Michele and Fransiscu were young, uninhibited, and in love. The couple met online and quickly fell for each other. Franciscu was new to Milan. He had grown up in the mountains of Sardinia and it took time for him to get used to life in urban Milan, but Michele helped him adjust.
The two went everywhere together. They moved in together after only a few months of dating and shared everything. Michele had their occasional fights but it seemed fairly smooth sailing.
The two would exercise at the gym together, and Michele especially wanted to build more muscle. Fransiscu was less enthusiastic but went to support his partner. Despite his lack of interest in lifting weights, Franciscu was remarkably strong and had a fair amount of solid muscle. Farm work, he explained, but Michele wasn’t so sure. There were aspects of Franciscu’s family that were a little... mysterious. For one thing, there was an outstanding rumor that the people in his Sardinian village still practiced witchcraft. It was a story Michele only came across when reading up on his partners home town.
Franciscu did have some odd habits and rituals. His affinity for herbs and candles went beyond a regular passing interest. He also sported the supposed the “mark of a warlock” on his arm. A myth maybe, but with all the talk online about the town Franciscu was from, Michele kept this in the back of his mind.
Michele also knew not to take any of that too seriously. Michele was beyond thrilled to have such a warm, passionate man in his life, even if he came with some odd rural traditions and a sometimes strange way of speaking.
After a year together the Michele had fallen deeply in love with his boyfriend, and yet he couldn’t resist the attention other men sometimes sent his way. The mood in their relationship went sour after Michele recieved a text from his ex. When Franciscu found out his boyfriend was texting with his ex, he was furious. His full blown hot blooded Mediterranean jealousy came into its own.
Michele relented and agreed not to chat with his ex anymore. Three weeks after the fight, while Michele was showering Franciscu saw another flirty text from Michele’s phone pop up. Enraged, Franciscu barged in and screamed at his boyfriend. “ Its over!” he yelled, and “you’ll regret this!” And stormed out.
The two split. Michele tried to make amends but Franciscu wasn’t having it He moved out that night and Michele’s texts went unanswered.
It was a week later that Michele noticed something odd. His clothes felt a little snug. He had a lot of energy when he went to the gym before, but now he was positively bouncing off the ceiling. Despite his grief over losing his relationship, Michele was hitting the weights harder than ever. Soon he could see changes in the mirror. He was starting to fill out... everywhere. All of a sudden his body was starting to pack on weight. His ass, his legs, his belly were all thickening up. He stepped on the scale, only one week since his breakup and instead of the 75 kgs he expected, he was up to 80kgs. That was 5 kgs in around a week... there was no way that was possible. He hadn’t changed his eating habits...
In the next few days the weight continued to pile on at an alarming rate. Four days after he first noticed the new weight, he had baloooned to 90 kgs. Every morning he could see he looked a little bigger in the bathroom mirror. By the time he would get to the gym the mirrors there would show him a little bigger still.
Michele hit the gym harder to try and compensate for his sudden and extremely rapid weight gain, but it didn’t slow it down. His strength and energy was high at the gym, and he could feel muscle was growing, but his body fat was increasing fast. It was less than two weeks after the breakup and suddenly Michele had developed a belly. His clothes were getting very tight and his pants and shorts were impossible to button.
Each morning then routine became to examine his body for the changes and growth from the night before. Each morning he saw new weight, and more mass added to his frame. As he sat up from his bed Michele now felt a belly in his lap. His thick legs and ass now could barely fit even in his athletic shorts. He approached the mirror in shock at his enlarged reflection. Every day was bringing more changes, more fat, more bulk, more weight. He had to buy new clothes to fit over his new size.
And that next morning, Michele looked himself over again. 100 kgs and growing. He pawed at his increasingly rounded belly and thickening arms. He was blowing up. Day by day, hour by hour. Even his two hour lifting, cardio sessions and restrictive new diet were doing nothing to stop the weight from piling onto his body. It was relentless. Part of was terrified by how big he would get. Another part of him was excited by how he had bulked up into one of the biggest men in his gym.
In less than two weeks he’d gained 25 kgs and had to buy an entirely new wardrobe. He was getting huge. His face was filling out, growing chubbier. He was ashamed to meet with his friends when going out, so he just stayed in. Wouls they even recognize him now that he was growing into such a thick chunky bear?
Michele continued to hit the weights in hopes of building more muscle and combat the fat gains. It worked, his arms and shoulders broadened, his pecs rounded out with thick brawn and a layer of chub, and his legs became huge and powerful. Suddenly Michele was benching 100 kgs with ease, then 120, the. 140... and he grew stronger still. He looked like a rugby player, or even a powerlifter. Anxious and self conscious as he was, he had to admit his newfound strength in the gym and thick powerful arms were bringing him a surprising new confidence. He didn’t hate how wide his shoulders were getting. He filled out his shirts in a way that seemed to emphasize his powerful build.
A few days later when he saw the scale turn to 110 kgs, Michele recieved a text from Franciscu “you said you wanted to get bigger, well I hope you enjoy getting bigger then”
Michele’s mind raced. He looked at his thick build in the mirror. Has Franciscu actually done this to him? Had his rapid weight gain been some kind of curse? There was no way his transformation was natural. Were the rumors about that town true?
Michele didn’t respond. He ignored Franciscu. Maybe he had been watching him. Still, he was getting self conscious of his growing size.
Finally, around the time his weight hit 120 kilos it the gains seemed to slow down. It had been a hell of a transformation over the month. 120 kilos on his 1.75m frame was a lot. He started to get used to aspects of his new bearish body. He felt heavy, thick, chunky, but strong as hell. He could bench 200 kgs without much help! He curled 25 kgs easily.
A few more days passed, now at 123 kgs, Michele braved the world of scruff and posted his profile with his updated picture, weight and profile.
Much to his surprise men hit him up from all over much more than before. Texts like “sexy bear” and “fuck me big boy” started coming in. It turned out that a lot of men online really appreciate his new muscle chub build and he began getting together with men who loved his bearish body.
Michele embrased his new bearish identity and powerlifter like build. He was probably the strongest man in his gym now, and frequently pressed weights that grabbed the attention of other gym goers. Franciscu may have tried to get revenge on him, but it backfired. Michele.
And Michele has no idea to what degee it had backfired until a few weeks later. He recieved a text from someone identified as Franciscu’s sister, who urged him to see Franciscu. Apparently his ex had returned to Sardinia to the village for a time after they broke up. As his sister told him, Franciscu’s spell had rebounded shortly after his trip home and franciscu was now back in Milan and scared to leave his house in his new size.
Lonely, and eager to know if this was true, Michele finally wrote back to Franciscu and asked him if he was ok. Franciscu surprisngly wrote back. Asked Micheles forgiveness and if they could see each other.
Michele paid a visit to Franciscu at the new address. The wooden floors of the hallway creaked against Michele’s 125 kilo bulk. When he walked into the darkened apartment he was shocked to see his former lover.
Franciscu had blimped up enormously! He was more than fat, he sported a new enormous gut. Unlike Michele, who had built muscle by his agressive weightlifting, Franciscu looked like he had just grown rounder and rounder with fat. Instead of going to the gym as he gained, Franciscu had just moped around in self pity. He should have known that spells like that would rebound.
“Wow Michele” Franciscu began “you look... good!”
Michele just stood there in silence at this fat man with Franciscu’s face. Motionless.
“I’m sorry I did this to you Michele” Franciscu said in a sorrowful tone. “You can see I did it to myself. It... bounced back on me. It was wrong. I know it was wrong. I’m so sorry”
There was silence as a Michele looked on stunned at the fat bear his ex boyfriend had become.
“Look at you, such a sexy bear now” Franciscu continued. “Look at those arms. You’re huge! But in a good way! Not like me... I just got fat. Goddamn, I’m so fat” he continued.
“I swear to you I will never do anything like this again. I know it was wrong” Micheles fattened ex continued “can you ever forgive me?”
Despite his hugely overweight new frame, Michele still found himself lost in his former boyfriends eyes. He was still in love with this man, even transformed. Even after the transformation he had put them both through.
“I don’t hate you Franciscu” Michele finally said “I’ve missed you” he continued. “And... I don’t... I don’t hate what I’ve become” he said. Franciscu smiled.
Franciscu was the first to embrace Michele, but Michele didn’t resist. Michele pulled off Franciscu’s tight shirt to get a good look at the fat man Franciscu had become.
Soon the two were together again, only much, much larger. Their huge bodies pressing against each other in a new sensations. The bed creaked in protest at the 300 kilos rolling around on top of it.
The two now huge men had found each other again. Michele woke up the next morning to find his fat bear of a boyfriend laying in bed next to him. He realized with a certain satifaction that he could definitely get used to Franciscu’s new fat body, just as he had already gotten used to his own new beefy musclechub frame.
“You still love me, even like this? “ Fransiscu asked in a self conscious tone.
“I love you like this” Michele replied quickly.

