굿 모닝. Good morning.

Rolling out of bed, I rub the sleep from my eyes and blindly reach for the door. I find the door and wildly, without making too much noise, open it and head for the bathroom. The lights blind my sensitive eyes and I grumble in annoyance.
After finishing up in the bathroom, I head towards the kitchen to make breakfast for the others.
Flicking on the lights, I nearly jump out of my skin. San is laying face down on the floor, limbs spread out. His face is turned towards me, eyes closed.
“Good morning.” He states and smiles at me.
“What the heck, San?” I ask, a hand clutching my heart. “Why are you... there?” I finish, unsure of what to call what he’s doing.
“I woke up early and couldn’t go back to sleep,” San explains, sitting up. “So I came out here, then I got bored looking out the window so I laid down. Then you showed up.” He finishes happily now that he has a morning companion.
I nod and continue on my way to the kitchen. First thing’s first, I need coffee.
“What do you have planned for the day?” San follows me into the kitchen.
I load up the Keurig cup and place a mug underneath, “I have some work stuff to do and then I have to go grocery shopping. We’re running out of food.”
“Ooh,” San leans on the counter, “Can I come along?”
I nod, the extra hands would be helpful. “Do you have any plans?”
San shakes his head, “Nope. Oh, I mean I have to do laundry but that’s about it.”
“Sounds fun.” I murmur as the smell of coffee hits my nostrils.
Shuffling slippers against the hardwood brings my attention to the hallway. Hongjoong appears rubbing his eyes and his hair is a frazzled mess.
“Morning.” I greet him and he responds with a nod and grunt. I laugh and sip at my coffee, letting the caffeine jump start my systems. “Alright,” I breathe out, “What do I make for breakfast?” I mumble to myself and open the fridge.
Upstairs, more feet shuffle and doors open and close signalling the awakening of the others.
I pull out the leftover rice from the night before and throw it in the microwave for reheating. Pulling out several different side dishes, I mentally decide that rice, side dishes, and omelettes will do.
San has moved to the couch and is talking Hongjoong’s ears off about the dream he had last night. Seonghwa is the next to appear, he’s dressed for the day and any evidence of sleep is gone from his features.
I crack eggs into a large bowl as he enters the kitchen.
“Can I help with anything?” He asks, eyeing the side dishes sitting on the counter.
I nod, “Can you plate those and put them on the table? And can you get San to set the table? Hongjoong looks like he’s not hearing a word he’s saying.”
Seonghwa looks over and chuckles, “San.”
San pops his head from Hongjoong’s line of vision, “Yeah?”
“Can you set the table?” Seonghwa asks him, already plating the black beans.
Immediately, San is on his feet, “Yeah.”
“You couldn’t have waited two more minutes?” Wooyoung questions, his annoyance evident from downstairs. “You do know we have multiple bathrooms around the house.”
“This one’s my favorite.” Yeosang’s flat voice floats down the stairs.
I laugh visualizing Wooyoung rolling his eyes at Yeosang but ultimately letting him pass into the bathroom. After the eggs have been cracked and whisked, I pull out a pan and set it on top of the stove top. Looking at the eggs, something is missing.
“Here.” Seonghwa hands me the container of cut up green onions.
“Thanks.” I take the container and sprinkle the green onions into the eggs.
As the first omelette hits the pan, Yunho walks through.
“Something smells good.” He comments before moving to sit next to Hongjoong. His hair is wet from his shower and his cheeks still show his morning blush.
“It’ll be ready in like ten minutes.” I inform them. “Will someone go wake Jongho and Mingi?”
“I’m not going back up.” Wooyoung comments coming to sit at the table in the living room where San is setting up plates and silverware.
“Yeosang!” Yunho yells and poor Hongjoong flinches.
“What?!” Yeosang yells back as the microwave beeps. Seonghwa opens the door and fluffs up the rice before taking it over to the table.
“Wake the others!” Yunho demands.
“Why do I have to do it?!” Yeosang tries to deflect the duty.
“Cause you’re already upstairs!” Wooyoung stonewalls him.
Yeosang scoffs but I hear his feet travel to their rooms.
Smiling at the mess we are in the morning, I roll up the omelette and set it on the cutting board before pouring more eggs into the pan.
“Why are you so tired, Hongjoong hyung?” San asks, taking a seat next to Wooyoung.
I slice the omelette into pieces and set it on a plate that Seonghwa got out for me.
“He was out late again.” Seonghwa answers for him, crossing his arms across his chest, “Woke me up.”
“I did?” Hongjoong worries with wide eyes. “Sorry, I thought I was being quiet.”
“Were you with her again?” Yeosang questions, appearing with Mingi and Jongho stumbling in after him.
I roll up the omelette while listening to the entire conversation from the kitchen.
Hongjoong nods, “Yeah, we went out for a movie and then lost track of time.”
Wooyoung giggles happily, “Are you guys going to date?”
San slaps Wooyoung’s shoulder, “Don’t pressure him like that.”
“Nah, they’re obviously already dating he just doesn’t want to admit it to us.” Jongho states, sitting on the other side of Wooyoung.
“Woah, Hongjoong’s got a girlfriend?” Yunho says with a wide smile, “Finally.”
“What do you mean ‘finally’?” Hongjoong defends himself.
“Get your own drinks.” I remind them pulling the third omelette out of the pan and pouring the final bit of eggs into the pan.
“What do you want to drink, Mingi, Jongho?” Hongjoong asks the two that are still in somewhat of a sleep daze.
“Water.” Yunho answers.
“Milk.” San adds.
“Oh, me too.” Wooyoung comments.
“I’ll get the milk.” Seonghwa announces noticing Hongjoong’s defeated face.
“Do we have juice?” Mingi asks, the smells of breakfast slowly bringing him to life.
“We have apple or orange.” I inform him, pulling the fourth and final omelette off the pan. I turn the stove off then move to slice the omelette and plate it with the rest.
“Apple.” Jongho gives his answer.
“Orange.” Mingi decides his beverage, his voice still not awake.
Hongjoong and Seonghwa work to pour the beverages while I grab the plate of omelettes and my coffee mug and bring it over to the table where everyone is sitting around. Jongho rises and moves to help Seonghwa and Hongjoong bring the drinks over to the table.
Spread out on the table are dishes of black beans, kimchi, fried anchovies, seasoned bean sprouts, namul, stir fried potatoes, omelettes, and bulgogi. Not to mention the large container of rice.
“Thanks for the food.” Seonghwa announces and serves himself some rice which allows the rest of us to start serving ourselves after reciprocating his thanks.
“These are really good.” Yunho compliments with a bite of omelette in his mouth.
“Thanks.” I take the compliment and scoops some beans onto my plate.
For the next few minutes, the only sounds are utensils hitting plates and napkins being crunched up.
Taking a sip of my coffee to clear my mouth, I inform the guys of my plan to go grocery shopping. “San and I are going to the store today, do you guys have any requests?”
“We need laundry detergent.” Seonghwa looks up briefly, “We’ve got like two pods left.”
My eyes widen not knowing we had gone that low on detergent. I quickly pull out my phone and add to the shopping list.
“Can we have chicken sometime this week?” Mingi asks, looking around for objections. “I’m craving it for some reason.”
“Oh, yeah, can you make that one dish that I like?” Wooyoung suggests, happily.
“That was specific.” Yeosang laughs.
“You know which one, right?” Wooyoung looks to me and I mentally go through my recipe book, “The one with the potatoes and the carrots? It has like a brownish sauce and I think you use the whole drumsticks?”
My mind immediately finds the Chicken Curry recipe my mom taught me years ago.
“The curry!” Hongjoong lights up at the memory.
“Oh, the curry!” I remember and Wooyoung nods happily. “Yeah, I can make that. When do you want it, Mingi?” I inquire from him, adding the ingredients to the grocery list.
“Uh, Wednesday night?” Mingi wonders, “I mean honestly, I do not care.”
I nod and continue eating.
“I want Goldfish.” Jongho whines, putting down his spoon.
“And popcorn.” Wooyoung pipes up, “And Chocopie.”
I type as fast as I can to get down all the snacks they want.
“Jalepeno potato chips, please.” Seonghwa smiles.
“String cheese sticks!” Yeosang adds in.
“And...” San looks at Yunho and Mingi.
“Peppero!” They scream in unison.
I laugh and add it to the list.
“Alright.” I lean back and look at the table of mostly empty dishes, “Should we clean up and start our day?”
“No.” Jongho mumbles while Hongjoong nods in agreement.
“Yes.” Seonghwa corrects them while standing and collecting a few dishes.
“You guys get to clean. I cooked.” I state, nodding my head towards the kitchen.
Yunho obediently obeys and picks up dishes as well. San, Wooyoung, and Jongho are in a heated discussion about the purpose of lamps. Mingi is on the couch with his eyes closed and I’m pretty sure he’s passed out again. Hongjoong and Yeosang also begin cleaning up the table while I get to sit back and watch the whole thing unfold.

