What You Eat Affects How We Live: Climate Change and Animal Farming by Valentina H
My name is Valentina and I am a university student and an activist looking for ways to inspire positive social change through various media - one of them being this blog post extracted from my Bachelor’s dissertation which I’d written with a focus on the link between climate change, animal agriculture and human behaviour. I will introduce the main facts and figures on climate change and relevant philosophies related to human and non-human animals.
Introduction
With the current state of world affairs and apparent global issues, it is hardly news that a number of changes need to occur to help the planet and the people. The environmental issues are well known yet little is done to stop them. Eight million tonnes of plastic – bottles, packaging and other waste – are dumped into the ocean every year, killing marine life and entering the human food chain (Reuters, 2017). As our diets become more meat- and dairy-rich, the hidden climate cost of our food mounts up (Dave Reay for France-Presse, 2017). PETA believes that animals are not ours to eat, wear, experiment on, or used for our entertainment or abuse in any other way, yet many people have never even considered the impact that their clothes, food, cosmetics or entertainment may have on the lives of animals (2018). Vegans advocate that rearing animals for food is bad for the environment and inefficient; they suggest that world food shortages could be solved by farming crops rather than animals (politics.co.uk, 2018). To sum up the main concern of this article swiftly:
“We are the first generation to fully understand climate change and the last generation to be able to do something about it.” (Taalas for McGrath, 2018)
Climate change & Agriculture
We find ourselves in a time where climate change is finally understood for what it is, even with big name politicians (ahem) fooling us into believing it’s a myth. Every fraction of a degree of global warming makes a difference to human health, access to food and fresh water, extinction of animals and plants, survival of coral reefs and marine life, difference to economic productivity, food security, and to the resilience of our infrastructure and cities; it makes a difference to the speed of glacier melt and water supplies, and the future of low-lying islands and coastal communities (Elena Manaenkova for McGrath, 2018). Global warming is also linked with extreme weather events, disease outbreaks, population displacement and armed conflict as well as inevitable shifts in agriculture (Geggel, 2018).
The Committee on Climate Change (CCC) has stated that fundamental agriculture reforms are needed for the UK to reach carbon neutrality (George, 2018) This means the number of cattle and sheep in the UK should be reduced by between a fifth and a half to help combat climate change, because beef and lamb produce most farm greenhouse gases (Harrabin, 2018). To free up land from agriculture, we need to decrease our demand for meat and dairy products. The recent NHS Eatwell guide proposes a reduction in consumption of 89% for beef and 63% for lamb, and a 20% decline in dairy products (Harrabin, 2018).
Animal agriculture is responsible for 18 percent of greenhouse gas emissions, more than the combined exhaust from all transportation; methane, a greenhouse gas far more potent than CO2, is produced from human activity in almost equal measure from gas leaks during the production and transport of coal, oil and natural gas; and from the flatulence of ruminants such as cattle and sheep, as well as the decay of organic waste, notably in landfills (France-Presse, 2017).
“Cows belching less methane may not be as eye-catching as wind turbines and solar panels, but they are just as vital for addressing climate change” says prof. Dave Reay for France-Presse (2017).
Joseph Poore at the University of Oxford says that avoiding the consumption of animal products altogether delivers far better environmental benefits than trying to purchase sustainable meat and dairy (Carrington, 2018).
Anthropocentrism
Anthropocentrism is a philosophy which regards human beings as the central or most significant entities in the world, separate from and superior to nature which is a resource that may justifiably be exploited for the benefit of humankind (Boslaugh, 2018). Many ethicists find its roots in the Creation story told in the book of Genesis in the Judeo-Christian Bible, in which humans are created in the image of God and are instructed to ‘subdue’ Earth and to ‘have dominion’ over all other living creatures, condoning an instrumental view of nature, where the natural world has value only as it benefits humankind (Boslaugh, 2018).
Burchett (2014) says that ‘our species’ most extensive ecological degradations since the industrial revolution have been inordinately influenced by consumers in societies whose intellectual founders took humans to be the measure of all things, many environmentalists have taken it for granted that ecological degradation is an inevitable side effect of anthropocentrism.
The anthropocentrism that I stand against is that of human-centeredness which fails to value humanity as such and that fails to acknowledge humanity’s dependence and influence upon nature. Burchett (2014) also notes that humanity’s ecological predicament is not the result of overvaluing humanity, but of “permitting institutionalized forms of ethical egoism to underlie policies that narrowly focus on the short-term, frivolous interests of current individuals at the expense of the vital interests of future generations.” But why would we ever permit policies and legislations that are foreseeably detrimental to the long-term satisfaction of basic and vital human interests and contrastingly oppose sustainable development?
Speciesism
Broglio (2011) outlines our relationship to non-human animals by stating we traditionally view them as having limited faculties and we differentiate ourselves from them by measuring them against our considered superiority, and this flattening of animals’ worlds has legitimated any number of cruel acts against animals. The problem of Speciesism involves assigning different values or rights to beings on the basis of the species to which they belong. The concept claims that animals should not be treated as an object or property in the light of their sentient qualities. And yet we assign different values to different animal species – dogs and cats are wrong to hurt and kill but not the same applies to chickens, pigs or cows. This moral hypocrisy is obvious when most of us would protest to the dog-meat trade found in various countries, because we culturally consider it wrong to hurt and eat dogs, but most wouldn’t consider the same attitude towards the so-called ‘meat-bearing animals’. Adams (2014) outlines our desire to separate meat eating and the animals in that we append the word ‘meat’ only when that form is not consumed in our culture [dog-meat, horse-meat] and rename the animal flesh either by dropping the reference to meat (chicken, not chicken-meat), or in the instance of cows by the location from which the portion of flesh comes from.
