Things You didn’t know about Peranakan as well as Nyonya Cuisine
Peranakan is Malay meaning “born here” which is the Straits-born population who are of Chinese as well as Malay or Indonesian origin. Male Peranakans are called “Baba” while females, as well as the entire culture of this matriarchal society, are known in the form of “Nyonya”. Peranakan Cuisine is available in various parts of the Malay Archipelago particularly in Malaysia, Indonesia and Singapore.
Peranakan cuisine is often regarded as a blend from Chinese (mainly Hokkien but also Hainanese), Malay, Indian, Thai and Western colonial (Portugese, Dutch and English) influences. Peranakan food buffet was initially conceived as a mixture from Chinese components and culinary techniques , as well as the indigenous and local ingredients utilized by the Malays who were indigenous to the area. The flavors are typically spiced and aromatic, and include ingredients that reflect its hybridized roots. The most well-known ingredients are Malay spices like belacan (dried fermented shrimp paste) and daun limau purut(kaffir lime leaf). Other ingredients typically included in Chinese cuisine include pork as well as Kiam the chye (pickled vegetables). To give a distinct tang often, exotic fruits like mangoes and belimbing (a fruit in similar family to starfruit) can be used to enhance the flavor of the dishes too.
Below are some fascinating information that you might not know about Peranakan Cuisine “Peranakan”, as well as “Nyonya”, can be used interchangeably when discussing the food. When Chinese immigrants got married, it established an entirely unique culture that had different beliefs, customs, and meals. Because women were mostly in charge of cooking meals for the family as well as the entire community, this type of food is referred to in the term “Nyonya”. In both cases, Baba Nyonya and Nyonya are polite and affectionate words for women and men which originate of an Indonesian language.
Peranakan and Nyonya dishes aren’t the same Every time a dish is made, it is subject what the dish is prepared according to favorite ingredients and flavours by the chefs. The most commonly used ingredients for Peranakan food preparation include laksa leaves, coconut milk lemongrass, and tamarind. Due to the numerous components and food items, many recipes are very flavorful and pack a punch.
Different regions affect the styles of cooking used in Peranakan food Based on the geographic influences of the various communities and the regional influences of each, there is a variety of regional versions to Peranakan food. For instance, the cuisines from Penang, the main island in Penang in the northern region of Peninsular Malaysia are influenced by the Thais which result in a higher use of tamarind as well as other sour ingredients such as pineapple. However food items from Singapore or Malacca are more heavily influenced by Indonesian cuisine and often make use of coconut milk. Laksa is a classic dish (spicy noodles cooked in curry soup). Laksa can be made in two ways such as the sour laksa recipe from Penang as well as the laksa lemak based on coconut milk that comes from Singapore as well as Southern Malaysia.
Peranakan food takes a long cooking time
Cooking Peranakan food demands a significant amount of patience and preparation ahead of time. Seafood and meats must be covered in spices for several hours prior to cooking so that they are able to absorb all the spices needed for the cooking process later. It is also important for the spices to prepare ahead since fresh spices can provide more intense flavours. So, the chef will generally make use of a mortar and pestle to crush the ingredients like wild ginger, lemongrass, and turmeric root, which are the main ingredients that give Peranakan food its distinctive and distinctive flavor that is loved by many.
Are you in search of delicious, authentic Peranakan cuisine in Singapore? Royal Cuisine Group is a Halal-certified food catering company that provides a specially-curated Peranakan buffet catering that includes many different dishes that your guests can take a bite of.