tips for surviving the pandemic: things i learned from my immigrant parents
It’s hard to believe that it’s only been a little over a week since the WHO announced that the coronavirus (COVID-19) was officially a pandemic. This has been a long, challenging week for a lot of people and it is nothing short of terrifying to read reports of what is happening in Asia and Europe as many predict that we’ll likely endure a similar fate here in the United States. In the midst of all of this chaos and uncertainty, I’ve been reminded of so many lessons that my Taiwanese immigrant parents taught me. I’m sharing them here so that others might also benefit. Thanks Ma. Thanks Daddy.

“You already went out yesterday.“
1. Learn how to stay home. Our family is eight days into self-isolating at home and Tony asked me this morning if I had cabin fever. And strangely, the answer is no. I’m not. Not to downplay the difficulty of this moment but my experience with this “shelter-in-place” ordinance reminds of pretty much all my summers between kindergarten and 8th grade. Both of my parents worked full-time so summer was just three blissful months of nothing. No structure, no plans, no camps, no playdates, and no responsibilities. My parents never made me feel like I was missing a thing by staying home and I don’t remember ever feeling bored. There were always library books to read, stories to write, and thoughts to journal. Hours were spent playing school with my big sister (now a first grade teacher!), making up random games like who can avoid touching the carpet longest, learning Kim Zmeskal’s latest gymnastics floor routine, writing lyrics to Kenny G saxophone solos, and rehearsing for our variety show that we would perform to our tired parents at the end of the day. And that’s not even including the hours we spent watching The Price is Right, CHIPS, Knight Rider, and Airwolf (yep, no cable).
As a teenager I carefully plotted all my hangouts with friends so that I didn’t have too many consecutive days when I was out of the house. Whenever I asked my parents if I could hang out with friends, they would always say, “But you already went out yesterday. What’s wrong with staying home? Why do you always have to go out?” It was as if having too much fun two days in a row was off limits. If there was a big party on Friday, I would purposely make sure I stayed home Wednesday and Thursday just to increase the chances of being able to go out on Friday. I know a lot of people talk about how awful their high school years were but I was one of those lucky kids who had a really great group of friends that made me feel seen, loved, and cared for. The downside was that I couldn’t get enough of it. I was always thinking about the next hangout, the next event, the next thing. It took me all the way until my late twenties to fully appreciate the fine art of staying home and to finish my unexpected transformation into the expert homebody that I am today.
I’m reminded of that old quote by Blaise Pascal, “All of humanity's problems stem from man's inability to sit quietly in a room alone."
It’s great to be out and about, but it’s also really important to learn how to stay home.