Preference for knives in close quarters combat, and doesn’t enjoy open combat because of the risk it poses to civilians, though he’s more than capable of using guns. Six years ago I discovered, after a routine blood test, that I was a type 2 diabetic. This was a particularly nasty shock because my father had died, aged 74, from complications of diabetes.
But rather than start on medication, which is what my doctor advised, I decided to find something I could do to overcome diabetes without drugs.
I’m not alone in trying to find a solution to this cruel disease, which is at epidemic proportions: one in three Britons now has pre-diabetes (blood sugar levels that are abnormally high but not yet in the diabetic range), while about four million have the condition itself.
And if you do have pre-diabetes (and unless you’ve been tested you won’t know), there’s a 30 per cent chance that within five years you will go on to develop type 2 diabetes — the kind linked to unhealthy diet and lifestyle.
This can lead to a range of serious complications including an increased risk of going blind, needing an amputation or suffering a heart attack, kidney failure or dementia.

Studies by one of Europe’s leading diabetes experts, Professor Roy Taylor of Newcastle University, have shown that a rapid weight-loss diet is just what you need to reduce the belly fat that’s so bad for us. My own plan is backed by studies which show that if it is done properly, a rapid weight-loss diet can be a safe and effective way to cut fat and achieve your goals.
It’s this kind of research that’s the basis of the new liquid diet taken up by the NHS.
I’m thrilled to see the health service is taking the research seriously and I look forward to lots more people reversing their type 2 diabetes.
Not everyone can manage a low-calorie diet like this. But you can still gain many of the benefits (though you may lose weight more slowly) by easing yourself in gently and picking one, two, or three 800-calorie days a week and eating according to sensible, low-carbohydrate diet principles the rest of the time.
In scientific studies, liquid diets are mainly done for convenience — it’s an easy way to keep tabs on what people are consuming. But others have done it just as successfully on solid food.