9 Menu ideas for a Catered Healthy Buffet in Singapore
Delivering an eye catching and mouth watering buffet is always a delight for a Singapore catering company. What guests love most about buffets is not just the freedom to savour as much good food as possible – they also love the moments of interest, learning and indulgence in the selection of good food. Buffets can serve your entertainment goals in weddings, corporate events and baby full month parties. This can also be delivered with the healthiest combination of appetizers, beverages, snacks and desserts. Here is a guide on some of the Halal menu choices that are healthier which you can get from eatzCatering.
1. Fried Wu Xiang Roll (Ngoh Hiang) with Thai Dipping Sauce
These meat rolls are a popular Chinese dish for the Malaysian & Singaporean Chinese family with a Teochew and Hokkien heritage, and also a staple for the Peranakan community. The crispiness from the bean skin, juiciness from the chicken, crunchiness from the prawns and sweetness from the water chestnuts, result in these meat rolls being packed with bursting flavours. This comes with an utterly delicious Thai dipping sauce. This salty, sweet, and spicy sauce is inspired by the tradition of serving dipping sauces with meals.
2. Chicken Ginseng Soup
This uber-delicious meal is probably one of the most popular “energy” foods in south-east Asia. A warm soup for hot summer days, some specialty restaurants serve nothing but the (chicken ginseng soup), having gained local popularity through their special recipes for the dish, which are often kept as secrets. At eatzCatering, we have our signature recipe which is guaranteed to energize your buffet.
3. Stewed Mushrooms with Broccoli
The serving of stewed mushrooms with broccoli has sterling health credentials. This presentation of Mushrooms with Broccoli can have a very sumptuous look. The colour contrast between the mushrooms and the bright green broccoli coupled with other condiments make this dish look impressive. This makes it well-suited to be served in a buffet.
4. Whole Grains Oriental Fried Rice
The regular fried rice is a tasty treat but is often not considered very healthy. At eatzCatering, we use brown rice instead of white rice in our healthy buffet menu. Brown rice is a whole grain, so it has more fibre, protein, and overall nutrition in comparison to white rice. It is also cooked with healthy oils and topped with veggies to add much more flavour, texture, and colour.
5. Vegetarian Curry Samosa
Our vegetarian-friendly curry samosas wrapped in homemade pastry and deep fried with healthier oils; you may also find additions of some potatoes, onions, peas, etc. These deep-fried delicacies are tasty and presentable. It is always a welcome addition to your buffet table
6. Steamed Chicken Siew Mai
The Chicken Siew Mai is a popular dim sum item. People love those little morsels of ground meat wrapped with wonton skin, and served at dim sum restaurants. They are so good that every bite is always bursting with the freshness and juicy goodness of the filling. It is an easy addition to your buffet for a healthy snack/appetizer compliment.
7. Tuna Nicosia Salad
You think salad is boring? Checkout our elegant version of the classic French salad full of flavour and texture, with seared fresh tuna standing instead of the conventional canned sort. In a serving you can line a large platter with lettuce leaves, mound the salade niçoise in the centre of the platter and place the sliced tuna and some basil leaves on top. The composition of this wholesome side dish can be customised to suit your taste and preferences.
8. Vegetarian Whole Wheat Mee Suah
The mee suah is a very thin variety of salted noodles made from wheat flour. This whole wheat preparation is a much healthier serving of this popular dish. The mee suah is also known as the “Longevity Noodle” and is usually served at birthday dinners. There are many preparations for this dish and our unique recipes are guaranteed to light up the taste buds of a health focused buffet.
9. Australian Celery with Prawns & Cashew Nuts
The delicate, distinctive flavour of celery makes it a favourite when eaten fresh in its natural state or when stuffed with soft cheese and fresh herbs. They are a good source of vitamins and minerals. Celery adds crunch to salads, and it is a quick and easy snack. When served with prawns and cashew nuts, you have a crunchy super food.

Long Chim
Chive Cakes Dark Soy Garlic Chillies (Photo credit: Long Chim)
A much loved Thai restaurant helmed by celebrity chef David Thompson, Long Chim transports you to the streets of Bangkok, with both its interiors and its food. The unpretentious restaurant serves authentic street-style Thai dishes with a host of vegetarian options, in a casual setting.
Besides having vegetarian dishes on their a-la-carte menu, Long Chim also serves a Vegetarian Set Menu (S$69++) which offers common Thai choices like vegetarian spring rolls, green papaya salad, and aromatic vegetable curry; and not-so-common ones like chive cakes, beancurd seaweed asian celery broth, grilled long eggplant; to name a few. Jim Thompson
The Best Phad Thai Noodles I’ve Ever Had
When you’re talking about the best Thai restraunts in Singapore, Jim Thompson’s name has to be right there among the top ones. An excellent Thai restaurant with a dedicated vegetarian following, and definitely one of our favourites! Start your meal at Jim Thompson with the off-beat Siam Sunray (S$26), aptly referred to as “Thailand in a Glass” – think delicate flavours of Thai spices like lemongrass, ginger, kaffir lime and even red chilli.
For soups, its always hard to choose between the Tom Yam or the slightly-sweetish Tom Kha Pak (S$20) with a creamy coconut-galangal base. A meal here must always always have a salad – choose from any of the Pomelo Salad, Green Mango Salad or Green Papaya Salad and you can’t go wrong. From the mains, our favourites include Phad Thai Noodles (S$22), Gaeng Khew (Green curry, S$22) and Gaeng Phed (Red Curry). The Tau-Hu Phad Priew Wan (Stir-fried tofu and vegetables in a sweet and sour sauce, S$20) is also a winner, although on 1 or 2 occasions, it was a wee bit too sweet. Wind up the meal with the mandatory Mango Sticky Rice or go for something different and healthier like Som-Chun (S$12) – a mix of fresh oranges topped with lychees, shredded raw mango, sliced ginger, toasted coconut and roasted peanuts, served in ginger syrup.