“What are we eating for dinner?” “Cleaning the fridge.”
2. Be creative with what you have. I love food. Not in a foodie sense, but I get a lot of pleasure out of eating. I’m not a food snob by any stretch of the imagination. I thoroughly enjoy a Stouffer’s frozen lasagna or a peanut butter and jelly sandwich as much as I enjoy a fancy, inventive, Michelin-starred meal at Commis. What’s hard for me is when food is eaten as sustenance rather than with delight. But my parents taught me that you can always take pride in preparing a meal. No matter your ingredients.
My mom is an excellent cook. I know a lot of people think their mom is a good cook but my mom is legitimately skilled in the kitchen. There were some nights when I’d ask what was for dinner and my mom would just reply, “Cleaning the fridge.”
Now for some, this might sound terrifying. But my mom could honestly make something out of nothing. I still crave my dad’s simple egg and garlic fried rice. My parents raised me to be able to make an tasty meal just from rummaging in the pantry and fridge for random leftover things. There were plenty of summers where lunches and snacks were an individual culinary adventure for each of us kids. I still remember the day I witnessed my baby sister add a Kraft single on top of her onion ramen noodles. She saw my confusion, shrugged and said, “You should try it, it’s good.”
With all the hoarding folks have been doing during this pandemic, I’ve found myself feeling quite anxious. Trying to calculate if we have enough food. Estimating how many more meals we can eat at home before we need to make another grocery run. As someone who struggles with a scarcity mentality it has been hard not to panic. But then I keep reminding myself that I know how to make good food using just whatever’s available.
You know, I was pretty disappointed with Mary H.K. Choi’s second novel, Permanent Record, given how much I enjoyed her debut novel, Emergency Contact. But I was absolutely thrilled with the shine she gave to what her protagonist calls “Hot Snacks”.
Here’s an excerpt from Permanent Record that is a beautiful ode to creative food mashups and immigrant kids everywhere:
“I edit and post a Shin Ramyun Black video set to music. My favorite instant noodles with three flavor packets and so much garlic. It’s a classic Korean HotSnack, especially when you throw in cut-up hot dogs, frozen dumplings, extra kimchi - and this is where the artistry comes in- eggs, cheese, corn from a can, and a drizzle of sesame oil on top. And furikake if you’re feeling wealthy. The next night I put up a bacon, egg, and cheese not in a bagel but in a glazed honey bun. Laced with sriracha and pan fried on the outside. Then it’s chilaquiles with Spicy Sweet Chili Doritos and chorizo. Jamaican beef patty casserole disrespected with a smothering of Japanese curry and broiled. With Crystal Hot Sauce over the top and pickled banana peppers. I’m trolling with that one but the controversy is berserk. When I run out of old videos, I make saag paneer naanchos with Trader Joe’s frozen Indian food, and it’s a hit. Especially when I add yogurt and a thick layer of crushed-up Takis on top.”

“Watch soap operas.”
3. Find a way to escape. I’m generally pro technology but I’ll admit I’m a little bummed at the way iPhones and iPads have made TV viewing such an individual activity. I like how Disney+ has gotten some families back to watching TV together again. Although I will say, we really coddle our kids these days. I grew up in a time when movie ratings only applied in the theaters and we watched movies with our families like Alien, The Fly, and Gremlins. We were scared out of our minds and sometimes could only watch through the cracks between our fingers covering our eyes because it was so scary. Okay, this also might be why I can’t watch horror movies as an adult.
From a young age, my parents taught me that watching other people’s drama unfold on screen is one of the best way to escape your own drama. Some people say binge watching became a thing when the TV networks started releasing shows on DVD. Others give credit to Netflix releasing their original content a whole season at a time. But truth be told, I first learned how to binge watch from my parents.
We would rent 30-40 VHS cassette tapes from that random spot in Bellaire Chinatown. Can you picture it? You needed multiple plastic bags to transport that many VHS tapes.
Do you remember the one about the dying mother who needed to find homes for each of her 7 children? I don’t think it’s normal for a 10 year old to cry so much but you better believe it’s made me learn the true value of a soap opera escape hatch.
Are you in a pandemic? Now’s the perfect time to pick up that YA novel, binge that reality show, start that kdrama, or rewatch all six seasons of The Sopranos again.

4. Be informed about what’s ahead. If you ask either of my parents about the weather at any given time they can reliably tell you the daily percent chance of precipitation and humidity for at least seven days out. They’ve always been this way. They would inform me of the weather at various points throughout the week. They planned their yard work and car washes around the weather forecast. There’s something about the way the weather forecast is available to everyone. And it feels like it’s just a matter of making the small extra effort to access it and gain a slight advantage. I feel like so much of the immigrant mentality is to be diligent in making the right choices to not screw yourself over and seizing opportunities whenever you can. And it wasn’t just weather but this is such an obvious example of it.
I remember my dad saying to me once, "Can you imagine if someone decided to read every book in their local library? If they just went shelf by shelf and systematically read all the books? You could do it, you know. It’s free, it doesn’t cost any money to check out a book from the library. But no one really does it.”
I think immigrant parents get a bad reputation for forwarding chain letters and health/science hoaxes they get on email, WeChat and Line. And in a pandemic, yes, they are definitely susceptible to misinformation, rumors and flat out untruths. But the thought behind it seems right.
The mistrust of government leadership is actually quite relevant right now in this pandemic. Many immigrants left countries with governments that were overtly corrupt, oppressive, and used propaganda to influence its citizens. And while many Americans still take pride in living in a country that verbally champions freedom and democracy, the truth is that our government has already failed us and lied to us in many ways. During this pandemic, we cannot wait on leaders to tell us what to do. We must be diligent in reading for ourselves, seeking experts, using our critical thinking skills, and making preparations accordingly.

5. Check in with yourself. Check in with others. I have so many memories of my parents walking through the living room and asking me and my sisters if we were cold. It felt like they couldn’t walk past the thermostat without asking us if they needed to raise it or lower it. As if they couldn’t hear us sneeze and wonder if they needed to turn off the ceiling fan. They couldn’t see us sitting in a dim room without turning on a light for us. There are so many times I fell asleep reading on the couch and woke up with a blanket over me. Or sometimes I was fully awake doing something random, like playing Egyptian Rat Screw with my sisters (a cardgame for the uninitiated), and my mom would walk by and wordlessly drop a warm, heavy blanket over my shoulders. That’s care, y’all. Consistent, immediate action, and often without words.
The tip here is to pay attention to your discomfort during a pandemic. There’s this immigrant stereotype of stoicism and that’s true to some degree but maybe the resilience is made possible not because of unnatural toughness but largely because immigrant parents can also be so incredibly perceptive and tender in some very tangible ways.
When everything is chaotic around you and you’re busy multitasking these next few months, don’t ignore your needs. Notice how you’re feeling. Physically and emotionally. Where are you carrying your stress and tension in your body? You don’t have to tough it out. Oh and remember to check in with your people on how they’re feeling. Is there a light switch you can turn on for someone?