HOW IT WORKS
The principles of the Blood Sugar Diet are that it is low in starchy carbs, but packed full of disease-fighting vitamins and rich in olive oil, fish, nuts, fruit and vegetables, as well as full-fat yoghurt and eggs.
That’s because large studies have found that not only do people gain multiple health benefits from a Mediterranean -style diet but they find it easier to stick to — unlike a low-fat diet — as it’s simple and enjoyable.
Alongside the diet, I recommend a really simple fitness plan.
Here are some pointers to give you an idea of what is meant by Mediterranean-style eating:
Cut right down on sugar, sugary treats, drinks and desserts.
Minimise or avoid the starchy ‘white stuff’. That means bread, pasta, potatoes, rice.
Switch your starches. Instead of pasta and rice, try quinoa, bulgur (cracked wheat), whole rye, wholegrain barley, wild rice and buckwheat. Legumes, such as lentils and kidney beans, are healthy and filling too.
Avoid most breakfast cereals as these are usually full of sugar.
Full-fat yoghurt is also good. For flavour, add blackberries, strawberries, blueberries, or a sprinkling of nuts.
Start the day with eggs. They can be boiled, poached, scrambled or made into an omelette, and will keep you fuller for longer than cereal or toast. Delicious with smoked salmon and chilli.
Snack on nuts. They are a great source of protein and fibre. Try to avoid salted or sweetened nuts, which can be moreish.
Eat more healthy fats and oils. Along with oily fish (salmon, tuna, mackerel), consume more olive oil. A splash on vegetables improves the absorption of vitamins. Use olive, rapeseed or coconut oil for cooking.
Avoid margarine and use butter instead. Cheese in moderation is fine.
Pick high-quality proteins — oily fish, prawns, chicken, turkey, pork, beef and eggs. Other protein-rich foods include soya, edamame beans, Quorn and hummus. Processed meats, such as bacon and salami should be eaten only a few times a week.
Eat plenty of different-coloured veg. Choose a range from dark, leafy greens to bright-red and yellow peppers. Add sauces and flavouring, such as lemon, butter or olive oil, salt, pepper, garlic, chilli, gravy.
Avoid too many sweet fruits. Berries, apples or pears are fine, but tropical fruits such as mango, pineapple, melon and bananas are full of sugar.
The idea is that — whether by following the recipes shown here or creating your own — you follow these principles, restricting your daily calories to 800.
For some people this will mean having just two meals a day, for others it will be three smaller ones. And while alcohol isn’t banned for life, it’s worth avoiding owing to its high calorie content.
If after eight weeks you still have more weight to lose, or need to bring your blood sugar levels down further, move to the more relaxed 5:2 approach.

If you are on medication, talk to your GP. This is particularly important because he or she should be involved in monitoring and tapering off your medicines. It’s also essential that you discuss the diet with your doctor if any of the following apply:

You are unwell or have a fever.
Don’t follow the diet if you are under 18, your BMI is below 21, or you are recovering from surgery or are generally frail.

● 50g blueberries
● 1 tbsp almonds
● 200ml water
● 2 tbsp Greek yoghurt

Add the teabag to 200ml boiling water. Remove the bag and chill tea in fridge. Put in a blender with other ingredients. Whizz together.

CHICKEN, BUTTER BEAN WALNUT SALAD

● 200g diced chicken breast
● 2 sprigs of rosemary
● 1 clove garlic, finely chopped
● Drizzle olive oil
● 50g green beans, trimmed
● 100g tin butter beans, drained
● 1 red onion, very thinly sliced
● 1 tbsp walnut pieces
For the dressing
● 1 tbsp olive oil
● 1 tbsp wholegrain mustard
● 1 tbsp white wine vinegar
Place chicken, rosemary and garlic in a large bowl with olive oil and toss together. Fry chicken pieces for about 10 minutes. Meanwhile, bring a large pan of water to the boil and add the green beans. Boil for 2 minutes, then add the butter beans and cook for 2 minutes more then drain.
In a large serving bowl, mix together the warm chicken, beans, red onion and walnuts.
To make the dressing, whisk together the oil, mustard and vinegar in a small bowl. Pour over the salad and toss gently to combine.

● 100g crab meat
● Pinch paprika
● 1tsp mayonnaise
● Handful parsley, roughly chopped
● Drizzle olive oil
● 3 broccoli florets
● 1 tbsp tinned sweetcorn

● 1 spring onion, chopped
● Juice half a lemon
● Flour for dusting
● Freshly ground black pepper
In a bowl, mix the crab meat, sweetcorn, paprika, a splash of Worcestershire sauce, mayonnaise, spring onion and parsley. Season and stir in lemon juice.
Place the bowl in the fridge for a few hours. Sprinkle some flour, seasoned with black pepper, on a clean surface and on your hands and shape the crab mixture into two patties. Heat a little oil in a non-stick frying pan. When hot, fry the crabcakes for 3 minutes on each side. Serve with steamed broccoli.

● 1 litre chicken stock

Cook chorizo over medium heat, stirring a bit, for 5 minutes. Drain on paper towels and discard fat. Add the oil to a pan on a medium heat. Add leek and cook, stirring, for 5 minutes. Add the pepper, garlic, chilli and paprika and cook for 1 minute. Add the puree and cook, stirring often, for 2 minutes. Add stock and chickpeas and boil. Simmer, partially cover and cook for 20 minutes. Add spinach and chorizo and heat for 2 minutes.

STIR-FRY CHICKEN WITH LIME AND COCONUT MILK

● 2 skinless chicken pieces
● 1 deseeded green chilli, chopped
● 150ml coconut milk
● 1 tbsp Thai fish sauce
● Large handful coriander, chopped

● 2 tbsp brown rice (adds 70 cals)
Heat oil in wok over a high heat, add chicken and stir-fry for 5 minutes, until golden brown. Add chilli, stir-fry for 1 minute then add coconut milk, fish sauce, coriander and spring onions. Cook for 3 minutes, drizzle with lime juice and serve, with cooked rice if you wish.