An influential vegan activist Ed Winters (2018) says that if you put an idea into society long enough, it becomes a societal norm, and if you keep fuelling it, over time it forms part of the society’s culture, then passed from generation to generation it becomes tradition, but “we need only look across the world right now to see that culture and tradition are not good benchmarks of morality.”
Conclusion
Through this post I wanted to build a contextual background of theory to inspire others towards positive social change. I have focused on the pressing issue of climate change and through my research into human-caused environmental issues, a strong link emerged between consumer habits and the damaging effects of animal agriculture on climate change.
Because I am also an activist for animal rights, I have decided to focus on both the ethical issue of animal farming and the scientific findings which suggest rapid change needs to be made in decreasing consumer demand for animal products. I also briefly introduced the topics of anthropocentrism and speciesism.
This project was an eye-opening journey for me, towards sustainability through rejection of conventional consumerism, which includes and prioritizes a vegan diet, or a diet with a minimal presence of animal produce. This finding comes as a result of numerous official sources commenting on the need for decreased global consumption of especially meat, milk, and dairy products in order to effectively combat climate change. This research shifted my lifestyle as well as my outlook on life, the society and my future career prospects as I aim to continue my activist escapades. To conclude, without any further ado, now is the most appropriate time to focus everyone’s attention on reducing our impact on climate change.

Drink Up! Most of Us Could Benefit From More Water

In reading about the risks and consequences of dehydration, especially for the elderly and anyone who exercises vigorously in hot weather, it’s nothing short of a miracle that more of us hadn’t succumbed years ago to the damaging physical, cognitive and health effects of inadequate hydration.
Even with the current ubiquity of portable water containers, far too many people still fail to consume enough liquid to compensate for losses suffered especially, though not exclusively, during the dehydrating months of summer.
For those of you who know or suspect that you don’t drink enough to compensate for daily water losses, the good news is you don’t have to rely entirely on your liquid intake to remain well-hydrated.
Studies in societies with limited supplies of drinking water suggest you can help to counter dehydration and, at the same time, enhance the healthfulness of your diet by consuming nutritious foods that are laden with a hidden water source. Plant foods like fruits, vegetables and seeds are a source of so-called gel water--pure, safe, hydrating water that is slowly absorbed into the body when the foods are consumed.
That’s the message in a newly published book, “Quench,” by Dr. Dana Cohen, an integrative medicine specialist in New York, and Gina Bria, an anthropologist whose studies of the water challenges faced by desert dwellers led to the establishment of the Hydration Foundation, a nonprofit group that promotes understanding and consumption of nonliquid sources of water.
More about these foods later. First, I must convince more of you that remaining well hydrated is crucial to your health. However solid your body, the majority of it is water, ranging from 75 percent of the body weight of infants to 55 percent of the elderly. Every bodily process, every living cell, depends on water to function properly. Water transports nutrients, regulates body temperature, lubricates joints and internal organs, supports the structure of cells and tissues and preserves cardiovascular function. People can survive for only three or four days--a week at most--without water.
But more to the point is the quality of survival. Inadequate hydration can cause fatigue, poor appetite, heat intolerance, dizziness, constipation, kidney stones and a dangerous drop in blood pressure. Brain effects include mood shifts, muddled thinking, inattentiveness and poor memory. A loss of only 1 to 2 percent of body water can impair cognitive performance, according to studies at Virginia Polytechnic Institute and State University.
Your body’s water balance is determined by how much you consume, your age and activity level and environmental conditions. The body loses water through the skin, lungs, kidneys and digestive tract; in other words, by sweating, breathing and elimination of waste, both liquid and solid.
“Water needs can vary from person to person--and no one person will need the same amount of fluid from one day to the next,” the Virginia scientists wrote in the American College of Sports Medicine’s Health and Fitness Journal.
The typical American consumes about one liter--a little over four cups--of drinking water a day. But people like me who engage in quasi-vigorous physical activity daily need more, and those who exercise strenuously for more than an hour a day need even more than that. Keep in mind that skimping on your liquid intake or relying on sugary drinks can take a toll on your physical performance.
If you’re planning to engage in strenuous exercise or do physical work outdoors on a hot day, it’s best to start hydrating the day before. Check the color of your urine; the paler it is, the better. Also continue to drink water or other fluids throughout your activity and for hours afterward.
A critical factor in remaining well hydrated is not to rely on thirst to remind you to drink but rather to be proactive by consuming enough liquid before, during and after meals and physical activity. The longstanding advice to drink eight glasses of water a day was something I (among many others) was never able to achieve. I’m happy to say that experts have since modified that rule. Current thinking calls for getting about 70 percent of daily water needs from liquids (including coffee and tea, by the way, though not alcohol) and the rest from solid foods.
The authors of “Quench” suggest two dozen fruits and vegetables that are especially hydrating, ranging from cucumbers with 96.7 percent water to grapes with 81.5 percent water. Surely you can find many you would enjoy in a list that includes lettuce, tomatoes, cauliflower, spinach, broccoli, carrots, peppers, watermelon, strawberries, pineapple, blueberries, apples and pears.
Even chia seeds, an ancient so-called superfood said to sustain the ultrarunning prowess of the Tarahumara Indians of Mexico, can be a force against dehydration; they absorb 30 times their weight in water and can provide the body with slow-release hydration, especially during long bouts of physical activity in high heat and humidity.