“Laugh to death.”
6. Laugh to survive. Look, we didn’t have the perfect family or anything like that. We’ve definitely had our share of difficult times, financial stress, health issues, arguments, and pain. But my parents also really knew how to laugh and taught us to laugh with abandon. Like, bent over, tears running out of your eyes, can’t breathe kind of laughing. Our dinner table was kind of like a writer’s room. It was difficult to tell a mediocre story. You had better come prepared with a punchline or a point. It was a tough crowd, every night. On many occasions I stopped myself halfway through a story upon the self-realization that there was no real way to land the plane. Polite laughs were nowhere to be found, except perhaps a charitable smile from my baby sister. But it didn’t stop us from trying. I think my sisters and I are all probably better storytellers for it and we definitely have learned to try to bring humor into difficult times.
I know that this pandemic is so incredibly dark and depressing that it can sometimes feel disrespectful, inappropriate, or childish to laugh at anything. But my parents taught me that you laugh to survive. Nothing is ever so dark that you can’t find a reason to laugh. And sometimes you really need to find something to laugh about.
I’ve been taking long breaks each day from major media news outlets but I have been finding such joy and laughter from the meme creators on IG and the comedic geniuses on Twitter. In Taiwanese when something’s really funny, people will say a phrase that is imperfectly translated as laugh to death. Like you killed a person it was so funny. Now’s the time to find that content or those people who will get you to laugh to death.

“I’m going to go re-park the cars.”
7. Go to bed with a plan for the next morning. I grew up in a suburb of Houston, Texas where one property developer built the entire neighborhood and used the same eight or nine floor plans for all the houses but changed up the brick and trim color to keep things interesting. Most homes have a long driveway that connects a garage set near the backdoor of a home to the street. By the time I was driving, we had four cars in total -- two in the garage and two on the driveway. At the end of the day when everyone was home for the night and my dad was getting ready to go to bed, he’d announce, “I’m going to go re-park the cars.” Then we’d all kind of stop what we were doing and rearrange the order of the cars to match our morning departure schedules. This meant figuring out who was leaving when in the morning and sometimes also prompted brief check-in conversations about any changes in our usual routine.
In a pandemic it can sometimes feel like there are a million different things to attend to and large conceptual concerns that demand your attention. But there’s something calming and centering about spending a few minutes each night thinking through specifically what needs to happen just tomorrow. Not the day after or next week. Get super tactical and specific about what tomorrow morning looks like. Check-in with your partner about any aberrations to your schedule (e.g. I have a super important conference call at 7am tomorrow) to minimize any unnecessary surprises. There’s something magical about setting up your morning that helps you rest just a little easier at night.

8. Make time for your spirituality. Growing up my parents both had physically demanding jobs. My mom was a seamstress for many years, providing alterations at my aunt and uncle’s dry cleaners. She later worked in an elementary school cafeteria and then eventually became a classroom aide for special needs students. My dad worked at that same dry cleaners for years until he got a job at the post office. He then became a letter carrier, delivering mail on foot. The summer months were especially grueling, carrying a heavy sack of mail in 100 degree, humid weather, and walking until sweat soaked his shirts and blisters formed on his feet. They had every excuse to skip weeknight events. But unless they were sick in bed, I can’t remember a time when they missed their weekly prayer meeting with their friends from church.
Pandemics have an unsettling way of forcing us to confront our mortality and can trigger a bunch of unresolved shit that has been bubbling underneath the surface. We’ve lost some of our usual coping mechanisms and it can be super hard to quiet the anxieties, fears, and other demons that we usually try to keep under control. This isn’t a lecture about a particular faith or belief system. It’s just a reminder to prioritize your existential questions, your interior life, and your connection to things much bigger than yourself -- whether that’s a community, a yoga practice, a faith group, a tradition, or something else.
I have a fledgling meditation practice that I’ve been trying to strengthen since last year. When I say fledgling I mean that sometimes I bail before the ten minutes is up and check my phone. Even though I’m not very good at it yet, I can really tell the difference on the days that I make time for it. Our church started hosting its weekly Sunday service online and that’s challenging for me because a church service feels like it’s designed to be so much about the physical rhythm of going to a place, seeing faces of people I love, hearing their voices co-mingling with mine in song and in prayer, and tasting the bread and wine in my mouth. The online service was short, and just for viewing through a zoom conference call, but there was still something meaningful about setting aside that time Sunday morning, asking our wiggly kids to be present, and saying the liturgy out loud knowing that in homes all across the country, other people are doing the same.
If things are really going to get as bad as some are predicting, we’ll need the spiritual strength to make it to the other side. Those habits are hard to form overnight. 9. Rise to the occasion. Whenever my parents are telling old war stories about things they had to do to get to where they are today, inevitably one of us will say, “Man that’s crazy, how did you manage to do it?” And instead of pointing to some super personality trait of theirs or some complex self-help principle, they always say, “We had no choice.” It’s not said in a defeated way, but in a posture of accepting that life can be cruel, unfair, and capricious. And that it’s not helpful to dwell too long on the why’s and how’s. My parents taught me that you can’t stay in despair mode. You eventually have to push yourself into problem solving mode and you do whatever it takes to move forward.
This coronavirus is so unlike anything we’ve ever experienced in our lifetime. It is so unprecedented for me that my brain is having a hard time processing the reality of what’s happening right now and the rest of my lived experience. I spent the first few days of this week just being overwhelmed, anxious, angry, and irritable. At this point though, I’m in go mode. I’m doing what needs to be done for our family and taking care of business. What choice do we have? I can hear my parents saying it. One day, if we’re lucky, we’ll say it to our kids too.