● 200g small uncooked beetroot
● 2 tbsp red wine vinegar
● 1 tbsp olive oil

● Zest and juice of ½ orange

● 2 small smoked mackerel fillets
● 20g walnut halves
Heat the oven to 200c. Put the beetroot in a roasting tin with a couple of centimetres of water in the bottom. Cover with foil and roast in the oven for 30 minutes.

● 400g carrot batons
● 1 large cauliflower, in florets
● 1 tbsp olive oil
● 400g green veg to serve
For the gravy
● 1 tbsp cornflour
● 1 chicken stock cube
● ½ tbsp soy sauce
Preheat the oven to 200c. Mash the garlic, butter and herbs together. Put chicken on a roasting tray and cut holes in the skin over breasts and thighs. Push blobs of garlic butter under the skin, and over it. Season. Squeeze lemon juice over the chicken and put the rind inside the cavity. Add the onion to the tray, cut-side down. Roast the chicken, allowing 20 minutes per pound plus 20 minutes extra, basting every 20 minutes. Add the carrots 40 minutes before the end of cooking time.
Place the cauliflower florets on another tray. Season, drizzle with oil and bake for 25 minutes. Cook the green veg as you make gravy. When chicken is cooked, remove it to rest. Discard onion. Stir cornflour, oil and juices in roasting tray, then add 300ml water, stock cube and soy sauce, and stir until gravy has thickened. Carve and serve with the vegetables.

BRUNCH
CHEESY BAKED BEANS
260 cals / Serves 1
● 2 Portobello mushrooms
● ½ tin baked beans
● Worcestershire sauce
● Mozzarella, grated
Season the mushrooms and grill for 2 minutes. Place the beans, sauce and mozzarella in a pan and heat. Combine and serve.
LUNCH
MISO WITH BABY VEG
70 calories / Serves 1
● Packet miso soup
● 2 handfuls baby veg, e.g. sweetcorn or mangetout
Make up the miso soup and add the veg.
DINNER
STEAK WITH PEPPERCORNS
510 cals / Serves 2
● 200ml beef stock
● 100ml red wine
● 2 sirloin steaks (approximately 225g each)
● Pinch steak seasoning
● 1 tsp butter
● 1 tsp olive oil
● 2 tbsp creme fraiche
● 2 tsp mixed peppercorns, crushed
● Green salad leaves
Put stock and wine in a pan, boil for 10 minutes to reduce. Rub steaks with seasoning. Place a frying pan over a high heat with butter and oil and fry steaks for 3 minutes on one side for medium or 2 minutes for rare. Turn and cook for 2 minutes for medium, 1 minute for rare. Pour in the reduced stock, creme fraiche and peppercorns. Stir, and cook for a minute more. Serve with salad.

ALMOND BUTTER WITH GOJI BERRIES
110 cals / Makes 4 portions of almond butter
● 300 skin-on almonds
● 2 tsp mixed seeds and goji berries
● 1 apple, cored and sliced
Preheat oven to 190c. Bake almonds for 10 minutes. Cool, then blend. Serve 2 tbsp of butter with seeds, berries and apple.
SNACK
CONSOMME WITH CELERIAC
40 cals / 1 portion
Make up a consomme base and add two chopped spring onions and 80g of grated celeriac.
LUNCH
TROUT ON LIME AND CORIANDER PEAS
480 cals / Serves 2
● 2 × 120g trout fillets
● 2 limes, 1 sliced, the other juiced
● ½ tsp cumin powder
● 200g frozen peas
● 1 tbsp Greek yoghurt
● Large handful chopped coriander
Preheat oven to 180c. Drizzle trout with olive oil, place lime slices on top, sprinkle with cumin, season and bake for 8 minutes. Cook peas in boiling water for 3 minutes. Drain and place in bowl. Add yoghurt and lime juice and mash. Stir in coriander and season. Serve trout on top of peas.

DINNER
KEDGEREE
390 cals / Serves 2
● 2 eggs
● 180g smoked white fish
● 150ml semi-skimmed milk
● 2 bay leaves
● ½ large cauliflower, grated
● 2 onions, one diced, one sliced
● 2 tbsp coconut oil
● 2 tsp medium curry powder
● 40g cooked peas (optional)
● Squeeze of lemon (to taste)
● Handful of parsley, chopped
Boil eggs for 6-7 minutes, then cool, peel and cut in half. Meanwhile, simmer the fish in milk with bay leaves for 10 minutes. Remove fish to a plate to cool, then remove skin and flake the flesh. Add grated cauliflower to the milk and simmer for 5-7 minutes. Drain the milk into a bowl and put cauliflower aside.
In a frying pan, sweat diced onion in 1 tbsp coconut oil for 5 minutes. Stir in curry powder and cook for another 2-3 minutes, then fold in cauliflower, flaked fish and peas, with infused milk to loosen. Simmer. In a pan, fry sliced onion in the rest of oil until crisp. Add a squeeze of lemon to kedgeree and serve.

I lost more than 6st – it’s the best diet of all
Val Cornall, 52, lost more than 6st in eight months on the 8-Week Blood Sugar Diet.
The school lunchtime supervisor is married to David, 63, a farmer, and the couple have three grown-up children.