Naturally packaged plant water hydrates more efficiently than plain drinking water, the “Quench” authors maintain, because it’s already purified, is packed with soluble nutrients and gradually supplies the body with water.
That said, while there is considerable anecdotal evidence for the effectiveness of plant water, especially among enthusiasts of green smoothies, well designed clinical studies are still lacking. Yet I feel comfortable in recommending an increased reliance on these hydrating foods because, at the very least, they can result in a more nutritious diet and foster better weight control.
Getting more of your water from plant foods can also help to cut down on pollution. The earth is being overrun with disposable plastic water bottles that can be found littering streets and parks and floating in rivers, oceans and lakes everywhere. Unless you are visiting a region of the world where it is unsafe to drink the water, try to avoid buying water. If you are in doubt about the safety of your municipal water supply, if you rely on well water that has not been tested, or if you dislike the taste or your local water, consider installing a faucet filter or using a portable filter container like Brita.

Now that you have a lovely spot for your garden with healthy soil and plenty of sunlight, you’re probably anxious to dig in and start planting. There are so many possibilities for delicious fruits, nutritious vegetables, and aromatic herbs to raise for your table that you might feel a bit overwhelmed by the choices.
With a bit of thought and planning, you can eliminate the crops that won’t do well in your growing conditions and focus on planting the best foods for your space that also suit your tastes.
Once you’ve decided on what to grow, you’ll need to know how to read a seed packet, successfully sow your seeds, and decide whether to start or buy your seedlings. Maintaining your garden includes controlling weeds, irrigating crops, and knowing when to harvest the bounty.
Tidying up your garden is also an important step to reduce disease and prepare the soil for another crop. Let’s find out more!
DECIDING WHAT TO GROW
As you look through seed catalogs, you might get confused by the many crops, varieties, and descriptions listed. To keep things simple, consider planting the crops best suited to your climate, growing conditions, and space, as well as those that are most expensive to purchase or are the most productive and nutritious for your investment.
Above all, be sure to choose the foods you enjoy eating most! Make a list of all the veggies, herbs, and fruits you enjoy, then narrow your list down as you read this section.
Match Plants to Your Climate
Choose the best crops for your area to reduce disease and pests caused by stress. Check the USDA Plant Hardiness Map to find your growing region and the Old Farmer’s Alamanac website in the Resources section to find the average date of your last frost in spring and first frost in fall; these dates will guide the process.
When choosing plants, it’s also important to know if they are annuals, biennials, or perennials:
Annuals
produce a harvest and seeds in their first year. Biennials produce vegetative growth the first season, then flower and produce seed the second year. In general, these crops are harvested in the first year (e.g., beets and carrots).
Perennials
take several years to produce, but they continue to grow and fruit for many years.
Here are some handy tips for choosing your crops and planting times:
Choose perennials the USDA Plant Hardiness Map indicates are hardy in your area.
Cool season crops grow best between 40°F and 75°F and bolt (go to seed) in higher temperatures.
Warm season crops do not tolerate frost and grow best at 75°F or warmer.
Start seeds indoors or in a cold frame (unheated enclosure with a transparent lid that protects from cold while allowing sunlight) to extend your growing season.
Make sure crops are planted early enough so they can mature before your first frost.
Match Plants to Your Site
Keep sunlight requirements in mind when planning your garden. Some plants like full, hot sun all day whereas others need shade to prevent bolting or wilting in hot weather.
A plant that needs full sun should have bright, direct light for 6+ hours per day.
A plant that needs part shade will do best with bright, direct light in the morning and evening with shade during the hot part of the day.
Additionally, some plants like a moist, rich soil, whereas others need a loose, sandy bed. Allow enough space for each crop to reach their mature size when planting or thinning.
Consider the Return on Your Planting Investment
When time or space is at a premium it is especially important to choose the most productive crops for your investment.
Of course, you’ll want to plant the foods you enjoy eating, but also consider how much you can expect to harvest and which store-bought crops come with the most packaging or pesticide residue.
For example, if you love fresh salads, you’ve probably noticed how much plastic is used to package lettuce and spinach. You can grow a lot of healthy greens in a small space, saving money and reducing household waste.
Avoid Monocultures
To reduce pests and disease, plant a diversity of crops rather than large blocks of all one species or plant family.
Some members of the same plant family are susceptible to the same insects or fungal infections, which is why keeping these crops separated helps slow the spread. Interplanting vegetables, herbs, and fruits with a variety of flowers and other plants that attract beneficial insects and birds is key to managing an organic garden naturally.
Think Through to Harvest
As you’re planning, think about the foods you enjoy eating fresh and those you purchase frozen, canned, dried, or pickled. Will you have the time and know-how to put up some of your harvest for later? The easiest way to preserve your harvests is by freezing or dehydrating, but you can also make fresh-pack pickles without much fuss. Canning is a bit more involved, but this method creates shelf-stable food and is well worth the effort.
Getting Started
Check your list of plants to determine which should be started indoors , sown directly into your garden, and purchased as seedlings.
There are pros and cons to each method. The benefits of starting your own seedlings include:
The cost of a seed packet is often the same as one started plant.
There are more varieties to choose from, including heirlooms.
You control the pesticides and fertilizers applied to seedlings.
You can increase sustainability with recycled pots and homemade potting mix.
You may start only as many plants as you need.
The benefits of purchasing seedlings include:
Your purchase may support a local greenhouse.
You won’t need to buy special lights for starting seeds.
The process takes less time.
No special care is needed until you purchase your plants.