We can do better
Being the primary meal preparer between myself and Michela during quarantine also means that I strongly influence what we pick up on our weekly grocery trips. It’s not that I’m an amazing cook, but thousands of hours of food media have definitely emboldened me: I may not be amazing, but I am fearless in the kitchen. Some of our quarantine staples have been: pan fried chicken thigh, roasted broccoli, Chinese string beans, chili-lime kale salad, french omelette with cheese, kimchi fried rice, tacos with fajita veggies, and Chinese egg and tomato. We also cook frozen food, ramen, pasta, rice and other grains, and we also order-in a few times a week. We get variety, but I also have a bias towards familiarity so I don’t go looking for new recipes the way I did with Mark when cooking was a weekend activity instead of something I do to have food.
Michela and I have been reading about police abolitionism, which it turns out actually isn’t very radical. The main idea is just that most cities in the US today task their police forces with a lot of stuff that might be better handled by other organizations: answering calls about people living on the street, mental illness calls, and small crimes. Abolitionism is a call to shift funding from the police to these other organizations and social programs which reduce crime.
A few weeks ago when we went grocery shopping, Michela picked up some fresh rosemary. I was skeptical about how we would use it. She didn’t have a plan, and we’ve let food go bad accidentally several times in the last few months, so I’ve been trying to take a conservative attitude on groceries, only buying things when I had a plan to use them. The rosemary ended up sitting in the bottom of our fridge for several weeks, despite near-daily reminders I would bother Michela with, that we still needed to use the rosemary.
My first response to the idea of abolition was that it made sense but I wasn’t sure why it was preferred over reform. Reform has been “tried” but to the extent that it hasn’t worked I also feel like it hasn’t been wholeheartedly implemented. Part of the problem is that attempts to reform the police from the outside tend to be met with extreme skepticism and patronization from the officers, according to Vitale in “The End of Policing.” Vitale also calls out reformist policies like community policing -- the idea of some prototype of policing where neighborhood police are known and respected in the community -- which call for things like increasing reliance on Police Athletic Leagues, positive non-enforcement activities with youth, and more focus on getting to know community members, things that Vitale says do not reduce crime. It’s worth noting that community policing has been shown to increase trust in the police and decrease perceptions of biased treatment, even among residents in high crime and high poverty neighborhoods.
Yesterday we made rosemary pesto off of a recipe from the internet. It asked us to make the pesto in a food processor, which didn’t work for us because the rosemary needles just got mucky and wouldn’t pulse, so we scraped it out and chopped it up on a cutting board. The pesto was delicious after we added some lemon juice and pasta water. I’ve never cooked with rosemary before, and I probably wouldn’t have if Michela hadn’t pushed it on me, so maybe I should be less resistant to buying things I don’t yet know how to cook. Being forced to use rosemary taught me about it as an ingredient. It’s intensely herby and a little throaty. Fresh rosemary has a sort of bitterness to its aftertaste, but by adding more acidity and salt we were able to balance it out.
While there is room for investigation when looking at reform and abolition, I do think that from the current state of things, both kinds of policies move us in the correct direction. The rerouting of funding is overdue. As Dallas police chief David Brown said,
“We’re asking cops to do too much in this country. We are. Every societal failure, we put it off on the cops to solve. Not enough mental health funding, let the cops handle it ... Here in Dallas we got a loose dog problem; let’s have the cops chase loose dogs. Schools fail, let’s give it to the cops ... that’s too much to ask. Policing was never meant to solve all those problems.”

That’s the devil’s temperature.
Remember how I told you in my last post about my marathon grocery trips? Rob accompanied me on the one I took on Sunday, March 5th, and while we were picking up a few Asian staples at Joong Boo Market, Rob had the idea to make some kimchi. It didn’t involve too many ingredients, and after watching Michael Pollan’s Cooked episode on fermentation, we were up to the task.

We worked from this Napa Cabbage Kimchi recipe by David Chang (of Momofuku fame) and readied the ingredients in a huge jar. Though we’ve gotten used to using some Asian ingredients that feel unusual to the Western world, I’d be lying if I said we weren’t a little intimidated by this jar of tiny, salted shrimp

These shrimp don’t really add anything substantive in the way of meat (after all, most of us tend to not notice tiny shrimp floating in our kimchi). They’re more of a flavoring agent, just like you might use an herb or spice. Definitely a bit unsettling with thousands of beady little eyes staring at you, but this turned out to not be the ingredient that gave us the trouble.

Nope, it would be our choice of chile that brought us down on this one. Rather than buy the specific kind of chile powder the recipe calls for (kochukaru), we just ground up some Thai chiles. Bad, bad idea.

But we didn’t know that at this point, and we were thinking to ourselves - how cool! Look how serious this looks! So we gave our head of napa cabbage a dip in our mixture of garlic, chile, shrimp, salt, sugar, soy sauce, fish sauce, and green onions.

We gave the kimchi plenty of time in the fridge to start fermenting, and when we finally tasted it, it burned our mouths right off our faces. Our chile substitution turned out to be less than innocuous, in spite of the deceptively sweet smell it gave off. We tried to work a few of the cabbage leaves into two large portions of fried rice, and we probably went through two liters of water during that meal. Though we found this kimchi to be nearly inedible, at least our efforts resulted in this series of photos of Chef Rob (because it was impossible to choose just one).



We technically could have rinsed the cabbage and had a fresh crack at it, but after advertising “abusively hot” kimchi to our friends, we sparked enough interest to disseminate it as it was. We plan to give kimchi another crack in the future, being very careful not to repeat such a rookie mistake, but in the meantime, at least we got some photos Rob can use for a cookbook someday - a cookbook that should probably not include kimchi :)