THIN SEEDED CRACKERS
50 cals per cracker / Makes 24 small crackers
● 60g spelt flour (or any wholegrain flour)
● 300ml water
● 1 heaped tsp Marmite
● Black pepper, chilli, rosemary or thyme
● 120g seeds: equal amounts golden linseeds (or flax seeds), chia seeds, sunflower seeds and sesame seeds
● ¼ tsp Maldon salt, plus an extra sprinkle
● Olive oil
Preheat the oven to 170c. Mix the flour and 250ml cold water in one bowl and in another, dissolve the Marmite in 50ml hot water and pour it into the flour. Add extra flavouring or herbs, if using.
Now stir in the seeds and the Maldon salt. Leave the dough to bind for 15 minutes, stirring occasionally.
Line a large baking tray with baking paper and brush liberally with oil.
Tip the mixture onto the tray and spread it very thinly with the back of a fork, to about 3mm thick.

Sprinkle over a little extra Maldon salt and bake for 25 minutes. While still warm, slice the biscuit into crackers.
Remove them from the baking paper and turn them over. Return them to the oven for another 25 minutes, until they start to turn golden.
Turn the oven off but leave them inside for a further 15-30 minutes to dry out.
Crackers can be stored in an airtight container for up to a week.
HEALTH MINI PLOUGHMANS
For a super-simple lunch snack, take a matchbox-sized piece of hard cheese, an apple or pear, or a handful of berries, along with a stick of celery and a couple of seeded crackers.
PERFECT HUMMUS
210 cals per portion / Makes 4 portions
● 400g tin chickpeas, drained and rinsed
● 3 tbsp lemon juice
● 6 tbsp extra-virgin olive oil, plus drizzle
● 4 tsp tahini
● 2 garlic cloves, crushed
● 1 tsp ground cumin
● Pinch salt
● 3 tbsp water, as required
● 1 tsp paprika
Blend the chickpeas, lemon juice, olive oil, tahini, garlic, cumin, salt and water in a food processor until you have a creamy puree. Serve with a drizzle of oil and a sprinkling of paprika.
BRAZIL NUT BUTTER
110 cals / Makes 4 portions
● 2–3 garlic cloves
● 180g Brazil nuts, soaked in water for 24 hours, drained and rinsed
● 3 tbsp lemon juice
● 4 tbsp rapeseed oil
● 2 tbsp tahini
● Pinch cayenne pepper
Blend all the ingredients in a food processor until you have a paste. Loosen with water if needed and season. Cover and store in the fridge.

RAITA
270 cals per portion / Makes 4 portions
● ½ cucumber
● 250ml full-fat Greek yoghurt
● ¼ tsp cumin seeds
● 2-3 mint leaves, finely chopped
● Pinch salt
Peel and deseed the cucumber, then grate or finely dice it. Combine it in a bowl with the yoghurt and all the other ingredients and a large pinch of salt.
SMOKED FISH PATE
270 cals / Makes 2 portions
● 1 fillet smoked mackerel/trout
● 3 tbsp full-fat soft cheese
● Squeeze lemon juice
● 1-2 tsp hot horseradish sauce
● ½ cucumber, thickly sliced
Remove the skin and mash the fish in a bowl with cheese and lemon juice. Season with black pepper, and add the horseradish. Serve on slices of cucumber.