Starting Seeds Indoors
Raising your own seedlings can be as simple as sowing a few seeds in trays in a window or as complex as setting up a seed-starting system.
For the least expensive option, start seeds on a sunny windowsill just a few weeks before moving the seedlings outdoors.
For the strongest transplants, set up a full-spectrum LED grow light above your seedlings. A shelving unit fitted with light fixtures can house many seed trays. Seedling heat mats provide gentle bottom heat for speeding up germination, but you can set seeds anywhere with a temperature of 65°F to 80°F.
Cover trays with a sheet of clear plastic or another transparent lid to hold in moisture until the seeds germinate. Spritz the seedlings with a spray bottle of water only when the surface of the potting mix dries out, and use a small fan to mimic wind, encourage strong stems, and reduce “damping off,” a fungal disease.
Purchase seed-starting trays made from recycled plastic, reuse plastic yogurt containers or make newspaper pots to increase sustainability.
You’ll need a soilless seed-starting mix, or you can make your own from compost. When outdoor temperatures are warm enough for your seedlings, you’ll need to harden them off, meaning move them outdoors for a bit more time each day until they have acclimated to their new surroundings.
Start by placing them out of direct light for a few minutes and increasing exposure to sun and wind each day. Pay close attention to prevent sunburn, drying out, or freezing, and don’t plant them in the garden until the nighttime temperatures are warm enough for each crop.
Direct Sowing
Some crops grow best when sown directly into their garden bed. Read the directions on your seed packets for the best time to sow, how deep to plant seeds, how far apart to space them, and how much space to leave between seedlings after thinning (removing extra seedlings to provide the proper space between mature plants).
Some cool-season crops may be planted as early as the soil can be worked in the spring until several weeks before the last frost, whereas heat-loving crops should be sown once all danger of frost has passed. Check the average date of the last frost in your area to determine when to plant each crop.
Keep seedbeds moist by watering them gently each day. Even moisture is critical during germination and drying out could ruin your entire planting. Some seeds take two or three weeks to germinate, so be prepared to water them twice a day.

WHAT METHODS DO I WANT TO TRY? Consider the pros and cons of each gardening methods you wish to try, thinking about where each could fit into the space you have available.
Sketch your garden, raised beds, or containers and their measurements to gain an understanding of your available space. Note the amount of sun each area receives to help choose the best crops for each spot.
HOW MUCH TIME DO I HAVE? Be realistic about your time commitment and don’t plant more than you can care for. It’s better to start with humble expectations and add to your garden later than to overestimate what you can maintain. Try blocking out time for your garden on a calendar to help you plan.
WHAT CROPS WILL I GROW? List the vegetables, herbs, fruits, and beneficial plants you wish to raise.
CROP CLOSE-UP
For each vegetable, herb, or fruit you wish to grow, list the best time of year to plant and whether you will start seeds indoors, direct sow, or purchase seedlings from a garden center. Consider how much you can use fresh or if you’ll have time to preserve the extras.
How to Read a Seed Packet
Most seed companies include a wealth of information on their seed packets, including whether the seeds were raised organically (these seeds aren’t treated with fungicides); if the variety of seed is an heirloom, hybrid, or an All-American Selection (or AAS, which are chosen for superior performance); and if the variety is resistant to any diseases.
There is some confusion about seeds that are hybrids versus GMOs (genetically modified organisms, with genetic material inserted in a lab setting into the plant’s DNA).
Hybrid seeds are not the same as a GMO and are created by cross-pollinating two or more varieties of the same species. An F1 hybrid is created by crossing two open-pollinated varieties (which breed true to type), and an F2 hybrid is created by crossing an F1 hybrid with an open-pollinated variety. Other important information to look for on your seed packet is the best time to plant, time to maturity (or days to harvest), time to germination (how long it takes seeds to sprout), how much sun the plant needs, how far apart to plant the seeds, and how far apart the plants should be after thinning. For the best results, follow these instructions closely.
Getting Enough Water
Keeping your garden properly irrigated is especially important when plants don’t have an extensive root system, such as when they are seedlings. You’ll need to check the soil moisture regularly in hot, dry weather and provide irrigation when needed.
On the other hand, if your soil is high in clay and the drainage is poor, make sure plants aren’t overwatered. Too much water is just as unhealthy as too little and can cause roots to rot and lose their ability to absorb moisture and nutrients.
The symptom of root rot is wilted leaves, the same as too little water. Always check the soil and water only when needed.
Contouring
This watering method has been used in rice paddies for centuries to hold water or direct its flow to a planting bed. Permaculture proponents use this technique in much the same way to reduce irrigation needs.
To put contouring to work in your own garden, you’ll need to study the lay of your land to see how water runs off and where it tends to collect. Situate beds or rows of plants to slow water runoff and reduce soil erosion.
For example, rows are planted across, rather than up and down, a slope that slows the flow of water and increases the absorption of moisture into the soil.
Irrigation Methods
Most gardeners need to water crops during periods of low rainfall, so it’s a good idea to plan ahead for irrigation. Watering a garden with a sprinkler wastes a lot of water and can cause fungal diseases. If you must use a sprinkler, do so in the morning so leaves dry off before nightfall.
Some better irrigation options are outlined here:
Use soaker hoses to water at the root zone and reduce evaporation.
Direct water to individual plants with drip irrigation.
Fill milk jugs with water, replace the cap, and poke a tiny hole in the bottom to water individual plants.
Hand-water with a hose or watering can to allow close inspection of plants as you work.
