So, regarding your tags. I've been a Sanderson reader since ... forever. Are they worth it? Some are, absolutely. They are top notch fantasy and I would say they give GRRM a run for his money. Some are - for fans only and frankly, the writing isn't anything special. The magic systems are always completely thought through (in every mechanical detail) - if that isn't your thing, keep away.
That said, why not start with his best work? The Emperor's soul is spectacular - it's a novella, so no 1600-page slog.
After that you can decide whether you want to dig into his world, called the Cosmere. Since he's been at it for a while, you've got a lot of stuff to pick from.
Since he indulged in some "Secret Projects" you even have some standalone volumes you can chose from now, which do not require complete dedication to the Cosmere. These are:
Tress of the Emerald Sea
Yumi and the Nightmare Painter
The Frugal Wizards Handbook