All You Need to Know about the Nordic Diet
This week we are doing something a bit different for NewYear's.
We are not actually cooking a recipe.
However, I will be talking to you about the Viking diet.
Nutritional advice is often laid out in simple diagrams, so that people understand it.
This image may be familiar to you.
It is what is oftencalled the “Mediterranean diet” and it is what the Canadian government, as well asthe US government and a number of other governments around the world, have as thebedrock for their nutritional advice.
You will see there is a lot ofcarbohydrates on the bottom level.
Then you have fruits and vegetables; up tomeat; and, then, the extras, like oils and sugars, etc.
There are other pyramids, as well.
This pyramid that is up here now is the “Okinawan diet”.
This is is a modification.
It is just another food pyramid.
You will notice thatthe proportions are different.
In small letters on the right sideyou will notice at the bottom that they suggest these things to be eaten daily, whereas thethings at the very top of the pyramid they are optional or only eaten weekly.
This is an elaboration on the Mediterranean diet, that somenutritionists feel is more healthy.
Then there are our “fad diets” – some infact, may be familiar to you.
This food pyramid is the “Paleo diet”.
There area number of items that are forbidden.
(Those are along the bottom.
)Thoseare things that are high in carbohydrates or sugars or arose in thediets of humanity after the Neolithic Revolution.
One thing about allof these diets – that they have in common – is that nutritionists reallyfocus on the proportions of different kinds of foods that you consume.
Everyone recognizes that people gain weight because of having too manycalories and not enough exercise.
However, there is a lot of other health componentsthat go into the ease of following calorie rules.
Such as, your ownmetabolism.
One of the theories here is that if you pick a populationthat is extremely healthy – like the Mediterranean population or the Okinawanpopulation – their diet can be used as a model.
Another theory is to pick ahealthy population in the past, historically.
That is where you havethe the Paleo diet.
The concept is: if you if your body matches thefood style, then you are eating optimally.
Now this is actually – – All those diet, whether it be the Mediterranean in Okinawan or the Paleodiet; they all have the same basis, this logic.
It is the logic thatancestral food ways are best.
Anthropologists and nutritionists havestudied various different peoples around the world or done research on historiceating habits.
What they found is that foodways of ancient peoples and a lot of ethnographic populations are are optimal for thosepopulations.
Here is a book.
It is an excellent one It is from the 1970s.
It sort of launched this concept.
Originally, there had been a bit of foodresearch already done on the Mediterranean diet, but thenanthropologist started to explore different types of diets from peoplearound the world.
Oh! Incidentally, all the books I am going to be mentioningwill be in the description for this video.
You can purchase them throughthe link provided there.
If you do, some of the proceeds will go to this channel and helpsupport it.
There is also a professor from Ottawa who recently wrote this book: “What our Ancestors Ate and Why It Matters Today”.
He focused on Vietnambecause that is where his ancestors were from.
The concept is that youthink of where your ancestors were from, or parts of your ancestry, and thenyou pick the most basic cuisine and healthiest historic foodway of that region.
This type of eating is actually a way to “decolonize” yourself fromindustrialization and industrialized food.
This could be for anyone.
This book hereexpresses the concept very specifically for First Nations people; in this caseMexica.
The act of changing your diet to an ancestral diet is actually arejection of being colonized.
Peoples around the world have all beencolonize differently.
Even European populations have been colonized.
They have been colonized in the past – religiously – they have been colonized bypower structures and class systems.
One of the ways to get around theproblems of industrial food, etc.
is to ‘decolonize your diet'.
For myself, Ido not have any First Nations ancestry.
However, my mother is from Denmark and my father's people are mainly from the United Kingdom.
So I look to the Nordicfoodways and the foodways of the Germanic peoples when I want to'decolonize my diet' (so to speak).
This book is an excellent one.
It has folkloricrecipes from around the Nordic region; by Magnus Nilsson.
Magnus Nilsson is also to a leader in the ‘New Nordic Cuisine', which is extremelypopular right now in haute cuisine.
It is essentially saying Scandinavian food isis hip and and popular.
This book, that he has got, looks totraditional recipes; because his food, and the new the Scandinavian cuisine, isactually really, really grounded in locality and culture and tradition ofthe place.
This concept of Scandinavian food being healthy has beenelaborated upon by a number of different chefs.
However, there is actually reallygood science behind these assertions.
That is where the book “The Nordic Way” comes in.
It is extremely interesting because it provides the the scientific basis uponwhich we can say that the Nordic way of eating is an extremely healthy way ofeating.
Part of the science of the ‘Nordic Way' diet is what is called a ‘GlycemicIndex'.
This also underlines the “Low GI diet” because, obviously, “GI” stands forGlycemic Index.
This is pretty standard nutritional advice now in the West.
What the Glycemic Gndex is, is a measurement of how fast thecarbohydrates in foods are converted into glucose in the body.
It provides an index number for each food that represents the amount the blood sugar level is raised two hours aftereating.
The index compares to dextrose (which is a hundred) and everyother food item has a glycemic index score.
There re a lot of factors that can gointo a glycemic index number.
Metabolisms, obviously.
The amount offibre that is in the food.
Other factors, as well, such as how acidic or basic thefood is – those types of things.
But what what the basic idea is, is that the lowerthe Glycemic Index score, is the longer you will feel full – the more satiated youwill be from the food; and, therefore, less hungry; less likely to over consumecalories.
The Nordic Way diet is underpinnedby this study here, that I have up on the slide.
It is called – – I think it is calledthe “Die-Oh-Genes” study, but it could be the “Die-Aw-Jenees” study.
I am not sure how it is pronounced.
I have only ever read it.
This study was massive.
It was a massivenutritional stud.
What it did was, it compared the carbohydrates versusprotein in different diets and the ratio of those two types of things.
In the study you had a sample of 938 overweight adults, as wellas the 827 children in those families.
They tested five different ratios ofcarbohydrate to protein.
It even covered nine different countries; sothere are a lot of different cuisines used.
However, they used just the sameratio of carbohydrates to proteins.
What they found in the study was that the verybest ratio of carbohydrates to protein was having a high protein diet andhaving low amounts of low GI carbohydrates.
This proportion helped people slim down.
The average person, over the period of the study (which I think was 18 months),lost around 20 pounds.
They also kept the weight off.
This group – of thehigh amounts of protein and lower amounts of carbohydrates and making sure the carbohydrates were low GI – had the least number of people give up on the diet.
The Nordic Way plate – – Essentially, for each meal is is recommended, in thisnutritional model, that about half of the calories come from vegetables, berriesand fruits.
Sorry.
Not half of the calories! Half of the weight of the mealis vegetables, berries and fruits.
About 25% of the weight of the meal iscarbohydrate, with a low GI.
And, about 25% of the meal are foods rich inprotein.
This is essentially the way that Nordic cuisine is organized whenwhen it is ideally constructed.
This is roughly what a meal looks like.
Itmatches the best ratio from the Diogenes study.
Wehave roughly twice as much carbohydrate in grams versus protein in the dietoverall.