Save even more water by installing rain barrels on your downspouts, if rainwater harvesting is allowed in your area. Mulching and planting in slightly sunken beds reduces evaporation, and amending soil with compost helps the soil retain water.
If your area is prone to dry spells, choose plants that are drought tolerant when possible. Try using a blend of water-saving techniques to reduce irrigation needs.
Getting Down in The weeds
Gardeners spend a great deal of time waging war against weeds, which is understandable considering they grow like crazy and compete with our vegetables for water and nutrients.
However, there are ways to keep these unwanted plants under control without spending your entire summer weeding, cultivating, and spraying with toxic chemicals. Keep weeds to a minimum by removing them before they spread seeds in your garden beds.
You can also plant your crops densely to reduce competition and use mulch to prevent weed seeds from germinating. With this combination, you’ll find it much easier to keep your garden relatively free from unwanted plants.
Mulching
Significantly reduce your weeding duties and reduce moisture loss with layers of mulch between rows and plants. Create your own compost to mulch small plants and consider using a chipper or shredder to create mulch from your own yard waste.
Keep weeds down between beds or rows by covering these bare areas with clean straw, free cardboard, or wood chips. Make sure any bales of straw brought into your garden are free of thistle seed and that the straw wasn’t sprayed with persistent herbicides.
Wood chips may be available for free from landscaping companies, offering an affordable and sustainable option. Keep in mind that as wood chips break down, they tie up nitrogen in the soil, so you may need to use more fertilizer.
Reduce weeds in planting beds by mulching with compost, straw, shredded leaves, or another mulch with a fine texture. To prevent fungal problems, don’t pile mulch over seedlings or newly seeded beds or against the stems of plants. It’s better to add an inch or two of mulch at a time around plants instead of adding thick layers all at once.
Density Plantings
Spacing your plants closely helps them by shading sprouting weeds that rob them of moisture and nutrients. Be careful not to plant your crops too closely, which reduces air circulation and encourages the spread of disease.
Another option is to plant shorter crops that like a shady spot where they can keep weeds at bay without interfering with taller crops. Interplanting two or more vegetables or herbs together can be helpful to both crops. Some good combinations are tomatoes surrounded by spinach.
Spinach is a low-growing crop that may be seeded densely, shading out weeds without competing with the tomatoes. As your tomato plants fill in, they will shade the ground around the time your spinach crop is harvested.
Pinching, Pruning, or Staking
Many plants are more productive when their growth is directed by selectively pinching, pruning, or staking. For example, tomatoes produce side shoots that take energy away from flowering and fruiting on the main stem. By pinching off these suckers, you’ll increase the number of ripe tomatoes harvested.
Pruning the inner branches of fruit trees allows more sunlight to reach the fruit, increasing sugar content. Staking vines keeps fruit off the ground and prevents rot.

Over the past few months, Uber and Lyft in particular have threatened to radically downsize where service is offered, fire most of their drivers, radically restructure into a franchise model, or leave the state entirely, if Proposition 22 fails.
California voting Yes on Prop 22—which includes fine print that any changes to it must be passed with a seven-eighths majority in the state’s legislature—is a huge setback for labor. It will trap hundreds of thousands of workers under a permanent misclassification scheme that rewards a racist business model that disproportionately hurts Black and brown workers. Despite all this, Proposition 22 is not the final say on this matter in the U.S. or internationally.
AB5 clones are being considered in New York and New Jersey, while Massachusetts’ Attorney General has already sued Uber and Lyft to reclassify drivers in the state. Despite objections from Uber’s and Lyft’s impressive lobbying operations, the PRO Act—which would grant gig workers the right to collectively bargain, as part of a massive overhaul of labor law—has passed in the House.
“This is really a story about the kind of cities we are building,” Katie Wells, a researcher at Georgetown University told Motherboard. “The kind of cities—the kind of world we’ve built—it has allowed these entities to come in and build up a workforce through an extractive and predatory system. Regulators have to keep that in mind.”
Outside of the U.S., the global 2019 strike on the day of Uber’s public offering has been followed by successive waves. Over the summer, thousands of delivery workers organized militant strikes and protests in Brazil, Mexico, Chile, Argentina, and Ecuador targeting Uber Eats and other exploitative food delivery apps. These have been joined by even more strikes and protests in Nigeria, France, and India. At the same time, Uber is losing legal challenges in France, Britain, Canada, Italy, where high courts have either outright ruled Uber drivers are employees or have opened the door to lawsuits reclassifying them as such.
Governments across the world are also beginning to push Uber to pay billions in taxes that it has evaded over the past decade. In Britain, Uber will have to pay £1.5 billion ($1.9 billion) in unpaid value-added taxes it avoided by exploiting a legal loophole. In the U.S., Uber has dodged billions in taxes and wage claims through misclassification: in New Jersey it owes over $650 million in taxes, while in California drivers have filed $1.3 billion in wage claims against Uber and Lyft.
Since Uber’s only hope for survival lies in misclassifying workers and labor law, though, it won’t give up the billions to be made both domestically and globally (even if at a loss) without a fight.
“There’s a lesson here for workers of all sectors, beyond classification: companies are willing to spend massive amounts of money to take away their rights,” said Jerome Gage, a Lyft driver and organizer with Mobile Workers Alliance. “It’s incredibly important for workers to organize to protect themselves, to protect upward mobility, a minimum wage, sick leave, healthcare—to roll back a century of basic protections that try and keep Americans out of poverty.”