How to Eat Around the World on a Vegan Diet
As an omnivore, traveling is pretty easy on my stomach. There’s nothing I won’t eat (or at least try once. Like those fried maggots in Thailand) and I don’t have any food allergies to worry about. Outside of an inability to handle spicy food, I’m pretty lucky. I know scores of travelers who’s food allergies and dietary restrictions make traveling to many regions of the world very, very difficult. Luckily, thanks to the web and apps, it’s become a lot easier to convey your dietary needs to shop owners around the world! In today’s article, I sit down with our community manager and fellow blogger, Chris, who has been a vegan for 12 years. He shares with us how he does it, his favorite resources, and his advice for the non-omnivores out there!
Nomadic Matt: Tell us about yourself! Chris: I live abroad in “sunny” Sweden. I’m vegan, straight-edge, Buddhist, and balding. I’m also a huge nerd (I have a Star Wars tattoo and am a big fan of Dungeons and Dragons).
I grew up in small-town Canada, and after university, I intended to go to law school and get a respectable job, make mad cash, and live the Canadian Dream. I worked two jobs to put myself through school and was able to graduate without any debt. However, somewhere along the way I realized I wasn’t really loving the path I was walking.
Growing up, it was always assumed that if you did well in school, you were sort of obligated to go to university, get a good job, marry, have 2.5 children, etc, etc.
It wasn’t until after my first year of university that I finally had the space and time to really think if I wanted that path. While everything was going well – I was getting good marks, eating well (ish), and going to the gym every day – I didn’t feel challenged by my current situation. There had to be more to life than just jumping through hoops and building a routine. It was then that I gave up my plans of following the career-house-family model and started to look for alternatives ways of living.
How did you get into traveling? Honestly, I think it all started when I was 10. My dad and I went down to Florida to Disney for my birthday, and — not surprisingly — it was an amazing time. I have lots of fond memories from that trip, though what stands out the most isn’t what you’d think. What started me down my road of travel? A seatbelt.
Some of you will remember the car company Saturn. They used to have a car with an automatic seatbelt. It was a cumbersome contraption, but as a 10-year-old, having just arrived in America for the first time, I thought it was amazing. An automatic seatbelt?! It blew my mind. I was captivated by it. I think that’s where it all started. From then on, I realized that there were so many mysterious and exciting things out there. And I wanted to uncover them all.
Ten years later, I was hacking my way through the jungles of Costa Rica. While there, I almost got killed by a jaguar while hiking in the rain forest. It had stalked my group to the top of a mountain, and when I was more or less alone it started to weave toward me. By the time it got close, my guide showed up and we scared it away (though it did stalk us for another few hundred meters). A week later I was chased by a crocodile while kayaking up a river (talk about bad luck, right!?). That trip rekindled my desire to travel and inspired me to change my priorities. I left university early and moved to Japan to live at a Zen monastery where I could have some time to figure out what I wanted to do in life.
I’ve more or less been traveling since.
You’re vegan. Is it easy to travel as a vegan? For the most part but it all depends on your destination and your preparation. In North America and Western Europe, most people understand what you mean when you say you’re vegan or vegetarian. Moreover, if they don’t understand, they likely speak enough English that you can clarify. Many cities in Europe are actually amazing vegan hubs (Berlin and Glasgow to name two).
The trouble arises when you visit somewhere with a high language barrier that also has very different cultural food norms. There are many countries in the world where being vegan/vegetarian is something uncommon and perhaps not entirely understood. In countries like this, the difficulty isn’t finding food — basic staples like rice and vegetables and fruits can always be found at markets and stores — but interacting with locals and having to explain your diet, which can come off as some sort of implicit judgment of their own diet. If you don’t do your research, you can get into some awkward situations.
As a vegan, we sometimes miss out on cultural exchanges. Having a local invite you into their home is something many travelers dream of but, as a vegan, this can be tricky as you now have to politely explain that you cannot eat the food they’re offering. It’s a fine, challenging line to walk.
What are some good resources and tools for vegans planning to travel? Happy Cow is the go-to resource for finding vegan restaurants abroad; it’s like vegan Yelp. You can read reviews and find information about menus, hours, and locations. This is my main resource when I’m searching for good vegan grub abroad.
Another tool I use is Couchsurfing. While there are vegan groups there that you can browse, I just like to message local vegans directly and say that I’m coming to their city and would love to hear their suggestions. People are always happy to share their thoughts, and I’ve come away with some great tips from this. Not only can you ask about restaurants but you can inquire about good grocery stores for vegan options, as eating out every meal will get pricey.
Don’t hesitate to ask the staff of your hostel/hotel or the host of your Airbnb. They are equally valuable resources, too!
Lastly, there are lots of great vegan travel blogs, too. Some of my favorites are Burger Abroad, Justin Plus Lauren, Vegan Food Quest, and of course, my own blog, Lessons Learned Abroad.
Have you had any dietary mishaps while traveling? Many! Just like every other aspect of traveling, your planning will only take you so far. Sometimes things go off the rails and you need to adapt.
When I was in Mongolia, my partner and I were invited to lunch by a local. We were a bit hesitant, considering our diets (my partner is vegetarian), but didn’t want to be rude. So we accepted. It turns out the family had already eaten — they just wanted to make us a meal. They served up some meat dumplings (there are not many cows in Mongolia, so I think it might have been horse meat), kimchi, and fermented milk green tea. Not exactly my standard vegan meal.
But we adapted.
I pretended to drink the tea while my partner downed her glass. We then covertly swapped cups so they wouldn’t notice, thereby leading them to think we both drank the tea.
I ate all the kimchi and then tried to gesture that I was full — they didn’t speak English, after all, so gestures were all I had. They insisted I eat some dumplings, and not taking no for an answer, I had to bite the bullet. I picked up a few and popped them into my mouth. As soon as they looked away I spat them out and put them into my pocket. They were so hot and greasy, they kind of burned my leg as they dripped through my pocket but I played it cool.
After the meal we all went outside and their dogs started hounding me. I tossed them the scraps, and no one was the wiser.
How do you get over the language barrier and let someone know your dietary needs? There are three basic ways to do this:
1. Write it down. I write down phrases in my notebook for each country I visit. I’ll write down things like “I do not eat meat” so that I can show it to servers at restaurants. I’ll write it in the local language, and then phonetically in English so I can read it aloud without too much embarrassment. This is my standard method — which probably hints at just how old I am — though I am slowly coming around to this next method.
2. Use Google Translate. If you have Internet access, then Google Translate is a great method. To be safe, I suggest downloading the necessary languages so you have access offline. You can also use the app to take photos of menus and translate them, which has been super helpful on many occasions!
3. The Vegan Passport. This little book has helpful vegan phrases you can use as you travel. There are versions in around 80 different languages, making it a pretty handy resource for an RTW trip. It costs around $10 but could likely save you some trouble on the road.
Where are the best places in the world to travel to as a vegan? Nowadays you can find vegan restaurants pretty much everywhere. That being said, there are a few places in the world that showcase some impressive offerings. NYC, Berlin, Toronto, and Austin are all great vegan hubs. I’ve had some of the best food of my life in those cities. Additionally, countries with a higher percentage of vegetarians and vegans (like Germany or Sweden) also make it easy to find vegan food products in grocery stores, covering you for all those days you don’t want to eat out (or can’t afford to!). Are there any places that are really difficult? Not surprisingly, I found Russia, Norway, and Mongolia to be challenging as a vegan. Essentially, if a country doesn’t grow many fruits or vegetables then you are sort of out of luck for a lot of options. Don’t get me wrong, I loved all three place but my diet there was mostly bread and unflavored instant noodles. There just weren’t a lot of options.
How do you manage in countries with few vegan options? Plan ahead! Always travel with some extra granola bars or trail mix from home. This will keep you covered during those few instances when it is hard to find a proper meal. I took 30 power bars with me to Russia and ate almost 100 granola bars during my 800km walk along the Camino.
Traveling as a vegan means your meals will not always be glamorous. Making your diet a priority, you sometimes will end up having some pretty bland and unexciting meals. It won’t always be awesome vegan food, so be prepared for those rough patches by bringing some backup snacks. You’ll thank me later.
You’re an avid Couchsurfer! Many people are put off by Couchsurfing, since you are essentially staying with a stranger. Why do you like it? Honestly, CS is my favorite way of finding accommodation precisely because you are staying with a stranger. I like it better than hostels because you generally have more privacy and it is quieter than hostels (no snoring backpackers!). You also get to connect with a local who can answer all of your travel questions. This is a priceless resource, making CS worth its weight in gold! On top of that, there are lots of events and meetups available on Couchsurfing, which are great ways to meet other locals and travelers. The fact that it is free is just the icing on the cake.
What tips do you have for those considering Couchsurfing as a means of find accommodation? If you are planning on using Couchsurfing as your primary accommodation resource, you’ll want to do at least these three things:
1. Get verified. This means you pay a small fee and have your address and phone number verified. You can also send in a copy of a passport, too. What this does is show everyone you’re a legit human being and not someone trying to scam the system.
2. Add tons of photos and information to your profile. Be detailed, so everyone can get a sense of your personality. Share your favorite movies and books, your past trips and adventures, and anything else you think is interesting! Hosts generally prefer to have guests that they share interests with, so this is the best way to find like-minded CSers.
3. Get references. References are the backbone of Couchsurfing. Without them, you’ll almost never find a host. Find friends or coworkers who can vouch for you so that you have some references before you travel. That will increase the odds of you finding a host tenfold.
You’ve been traveling for a while. What’s your #1 tip for new travelers? If I had to boil down everything I’ve learned into one tip it would be this: slow the heck down. I’ve seen too many people rush around, trying to check countries off their bucket list, only to spend most of their trip on buses and planes and trains. Rushing around really takes away from the experience; you are too hurried to really stop and smell the roses. Sure, you may get some great photos for your Instagram, but there is much more to traveling than that!
By slowing down, you really start to soak up each destination. You allow yourself more time to get off the beaten path and to embrace new opportunities as they arise. If you are rushing around, you won’t be able to change your schedule if you find a place you really like. Or what if you meet some cool people who invite you to tag along on their journey? This wouldn’t be possible if you were committed to a hasty itinerary. It’s also cheaper since you won’t be spending so much time and money on transportation!
So, when it comes to traveling, remember: less is more.