“Herds know the hour of their going homeand turned them again from the grass; but never is found a foolish man who knowsthe measure of his maw.
” “A greedy man, if he be not mindful, eats to his own life'shurt: oft the belly of the fool will bring him to scorn when he seeks thecircle of the wise.
” Those two stanzas were from the “Havamal” which waswritten around the 1300s in Iceland.
They were supposed to express the wisdom of Lord Odin and to talk about what it was like to live in the Viking Age.
I havealso done a lot of reading about the Viking Age and imagined what life waslike then.
I have specifically read on foodways, cuisines, and the ways thatpeople related to food in Scandinavia, but also other Germanic territories, suchas Anglo-Saxon England and on the Continent, as well.
I am going toprovide a few extensions to the modern advice of the Nordic Way diet to talkabout this ancient diet.
We could term this perhaps “The Viking Diet”.
Nowfor the Viking Diet — There were roughly two large meals a day, it seems.
Today, ofcourse, we have three large meals a day.
There were, of course, small snacks inbetween the meals.
There was whole grain that was eaten.
Certain classesof society would have had more access to refined grains, but generally-speakingpeople ate barley, rye, oats and older forms of wheat.
Not the modern varieties of wheat; and that is very important.
We have the phrase “an apple a day keepsthe doctor away”.
The concept and idea that certain types of vegetable foodswere health-giving was common.
Apples, and other tree fruit, were seenas being beneficial.
We have lots of fish in the Viking Diet.
In particular,coldwater fish; fish with a high fat content.
We have in the myths salmonmentioned quite often and at archaeological digs herring was a veryimportant foodstuff.
Berries were also important.
We have a wide number ofberries that could be eaten and, of course, these are very healthy.
They areextremely full of antioxidants, as we know today.
Then we have the category offoods that are almost magical in their life-giving force and properties.
Those are the ‘laukaz'.
This is the Proto-Germanic word for a family of foods that were added in to many many different types of dishes.
Today a lot of Europeancuisine is based on first taking an onion or a member of this family andfrying it in some fat in order to add flavor to a meal.
Raw honey was the basically the only sweetener that could be added to foods.
They had access to sprouting grains and making malt, etc.
But that was notusually concentrated.
Honey was the sweetest flavour.
They wouldhave had raw honey, not pasteurized honey.
Then there is also the concept of a”living: food or drink.
When I speak of “living” what I mean is fermented.
Atthe time fermentation was seen as a spontaneous process – – It is almost like thething could boil itself.
These were very magical and mystical.
As we knowtoday these living foods are full of probiotics and are extremely good foryou.
This isn't exactly related to food itself, but “hygge” – – which is essentiallythe concept of coziness and feeling good – – This is something to strive for inhow you are eating.
Of course, on feast days you have to throw all therules out the window! Because feast days are not days formoderation.
For the rest of the days and regular diet days – – are formoderation.
However, on feast days you throw that all out the window.
Now for things that are scornful.
These are things to try to avoid.
One is eating food afteryour last meal of the of the day.
This could be a separate later dessert course orit could be snacking throughout the evening before bedtime.
You should not let yourself get ravenous before a meal,otherwise you will overfill yourself and not be able to eat slow enough.
Thatmeans having smaller, healthier snacks between meals.
When you eat you shouldnot eat until you have a – – sort of the sense of – – “food coma”.
One should beable to be moderately active after a meal.
Only on feast days should you feeling like you may have a “food coma”.
(This was also identifiedin other parts of the Havamal: You have to be ready for action at all times and points in your life.
) Modern grains are not as good for you as ancient grains.
This is because they have been bred not for flavour and not for nutrition (forthe most part), but they have been bred so that they can fit into the industrialfood system.
By going back to the older styles of grains, which arefoundational for our diets, we can get to healthier food stuffs.
things werefried in the Viking Age, but they were shallow-fried, not deep-fried.
It wasextremely hard to get that much fat in order to do deep-frying, and it was an extremely expensive way of cooking, when you consider other types of cooking methods.
There were no caffeinated beverages during the Viking Age that were known to be drunk in those those regions.
I mentioned fruit earlier.
Juicewas used during the Viking Age.
It was usually fermented into a beverage.
However, plain juice that is unfermented was very uncommon.
Usually, it was theentire fruit that was eaten.
Juice is a way of easily increasing the number ofcalories and telling yourself that you are getting a vegetable serving, whenin fact you are getting almost no fibre with that serving.
It just does not fillyou up, and it adds calories.
Scornful is store-bought alcohol.
When alcohol wasused during the Viking Age – – something that was very common was that ales wouldbe specifically brewed for specific events or time periods.
So when it wasproduced, alcohol was not a commodity, it was integrated into the food system ofthe people.
In order to do that today what you need to do is not go buy store-bought alcohol.
This also allows you to consume unpasteurized alcohol and alcohol that still has living bacteria and yeasts in it.
Something that surprises alot of people is that during the Viking Age drunkenness was looking down upon.
It was, of course, something that happened, just as it happens today.
However, to loseyour wits to alcohol was not considered to be a good thing.
We know now todaythat it is not healthy either.
Refined sugar.
This is something that is almostin every processed food that we have nowadays.
However, refined sugar wassomething that did not exist during the Viking Age.
It becomes easy to to haveall homemade food or good food if you just eliminate refined sugar from yourdiet.
During the Viking Age things that were distilled were notgenerally part of the diet.
There was, of course, salt that was sometimesproduced through distillation.
Hard alcohol though was not commonly distilled.
That was a little bit later in the early Middle Ages when that became popular.
There were no other distilled foodstuffs, such as rose waters or othertypes of chemicals, that were added to food.
Nowadays all of the items that areso-called chemical additives – monosodium glutamate, lots of different chemicaladditives – these things could be considered to be “distilled” or refinedthrough that type of process.
If you eliminate those types of items from yourdiet, as well; to go back to the type of food that would be eaten during theViking Age, you eliminate a lot of unhealthy foods.
In my 30s Ifollowed “The Viking Diet” and did a bit of exercise.
I was able to lose 45pounds.
I was feeling great.
However, fast-forward 10 years.
I have much morestress in my life.
I help run a campground.
I run running Pagan events and Heathenevents.
I also have my job with the federal government on top of that.
Around two years ago I started to get sick with a strange sort of immune-relateddisorder.
It affected my mood.
It also affected myability to do exercise.
I essentially have not done any exercise in the lastyear and a half.
In order to get healthy I am going to have to focus on mydiet.
I am going to be using the Nordic Way and the Viking Way of doing that.
Sohere we are.
This is me.
It is December 30th.
I have had zero NordicWay days, that are officially on record.
I weigh around 251 pounds, that puts meat ‘overweight', close to the obese category of a BMI; a Body MassIndex of 32 point 3.
My blood pressure is 123 over 87 which is “pre- hypertension”.
What I would like to do is to try to get healthier, so that Ican try to feel better, and see if I can kick some of these problems that I seemto be having.
I hope that some of you, during the new year, will be makingchanges in your life to become healthier.