Proposition 22’s victory, however, can’t obscure the fact that these companies are doomed. Even with a wage guarantee that effectively pays $5.64 an hour, the companies are no closer to sustainably achieving profitability than they were yesterday. Overcrowded markets for ride-hailing and food delivery, along with vicious price wars and poor unit economics meant there was never any real hope of achieving a monopoly, erecting barriers to market entry, and raising prices to levels that, for many of these companies, would yield their first ever profits.
There’s good news for investors, however, who will finally begin to see returns on investments that have long been underwater thanks to massively inflated valuations that have tumbled in public markets. Indeed, share prices for Uber and Lyft soared in premarket trading on Wednesday morning.
For workers, though, things will be bad. It is hard to imagine how hundreds of thousands of workers earning wages just under half of the minimum wage will be able to feed themselves, maintain housing, afford medical care, or otherwise make ends meet, especially under the boot of a pandemic and with no hope of government aid until next year.
Localities, cities, states, and countries will have to begin cooperating if they’re to have any hope of weathering the storm. They’ll need to start being aggressive, experimenting with ways they can outright take over the platforms or prohibit companies from providing the service to begin with—all while figuring out ways to expand mass transit so that not only they’re not only meeting the needs of people who need transportation, both those who worked for app-based ride-hail companies previously.
For the sake of maintaining an illusion that they’ll one day be profitable, gig companies have waged war in California at great expense to their workers, the public, and employees in other industries whose employers may grow emboldened this moment. The fight is far from over, and there is hope for labor in the continuing coordination of driver advocates, regulators, and legislators around the world, but it will get messy as likely to harken a period of unprecedented social unrest among increasingly immiserated gig workers.

On Tuesday night, Californians voted to pass Proposition 22, a ballot measure supported by app-based gig companies that exempts them from reclassifying their workers as employees.
Companies including Uber, Lyft, Instacart, Postmates, and more, spent big to convince voters to approve the measure. The company-funded Yes on Proposition 22 campaign spent over $200 million (including millions in donations to the California GOP), deployed a record number of lobbyists, and spread waves of misleading political mailers. At the same time, Uber’s and Lyft’s chief executives undertook a media tour featuring threats to exit the state and repeatedly attempted to exempt themselves in California’s courts. The campaign bought digital, television, radio, and billboard ads, and also sponsored academic research Meanwhile, delivery drivers were forced to use Yes on Proposition 22-branded packaging while the apps themselves told users to vote yes.
On the other side of the issue was a grassroots campaign run by driver advocacy groups and organized labor, which spent just over $20 million.
“We're disappointed in tonight's outcome, especially because this campaign's success is based on lies and fear-mongering. Companies shouldn't be able to buy elections,” Gig Workers Rising, a California-based driver advocacy group said in a press release early Wednesday morning. “But we're still dedicated to our cause and ready to continue our fight. Gig work is real work, and gigi workers deserve fair and transparent pay, along with proper labor protections.”
As news of the results broke, Uber CEO Dara Khosrowshahi took to Twitter to show his excitement and shared a tweet from early Uber investor Jason Calacanis calling Assemblywoman Lorena S Gonzalez, the author of AB5, a "grifter" who "failed to hand gig workers over to big-money unions".
After some time, Khosrowshahi reversed the retweet and instead emailed drivers a more subdued message celebrating that the "future of independent work is more secure because so many drivers like you spoke up and made your voice heard—and voters across the state listened."
This is undoubtedly a victory for capital over labor, and one that will likely allow the unprofitable gig economy to continue limping along at the expense of workers. It does not, however, change the reality that the “gig” business model is doomed in the long-term.
For years, gig companies have misclassified employees as independent contractors—a legal distinction that has allowed unprofitable enterprises to avoid expensive labor costs such as a minimum wage, health insurance, and safe working conditions, among other benefits of employment. Proposition 22 was cooked up to undo Assembly Bill 5 (AB5), a California law that codified an "ABC test" to determine if a worker was independently contracted or employed by a company and which went into effect in January.
After AB5 went into effect, attorneys for some of California’s largest cities, along with the state’s attorney general, then filed suits demanding an end to app-based gig company worker misclassification. Uber and Lyft have waged the main legal battle, but lost the case and every appeal since, making Proposition 22 a make-or-break measure.
"Prop 22 means I get no workers' compensation, no disability, no sick pay, it would be touch and go for me," Mekela Edwards, an Oakland-based Uber driver who hasn't worked since March because COVID-19 poses a high health risk to her. "I have to ask how long my unemployment will last, how long I'll have before I'm forced to go back out there and work. I don't want to imagine it, I can't imagine being forced to choose between my health and making a living."
Hundreds of thousands of people work for the gig companies behind Proposition 22 and many have been devastated by the COVID-19 recession. A Nervous Wreck’s Disabled Guide to Stepping Up
Navigating dis/ability and anxiety in the call to action
It’s very easy to get overwhelmed. With so many actions, so many organizations that need your support, it’s easy to drown in the sea of I SHOULD/I CAN’T and find yourself shocked into inaction. There’s a lot of people who don’t know what to do. There’s a lot of people who are frustrated with accessibility issues surrounding some more common forms of resistance.
A lot of people are asking: how can I help? I’ve weathered a process to figuring out how I can help build community and fight for justice & I’ve gotten pretty good at it, so I’m going to share that process with you. I’m going to breeze through the list of steps, and then describe how I went though them to get where I am today. Okay, great: here we go.

CASE STUDY: ME
I’m going to use myself as an example: My body and my brain don’t work quite the same as most, and I get frustrated with my inability to just show up in the street to throw down, for example. After sober self-reflection and negotiation with my dis/abilities, I’ve been able to design a strategy where I can do work that matters to me, that helps others, and is actually working with my body instead of against it.
