I have thought about this before actually. For context my Tav is a wood elf who is around a hundred years old (I keep going back and forth on if I want her over or under a hundred) I don't imagine any scenario where she'd have met Lae'zel or Minthara, but:
Astarion: I'm imagining two possibilities. My Tav was part of a noble family, so maybe Cazador brought Astarion to a noble gathering to play-act as a family member to help his cover amongst the elite of the city, and the two exchange meaningless pleasantries as two people dragged there by there "families." Otherwise I could see her going down the street one night, Astarion tries to chat her up as a target, but his intentions fly over her head as she cheerfully wishes him a good night. (depending on how old she is when they meet his intentions might not fly over her head, but if they don't then it becomes a matter of "No thanks, have a good night!")
Gale: Maybe? My Tav has alchemical knowledge, and I know Sorcerous Sundries has alchemical stuff in theory but not any that you can purchase in-game, so maybe they could have met there? Or maybe in the streets between Sorcerous Sundries and Bonecloak. They could have a very delightful conversation about whatever book Gale was buying.
Halsin: She spent some time in a druidic order, I could imagine there might have been a time she either visited the Emerald Grove or maybe Halsin visited her order. They may or may not have talked if so.
Jaheira: She might have spotted Jaheira around Baldur's Gate but had been too starstruck to approach her.
Karlach: I actually do have an image in mind of little Karlach, shortly after she became an orphan, running from the guards as they try to arrest her for stealing some food. Meanwhile my Tav is back in Baldur's Gate for personal reasons and just so happens to be shopping when Karlach passes by. She sees a scruffy child being chased and immediately is like OOPS all my apples suddenly spilled on the ground, I need to kneel down (in the guards' way) and pick them up! And I imagine her later seeing if she could find the kid to try and give her some food, but by that time Karlach is long gone.
Minsc: I imagine a young Tav stopping to hang out by the statue of Minsc, remembering the tales she'd heard of him, wishing she could experience adventure too.
Shadowheart: Maybe she could pass by Shadowheart in the streets when the Shar cultists are trying to get people to come to the House of Grief. She might listen politely before moving on (or, if this is after her husband has died, she might seriously consider their services but ultimately decide not to). As children she and her sister were often compared to Selune and Shar respectively as a way of trying to drive wedge between them and criticizer her sister, but my Tav admired her sister a lot so I can imagine her having a small fondness for Shar as a concept because of it (before meeting Shadowheart and seeing how much she's suffered because of Shar, which would make any fondness she had vanish)
Wyll: Like Karlach I have a specific scenario in mind, it might even be in the specific time frame as the Karlach one because it would happen when Wyll was a child. (like maybe under ten) I'm imagining Wyll and his father walking somewhere, and as his father is talking to someone Wyll spots my Tav. He gets a little crush on first sight and immediately wanders away, picking a flower from the ground, and walks up to my Tav. He holds it up and says something like "You're so pretty, like a fairy! Will you marry me?" My Tav tries not to laugh because she doesn't want to hurt his feelings, but she finds the whole thing adorable and charming so she's just like "You are very sweet, but I'm married." And at that moment Duke Ravenguard comes up and scolds Wyll for wandering off before leading him away.
Look I am an utter bitch for the trope of characters almost meeting before the events of BG3. Like a wizard Tav being in the same library as Gale. A criminal Tav operating around the same sketchy warehouses and halfway houses Astarion frequented. Karlach guarding Gortash as they walk through a neighborhood an Urchin Tav lived in. Maybe they made eye contact, maybe they didn’t. Either way fate wasn’t ready for them to collide just yet.