Those are a few notes onhistoric eating and its relationship to nutritional advice, also to the NordicWay of eating, according to modern research, as well asmy interpretation and notes on the “Viking Diet”.

Pound by Todd English Opens 7th Branch in Ayala Malls Vertis North
Burger lovers have another reason to rejoice as Pound by Todd English opens its seventh branch at the Ayala Malls Vertis North. This highly successful gourmet burger restaurant has captured the hearts of foodies and burger aficionados around the city and this is so evident with its rapid expansion. I remember visiting their newly-opened outlet in SM Megamall less than a year ago (Read: Pound By Todd English Opens Second Branch at Mega Fashion Hall) and I can’t believe they are now up to branch number seven in that short period.
Pound by Todd English is a spin-off from the popular Todd English Food Hall which opened at the SM Aura Premier in 2014. Chef Todd English is known for his interpretation of rustic Mediterranean cuisine and Todd English Food Hall is generally considered as the first Celebrity Chef Restaurant in the Philippines. With the success of this venture, FooDee Global Concepts, the local owners of this collaboration, decided to expand the restaurant by spinning off its famous burger creations into their own brand. The rest, as they say, is history. You can find the newest branch of Pound at the open grounds area of Ayala Malls Vertis North where most of the other restaurants are located.
The restaurant comes with its usual black and white checkered floors and marble tables, together with its dim lighting and masculine leather couches that spell luxe sophistication and ambiance. Similar to their other branches, the one at Ayala Vertis North is somewhat small, with a seating capacity of around 30-40 diners both inside the restaurant and at the al fresco dining area. The underwater Posidonia Meadows, a UNESCO World Heritage site, surround the island and provide a magnificent breeding ground for all manner of seafood. These plants are also responsible for keeping the water so pure and crystal clean. That means great seafood was on every menu. There was a dry, local white wine to go with seafood, and the nearby Spanish mainland with its bounty of wines and meats to draw upon. We ate grandly and often!

I’ll highlight a few of our best meals, or just the best courses of each, in no particular order below so you can see the diversity and excellence of the island fare.
A traditional Catalan breakfast
While Spanish breakfast buffets are always extravagant affairs, the best breakfast in Ibiza was over-the-top grand. Besides a full buffet of cereals, pastries, fruits, and the usual selection of self-serve hot dishes, the breakfast at the Ibiza Gran Hotel had an omelet/waffle station, a bread station, a crepe station and a meat station. At each, a smiling courteous chef prepared our selections to order. The quality and diversity of food was amazing!

I’d already eaten the typical Catalan breakfast of jamon & tomatoes on toasted garlic bread (don’t knock it ‘til you’ve tried it) and still I found room for an omelet, a crepe, a slice of one of the 20 varieties of bread and a selection of Spanish hams and sausages. What a hearty way to begin the day. Especially when it is washed down with local Can Rich Blanc de Blanc Cava!
Nobu Restaurant in Ibiza
Nobu is a new 5 star hotel on the beach that demands mention. Nobu is also the world’s most recognized Japanese restaurant. It is eponymously named after the Japanese celebrity chef and restaurateur known for his fusion cuisine blending traditional Japanese dishes with Peruvian. And while there are dozens of them around the world, there are a few signature dishes Nobu is known for in each. The most remarkable one I had in Ibiza was the beef.
Japanese Food in Ibiza
It was a rare medallion of beef in a spicy fruit sauce, the charred lime meant to be squeezed over it to diffuse the heat. Some of my companions thought it was too hot, but I only used the lime to see how the combination worked. It was delicious both ways. The course before it was little rice dishes with spicy salmon topped with cucumbers, wasabi pearls and in sushi. It was most remarkable in that this is where my limited chop stick skills failed me completely. The rice bowls were my downfall. I asked for and used a fork to eat them. Ever since dining at the 3 Michelin star restaurant “Eight” in Macau, famous for its dim sum, I’ve been shameless when asking for a fork.

My favorite lunch was at the Essence Mediterranean Restaurant on the beach at the Playa de Figueretas, just after kayaking and snorkeling offshore in the Posidonia Meadows.

To drink, they had an organic Blanco from the island’s Can Rich winery. The food paired with the wine was decorative and delicious. Because they offered a plate of lamb two ways, roasted and shredded with gravy, I decided to forego the usual fish to enjoy this mainland treat. Get a look at the vegetable presentation!

The lamb was preceded by an heirloom tomato salad with fresh mozzarella, drizzled with balsamic dressing. Such a rich burst of flavors greeted me when I dug into it!
As usual, our meals all ended with the typical lingering conversation and digestives the Spanish call “sobremesa”, and I got to taste my new favorite liquor – the famous “Hierbas Ibicencas” from Ibiza, basically an herbed arujo – here served with a double espresso.

Well my friends, thanks for joining me on this culinary weekend in Ibiza, Spain. There isn’t enough room to show you more – so much more – of what we ate. Cold octopus salad with vegetables, endless cod croquettes and plates of jamon iberico, all served with quantities of cava and wine and arujo, filled our days. There was a “balloon” of mozzarella and other innovative dishes at the wildly inventive Sa Brisa Gastro Bar, where we were seated one evening at an outside table on the newly renovated Vara de Rey. There were simply too many great meals to do them all justice. You’ll have to go and try them for yourself.