0.I find it easy to get overwhelmed and shocked into inaction by the weight of the world. First and foremost, I give myself permission to feel overwhelmed. I find the key to fighting panic is to accept the feelings and let the panicked thoughts run their course. I listen to my body. I take a long shower. I pray. I center myself, that I can remember what’s important and look to the future with an eye that is both critical and hopeful.
1.Once I’ve got a more level head, I write down a list of things I’m good at: I’m a writer. I am a great cook. I know basic carpentry and maintenance of a household. I’m good at internet research. I’m okay with public speaking but excel in one-on-one conversation. My faith in Allah and my passion for justice are assets. I am an empathetic person who feels very strongly in rising up for the disadvantaged and marginalized in the world. I write it down, because these things are critical to remember and having a physical copy is helpful for me to process everything.
2. I consider my limitations. I don’t place judgement on them; I accept my limitations for what they are. I write them down on paper: I cannot stand for long periods of time or march long distances. I cannot risk arrest. I can’t go to a venue that has flights of stairs without elevator or escalator. I spend maybe too much time looking at this list because it hurts and it’s easy to dwell on what I can’t do. I give myself space for the feeling. I understand that most romanticized forms of protest aren’t accessible to many. There are allies & accomplices who can risk facing down the pigs, who can march for hours to shut down freeways, who can put their bodies on the line for justice. Let those who are willing & able rise up to their ability. I’m no good to the movement if I’m dead or hospitalized and my access to doing the work is severely limited from behind bars; so I swallow my guilt when I see family on the news shutting down on Lake Shore Drive, and I get back to considering what I can do to help.
3. I write down a list of the people and organizations who need support. I try to be as specific as I can. This requires a bit of research. It’s easy to say refugees need help, it may take time to come around to these three organizations in my city are helping refugees and need support. I look at organizations who are doing good work — I find the donate page on their website.
4. Next, I write down the people and organizations I know. I consider my faith community. The local organizations I admire. I consider the people in my life who are doing good work: the brother who gives so much of his time to a refugee family struggling to get on their feet, the sibling doing suicide prevention work in the trans community, the sister who uses her car to give free rides for people going to medical appointments. I think about the communities I’m a part of who could be doing more to help others.
5.With everything written down, I can look at these four categories and start putting ideas together:
I can write well, but I can’t risk arrest at a march. Aisha is going, though, and she’s just down the street: I can write protest signs and hand them off along with some other important supplies (water bottles, vinegar soaked bandanas, anti-tear gas mix in spray bottles) & Aisha can distribute them at the march.
I can hold a marathon of cooking in my home kitchen (to help process my feelings, because I know cooking good healthy food will calm me down), and when it’s done I can package it up and donate some healthy halal homecooked food to the refugee family brother Chris has been supporting.
I have a little extra money this week. I can use it to patronize the immigrant-run business down the street and keep money in my community instead of giving it to corporate interests.
I can reach out to LGBTQ orgs in my city and educate on advocacy for Muslims. I can reach out to Muslim orgs and talk to them about strategies for trans inclusivity. Let’s start with e-mail or phone calls, and maybe it can develop in to some in-person discussion with local leaders.
I can commit 30 minutes every day to calling my senators and local representatives to make sure [x bill doesn’t pass, y bill does, the literal antichrist doesn’t get appointed to the supreme court, etc].
I have a lot of friends and family who can see the direction this country is headed, aren’t happy, and while they believe something should be done about it don’t know how to get involved. I can plan a potluck dinner from home to have friends and family over to raise money for that organization doing local legal support for immigrants and refugees. While they’re over I can teach my less-informed family about the importance of this work and help strategize how they can get involved, too.
I have a lot of connections, and a lot of organizing experience I could put to good use. I am going to get my friends together and help create a prayer space for marginalized Muslims and do what I can to empower others to build community together in a way that is safe, accessible and affirming for everyone.
That last one is maybe a bit grander of a direction than many may be willing to take it but this is the point I’m trying to make: in this process, you can’t leave any idea behind. You don’t have to do everything on your list. Just write out every possible idea that comes to your head. Start with the tiniest most basic good deed, the kind of thing you think any decent human being would do, and move your way up to those big-picture dreams you feel like you could help bring to life if the stars aligned in just the right way — because you may find one day that they have.
Be mindful of your limitations, but more importantly celebrate what you excel in.
Maybe you know how to knit! And you can host a knitting circle at your church to discuss an issue you care about.
Maybe you’re an artist! And can create advertisements and art in support of that organization you admire in your free time.
Maybe you’re a dank meme creator! And do um whatever it is that entails? Which will help somehow I’m sure of it.
Maybe your aunt is queen bee at the retirement center! And with a little help she can coordinate a senior call-in to your local representative.
It’s easy to feel overwhelmed. It’s also pretty easy to sit down and think about the ways you can contribute to the movement. We can make space for both, but if you want more help figuring out how to step up, I’m here. Lots of us are.

How to Protect Coffee Quality During Sea Transit
Sea transportation is one of the riskiest moments in coffee’s route from farm to roastery. The beans spend days in a container exposed to high heat and humidity, both of which can cause cup scores to plummet.
To discover how to better protect coffee during sea transit, I spoke to Diego Lara Lavarreda, Global Coffee & Cocoa Specialist at agricultural packaging manufacturer GrainPro, Phitsanuchai “Chai” Kaewphichai, Co-Founder and Business Advisor at Thai coffee producer and distributor Doi Chaang Coffee, and Le Duc Huy, Vice-Chairman at Vietnamese coffee and pepper exporter Simexco Daklak LTD.