Patara
An elegant Thai restaurant that has been around for almost two decades, Patara has made a mark with its dishes. With a separate vegetarian menu, you can choose from a range of appetisers, salads, salads, mains and desserts. Some of the veg dishes to try here include Tom Yum Hed or the Soup Phak (Clear broth with mixed vegetables). Among the appetisers, try the Porpia Jay (assortment of crispy spring rolls), or the Kaffir Corn Fritters. For mains, Patara offers an array of vegetarian gems like the Gai Jay Krapao (sautéed mock chicken with garlic, chilli and crisp basil), Tofu Ob Mor Din Jay (baked tofu and vegetables in a clay pot with ginger and spring onions), Gang Kiew Wan Hed (Green Curry) and Gang Dang Phak (Red Curry).
To wind up your meal, venture beyond Mango Sticky Rice and get adventurous with Durian Sticky Rice, Chocolate Lava with chilli chocolate or Mun Chuem which is caramelised tapioca with coconut milk. Patara’s 3-course Executive Set Lunch (S$20++) has vegetarian options too.

Thanying Restaurant
Exquisite Fruit Carving at Thanying Restaurant (Photo credit: Thanying)
Located in the chic city hotel Amara Singapore, Thanying Restaurant is all about authentic royal Thai food served in a traditionally decorated space. I still remember Thanying as being the first Thai restaurant I went to when we moved to Singapore 12 years ago. I haven’t been in over a year now, but for years we freuented Thanying regularly for vegetarian Thai food.
As a part of the royal thai tradition of pampering guests, all dishes are served in bite sized portions. Thanying is also big on veg fare, with their vegetarian menu offering close to 30 dishes. Among their vegetarian delights, you can taste the Tawd Mun Kaopod (S$18++, Deep-fried sweet corn cakes, served with cucumber and sweet sauce), Keow Wahn Ma-Kua-Yaao (S$20++, Brinjal with thick green curry) and Phad Grapao Tao Hoo (S$20++, Stir-fried beancurd with hot basil leaf, chilli and green peppercorn).

Sabai
A Thai restaurant with awesome food and great views, Sabai Fine Thai on the Bay focuses on the finest ingredients. Sabai Thai offers a grand vegetarian a-la-carte menu as well as a Vegetarian Set Menu (S$70++) and Weekday Set Lunch with veg options (S$31++ for 2-course, S$35++ for 3-course). The veg menus let you choose from an ample selection of appetisers, soups, curries, stir fries, rice, noodles and desserts. The Tawd Mun Kaopote (deep-fried sweet corn cakes, S$16.5), make for a good start. For mains, try the Panang Tao Huu (deep-fried beancurd topped with panang curry), Kao Op Sapparod (fried rice with deep-fried beancurd, pineapple, carrots, curry, S$18.5) or Guay Tiew Gaprao (stir-fried spicy noodles with deep-fried bean curd, chilli, fresh peppercorns and holy basil leaves). The veg menu does seem to have an over-dose of beancurd.

Their most popular vegetarian dishes include the delicious Green Curry with vegetables, Fried Tofu, Phad Thai and Pineapple Rice. Bali Thai
We’re not saying this is the best veg Thai food in town, but Bali Thai has a dedicated vegetarian menu with quite decent vegetarian options. Besides, Bali Thai has multiple locations around town, which makes it one of the more accessible Thai choices when you’re just out and about and Thai cravings set in – I have personally eaten here several times, while walking around malls.
Not just vegetarians, Bali Thai also serves Buddhist Vegetarians, with garlic and onion free options available on request. Bali Thai has a Vegetarian Bento Box (Bento Boxes starting at S$11.80) and a wide variety of vegetarian dishes on offer. Some of our favourite orders here include the vegetarian versions of the Thai Green Curry, Tom Yum soup and the Papaya Salad. My kids, who are too young to try spicy Thai cuisine, love the Thai Black Olive Rice, which is non-spicy and doesn’t have any strong flavours that might not appeal to fussy eaters. They can tone down the spicy-levels on request. I once forgot to request for medium-spicy and I couldn’t manage more than two bites of the fiery Papaya Salad.

Pepper Jade
A dream destination for Thai loving vegetarians and vegans, Pepper Jade’s wide range of vegetarian salads, starters, soups, mains, rice, noodles and desserts whip up quite an appetite. The restaurant is all-vegetarian, they don’t use garlic and onions and they have vegan dishes on the menu too.
Some of the favourites here include Thai Fish Cakes, Tom Yum Soup in Claypot, Phap Thai, Blue Butterfly Pea Truffle Fried Rice and the ever-green Green Curry. Don’t eat eggs? Try the Son-In-Law Eggs with the whites made up of mashed yam and the yolks with mashed pumpkin. The “eggs” are then deep-fried and drizzled with a tangy sauce. Creative!