You’re an avid Couchsurfer! Many people are put off by Couchsurfing, since you are essentially staying with a stranger. Why do you like it? Honestly, CS is my favorite way of finding accommodation precisely because you are staying with a stranger. I like it better than hostels because you generally have more privacy and it is quieter than hostels (no snoring backpackers!). You also get to connect with a local who can answer all of your travel questions. This is a priceless resource, making CS worth its weight in gold! On top of that, there are lots of events and meetups available on Couchsurfing, which are great ways to meet other locals and travelers. The fact that it is free is just the icing on the cake.
What tips do you have for those considering Couchsurfing as a means of find accommodation? If you are planning on using Couchsurfing as your primary accommodation resource, you’ll want to do at least these three things:
1. Get verified. This means you pay a small fee and have your address and phone number verified. You can also send in a copy of a passport, too. What this does is show everyone you’re a legit human being and not someone trying to scam the system.
2. Add tons of photos and information to your profile. Be detailed, so everyone can get a sense of your personality. Share your favorite movies and books, your past trips and adventures, and anything else you think is interesting! Hosts generally prefer to have guests that they share interests with, so this is the best way to find like-minded CSers.
3. Get references. References are the backbone of Couchsurfing. Without them, you’ll almost never find a host. Find friends or coworkers who can vouch for you so that you have some references before you travel. That will increase the odds of you finding a host tenfold.
You’ve been traveling for a while. What’s your #1 tip for new travelers? If I had to boil down everything I’ve learned into one tip it would be this: slow the heck down. I’ve seen too many people rush around, trying to check countries off their bucket list, only to spend most of their trip on buses and planes and trains. Rushing around really takes away from the experience; you are too hurried to really stop and smell the roses. Sure, you may get some great photos for your Instagram, but there is much more to traveling than that!
By slowing down, you really start to soak up each destination. You allow yourself more time to get off the beaten path and to embrace new opportunities as they arise. If you are rushing around, you won’t be able to change your schedule if you find a place you really like. Or what if you meet some cool people who invite you to tag along on their journey? This wouldn’t be possible if you were committed to a hasty itinerary. It’s also cheaper since you won’t be spending so much time and money on transportation!
So, when it comes to traveling, remember: less is more.