The 3 Things That Can Seriously Damage Green Bean Quality
Some say that the moment coffee cherries are picked, the clock begins ticking and the quality starts degrading.
Many factors affect a coffee’s quality and stability, but once you’re dealing with dried green beans, there are three main issues to consider: temperature, relative humidity, and moisture content.
Coffee is hygroscopic, meaning it will absorb and retain moisture from the air. Diego tells me of a five-month GrainPro study in Costa Rica in which the moisture content of Arabica coffee stored in an environment with a high relative humidity increased by 2%.
In extreme cases, coffee’s hygroscopic nature can lead to oxidation and mold. Diego tells me, “Oxidation of coffee beans causes the physical change of whitening.”
Also referred to as being “oxygen-bleached,” whitening happens when green beans absorb significant amounts of moisture from the environment. As the coffee’s physical appearance changes, so does its flavor. A loss of acidity and a baggy or past-crop flavors are the notable effects.
Meanwhile, mold threatens not just the cup score but the health and safety of consumers. “The biggest problem with highly increased moisture content during transportation is that ochratoxin could be created in the coffee, which is not fit for human consumption,” says Huy.
Diego agrees. He tells me, “Coffee beans affected by oxidation and mold can present a loss of aroma and flavor, resulting in cups that will not meet the quality standards of roasters and consumers. This puts at risk the prices that can be traded between the parties, but also the very health of consumers who are drinking poor-quality coffee with the possible presence of ochratoxins.”
Unfortunately, sea transit can result in those extreme conditions that lead to oxidation and mold.

Why Sea Transit Is Particularly Challenging
Imagine a sunny day out near a port, or even on a beach. It is hot, sticky, and humid. Then, as the sun sets, it quickly becomes cool – the type of weather where you might pull on a light sweater.
And now, imagine that green coffee on the ocean freight. It is potentially exposed to this fluctuation of temperature and humidity for days as it makes its way to the destination port.
Add in unpredictable weather patterns, long journeys with possible delays at port, and the differences between the climate of the origin and importing country, and sea transit can pose a significant challenge.
“There are many factors that can affect the quality of the coffee beans during transit, but the most important factors are moisture and temperature fluctuations,” says Diego.
The relative humidity over the ocean depends somewhat on the climate and season. However, according to Senior Research Scientist Isaac Held of the Geophysical Fluid Dynamics Laboratory, part of the National Oceanic and Atmospheric Administration Office of Oceanic and Atmospheric Research in the US, it is “roughly” 80%.
This poses a challenge for the transport of coffee beans. Coffee consultant and author Jean Nicolas Wintgens writes that a relative humidity level of 75% “corresponds to a moisture content in the bean of 15–16%… This is the critical level for fungi formation.”
Fluctuating temperatures increase the risk of mold. Diego says, “The fluctuations between day and night cause… condensation, which will affect the coffee bags and promote the development of mold. Those problems are going to be perceived in the cup and will cause rejections and losses.”
Huy says that this is worsened by the typical supply routes of green coffee. Transporting containers from countries of origin, which typically have tropical climates, to countries that may have cooler, more temperate climates can lead to condensation within the container.
For some coffee companies, sea transit can cause insurmountable problems. Chai tells me that Doi Chaang Coffee used to ship their beans from Thailand to the United States. Eventually, however, they had to stop selling to this market.
“Some years ago, we had problems with exporting our green beans to North America. We found out that when it reached our customers’ port, the quality had changed due to the long weeks of transit over the sea.”
Not only was his company losing money, but their brand and reputation was being damaged. Even today, no matter the destination, he tells me that “we always worry about how our coffee will reach our customers.”

How to Protect Green Coffee During Sea Transit
Protecting the coffee from moisture and temperature fluctuations is essential, especially during longer journeys. “Select a good transportation service,” Huy stresses.
He recommends looking closely at the ventilation and if containers are dry and in good condition.
However, it’s not just about the container. Diego emphasizes the importance of hermetic packaging that will prevent gas and moisture from getting to the beans (as well as keeping insects and other contaminants out).
Chai agrees. He used to use inner linings made of calico cloth. However, he switched to hermetic packaging to better protect the beans. “For many years, we mostly used calico cloth as an inner liner for jute sacks… But we found out that using GrainPro is more suitable and more welcomed by our customers, so we are using it to replace calico cloth sacks. The result is very positive from our customers as we do not have to worry about the coffee quality changing over the long transit,” he says.
There are two ways to do this: protect the container with a liner and protect the beans themselves with a pouch. Both methods will prevent air and moisture entering, no matter the temperature or relative humidity outside.
In fact, trials conducted by Cafe Britt in Costa Rica and Peru found that adding hermetic cocoons on the storage stage before transportation significantly reduced the sensorial perception of degradation, including in past-crop coffee. The cupping notes from the final blind test said that the sample stored in cocoons had a “very good flavor, despite being from the previous harvest” and “slight floral flavor,” while the control sample had a “slight old flavor perceptible in the cup, slight harshness” and was “tainted.”

Sea transit is an almost inevitable part of coffee trading, with many origin countries located thousands of kilometers away from the customer’s port. Yet it comes with risks: falling cup scores, oxygen-bleaching, and even mold. Roasters, traders, and producers need to understand these and appropriately protect their coffee – especially if they’re transporting specialty coffee.
