do that shit on the daily grind. also i'm a vegetarian so that's why all the food is.... like it is.)

A Year Of Eating Locally - Weekly Meal Plan + Food Costs: Week of July 29, 2018
my farmer's market veggie haul this week
Well, I'm happy to report that my decision to cut out inflammation-causing nightshade plants seems to be working. As much as I LOVE peppers, potatoes, tomatoes, Mexican food, etc. I really really don't want to risk the sinusitis issues, so I continue excluding them from my diet. It's funny though. I tend to forget and I have to second guess everything. For instance, I put buffalo cauliflower on the menu last week. Ummm…..buffalo sauce has peppers, so no, I did not have buffalo cauliflower.
I usually add peppers to just about everything, so I have to watch that. I add crushed red pepper flakes to many sauces and soups, so I have to watch that. Tomatoes are included in many of my typical veggie dishes. Those have to be adjusted. It's interesting. I made this chocolate zucchini cake recipe (our very favorite) last week and changed it to vegan. And it worked! I substituted the eggs for flax seeds + water, for the butter I used a combo of coconut oil and applesauce and for the sour cream I used a coconut yogurt.

You will see that I often I make 2 different meals because I am primarily plant-based and my husband is not. Most of what we eat is made from scratch and any boxed, canned and/or frozen products follow the Real Food guidelines. Meal planning is my way of controlling the grocery budget (read as a LOT of dollars saved), ensuring there is no food waste for the week, as well as saving time. I went blueberry picking again. I intended to pick 10 pounds and, well, before you know it I had picked 15 pounds. So, we have a lot of very sweet blueberries. This week I'm making a blueberry upside down cake with some of those delicious gems. I'll also be making freezer blueberry muffins, freezer blueberry pie, and freezer blueberry scones. And I'll freeze any that are left after we use them for snacks, oatmeal, etc.

This week I had some adjusting to the meal plan to do after shopping. This is the downfall of eating locally, but it's easy enough I suppose. I couldn't believe that not one veggie vendor had broccoli or cauliflower this week. Thankfully I had a bit of broccoli leftover from last week for Sunday's broccoli rice, but that was it. The broccoli in our garden is so very close to being ready but probably not for one to two more weeks. We've picked some of the shoots but the full heads are not quite there yet. On to the meal plan!