How to Eat Around the World on a Vegan Diet
As an omnivore, traveling is pretty easy on my stomach. There’s nothing I won’t eat (or at least try once. Like those fried maggots in Thailand) and I don’t have any food allergies to worry about. Outside of an inability to handle spicy food, I’m pretty lucky. I know scores of travelers who’s food allergies and dietary restrictions make traveling to many regions of the world very, very difficult. Luckily, thanks to the web and apps, it’s become a lot easier to convey your dietary needs to shop owners around the world! In today’s article, I sit down with our community manager and fellow blogger, Chris, who has been a vegan for 12 years. He shares with us how he does it, his favorite resources, and his advice for the non-omnivores out there!
Nomadic Matt: Tell us about yourself!
Chris: I live abroad in “sunny” Sweden. I’m vegan, straight-edge, Buddhist, and balding. I’m also a huge nerd (I have a Star Wars tattoo and am a big fan of Dungeons and Dragons).
I grew up in small-town Canada, and after university, I intended to go to law school and get a respectable job, make mad cash, and live the Canadian Dream. I worked two jobs to put myself through school and was able to graduate without any debt. However, somewhere along the way I realized I wasn’t really loving the path I was walking.
Growing up, it was always assumed that if you did well in school, you were sort of obligated to go to university, get a good job, marry, have 2.5 children, etc, etc.
It wasn’t until after my first year of university that I finally had the space and time to really think if I wanted that path. While everything was going well – I was getting good marks, eating well (ish), and going to the gym every day – I didn’t feel challenged by my current situation. There had to be more to life than just jumping through hoops and building a routine. It was then that I gave up my plans of following the career-house-family model and started to look for alternatives ways of living.
How did you get into traveling?
Honestly, I think it all started when I was 10. My dad and I went down to Florida to Disney for my birthday, and — not surprisingly — it was an amazing time. I have lots of fond memories from that trip, though what stands out the most isn’t what you’d think. What started me down my road of travel? A seatbelt.
Some of you will remember the car company Saturn. They used to have a car with an automatic seatbelt. It was a cumbersome contraption, but as a 10-year-old, having just arrived in America for the first time, I thought it was amazing. An automatic seatbelt?! It blew my mind. I was captivated by it. I think that’s where it all started. From then on, I realized that there were so many mysterious and exciting things out there. And I wanted to uncover them all.
Ten years later, I was hacking my way through the jungles of Costa Rica. While there, I almost got killed by a jaguar while hiking in the rain forest. It had stalked my group to the top of a mountain, and when I was more or less alone it started to weave toward me. By the time it got close, my guide showed up and we scared it away (though it did stalk us for another few hundred meters). A week later I was chased by a crocodile while kayaking up a river (talk about bad luck, right!?). That trip rekindled my desire to travel and inspired me to change my priorities. I left university early and moved to Japan to live at a Zen monastery where I could have some time to figure out what I wanted to do in life.
I’ve more or less been traveling since.
You’re vegan. Is it easy to travel as a vegan?
For the most part but it all depends on your destination and your preparation. In North America and Western Europe, most people understand what you mean when you say you’re vegan or vegetarian. Moreover, if they don’t understand, they likely speak enough English that you can clarify. Many cities in Europe are actually amazing vegan hubs (Berlin and Glasgow to name two).
The trouble arises when you visit somewhere with a high language barrier that also has very different cultural food norms. There are many countries in the world where being vegan/vegetarian is something uncommon and perhaps not entirely understood. In countries like this, the difficulty isn’t finding food — basic staples like rice and vegetables and fruits can always be found at markets and stores — but interacting with locals and having to explain your diet, which can come off as some sort of implicit judgment of their own diet. If you don’t do your research, you can get into some awkward situations.
As a vegan, we sometimes miss out on cultural exchanges. Having a local invite you into their home is something many travelers dream of but, as a vegan, this can be tricky as you now have to politely explain that you cannot eat the food they’re offering. It’s a fine, challenging line to walk.
What are some good resources and tools for vegans planning to travel?
Happy Cow is the go-to resource for finding vegan restaurants abroad; it’s like vegan Yelp. You can read reviews and find information about menus, hours, and locations. This is my main resource when I’m searching for good vegan grub abroad.
Another tool I use is Couchsurfing. While there are vegan groups there that you can browse, I just like to message local vegans directly and say that I’m coming to their city and would love to hear their suggestions. People are always happy to share their thoughts, and I’ve come away with some great tips from this. Not only can you ask about restaurants but you can inquire about good grocery stores for vegan options, as eating out every meal will get pricey.
Don’t hesitate to ask the staff of your hostel/hotel or the host of your Airbnb. They are equally valuable resources, too!
Lastly, there are lots of great vegan travel blogs, too. Some of my favorites are Burger Abroad, Justin Plus Lauren, Vegan Food Quest, and of course, my own blog, Lessons Learned Abroad.
Have you had any dietary mishaps while traveling?
Many! Just like every other aspect of traveling, your planning will only take you so far. Sometimes things go off the rails and you need to adapt.
When I was in Mongolia, my partner and I were invited to lunch by a local. We were a bit hesitant, considering our diets (my partner is vegetarian), but didn’t want to be rude. So we accepted. It turns out the family had already eaten — they just wanted to make us a meal. They served up some meat dumplings (there are not many cows in Mongolia, so I think it might have been horse meat), kimchi, and fermented milk green tea. Not exactly my standard vegan meal.
But we adapted.
I pretended to drink the tea while my partner downed her glass. We then covertly swapped cups so they wouldn’t notice, thereby leading them to think we both drank the tea.
I ate all the kimchi and then tried to gesture that I was full — they didn’t speak English, after all, so gestures were all I had. They insisted I eat some dumplings, and not taking no for an answer, I had to bite the bullet. I picked up a few and popped them into my mouth. As soon as they looked away I spat them out and put them into my pocket. They were so hot and greasy, they kind of burned my leg as they dripped through my pocket but I played it cool.
After the meal we all went outside and their dogs started hounding me. I tossed them the scraps, and no one was the wiser.
How do you get over the language barrier and let someone know your dietary needs?
There are three basic ways to do this:
1. Write it down. I write down phrases in my notebook for each country I visit. I’ll write down things like “I do not eat meat” so that I can show it to servers at restaurants. I’ll write it in the local language, and then phonetically in English so I can read it aloud without too much embarrassment. This is my standard method — which probably hints at just how old I am — though I am slowly coming around to this next method.
2. Use Google Translate. If you have Internet access, then Google Translate is a great method. To be safe, I suggest downloading the necessary languages so you have access offline. You can also use the app to take photos of menus and translate them, which has been super helpful on many occasions!
3. The Vegan Passport. This little book has helpful vegan phrases you can use as you travel. There are versions in around 80 different languages, making it a pretty handy resource for an RTW trip. It costs around $10 but could likely save you some trouble on the road.
Where are the best places in the world to travel to as a vegan?
Nowadays you can find vegan restaurants pretty much everywhere. That being said, there are a few places in the world that showcase some impressive offerings. NYC, Berlin, Toronto, and Austin are all great vegan hubs. I’ve had some of the best food of my life in those cities. Additionally, countries with a higher percentage of vegetarians and vegans (like Germany or Sweden) also make it easy to find vegan food products in grocery stores, covering you for all those days you don’t want to eat out (or can’t afford to!).
Are there any places that are really difficult?
Not surprisingly, I found Russia, Norway, and Mongolia to be challenging as a vegan.