3 Events That Are Better with Catering
Are you planning to purchase, prepare, cook, and serve the food yourself for an event? Think twice, because all that time and stress and effort could be saved if you hired a Singapore caterer. Sure, you might be able to manage catering a small birthday party or a family gathering; but for large-scale events and even mid-sized ones, catering makes the experience so much better. Find out which events are more delightful when there’s a Singapore catering involved.
Baby Full Month Parties
The last thing a new mother wants to do is cook all the food for her baby’s full month party. Even if relatives could pitch in to help with the food, their services could be better employed helping with cleaning the house, running errands, or snuggling the new little one while the young mother gets some much-needed rest. Fortunately, a full-service Singapore caterer like Eatz Catering has a wonderful selection of Baby Full Month party menus. If you’d like a themed party, set up by the catering staff, you can add that service for an extra fee.
The baby full month menus range in price from a $11.80 per person to $15.80 per guest, so you can select an option within your budget. Each buffet serves 30 people, but you can expand the order if you like. The menus feature tasty dishes like lemongrass Thai fish cakes, chicken curry with potatoes, signature sweet-sour fish, deluxe mixed vegetables with straw mushrooms, and fried rice. Choose the traditional Red Ang Ku Kueh with filling appropriate for a boy or a girl, and enjoy the customary boiled red eggs in a red Chinese basket.
Weddings
Weddings usually involve a large number of guests at a reception venue, so it’s very difficult to try feeding all of them yourself. Instead, select an Eatz Catering wedding package. The choices include lighter tea receptions or full buffets, with a range of different menus and prices so you can select the one that works for your budget.
Clients who book catered wedding packages over $1800 receive some extra benefits. They’ll have a food tasting before the event and they won’t need to pay a transport charge. In addition, Eatz Catering will provide a variety of tables for the buffet, reception line, and beverages, along with themed decorations, buffet centrepieces, and table linens. To see all the extras that come with our wedding catering packages, visit the Eatz website.

Finding a Caterer for Your Last-Minute Holiday Party
It’s been a busy holiday season. Maybe you’ve been planning to host a Christmas gathering or New Year’s party, but the date crept up on you and you just don’t have time to prepare the food. Or perhaps you’ve decided to throw a party at the last minute, and you need professional help to make it a success. While most Singapore catering services prefer plenty of advance notice, there are some who will accept last-minute orders— and Eatz Catering is one of them! Find out what’s involved with placing your order for a holiday event that’s just around the corner.
Our Festive 13-Course Holiday Buffet
The holidays are a time to relax, celebrate, and indulge a bit, so skip the less expensive options and choose a more luxurious, yet still affordable menu. For example, Eatz Catering offers a Christmas and New Year buffet priced at $33.80, or $35.10 per person with GST. It’s the perfect menu set for 30 people, although you can add more guests if you need to at the time of your order.
To begin the meal, you and your guests will enjoy Christmas chicken Caesar salad with cherry tomatoes and a delicious Boston clam chowder with homemade croutons. You can select either Christmas beef stew or Hungarian lamb ragout as well.
The showstopper of the buffet is a big holiday turkey, roasted to perfection and weighing between 4.5kg to 5.4kg. It comes with its own chestnut stuffing and cranberry sauce.
Also on the buffet are delectable dishes like Japanese breaded salmon with Thai Chilli, Italian-Cajun roasted boneless chicken, and slipper lobsters in black pepper sauce. For the sides, guests can take heaping spoonfuls of hearty baked macaroni and cheese or seafood linguini with squid, prawns, and clams.
Any Christmas buffet or New Year’s buffet needs a special dessert to finish the meal! Eatz Catering takes holiday dessert to the next level with an assortment of Christmas cupcakes, featuring chocolate, pandan cheese, and red velvet with cream cheese options. There are also assorted slices of premium cheesecake to enjoy, as well as brownies with Oreo cookie mousse and Christmas chocolate eclairs.
Our Luxurious 16-Course Holiday Buffet
Are you feeling generous? Go slightly more expensive with another magnificent Christmas buffet, priced at $37.80 per person or $40.45 with GST. A big roasted turkey with cranberry sauce and stuffing also appears on this buffet table, along with Boston clam chowder for the soup course. Smoked salmon carpaccio and Armenian mixed green salad with honey mustard dressing are a refreshing start to the meal.
Next comes pre-carved roast sirloin beef with garlic potatoes, and either Mediterranean grilled fish on skewers or Japanese tempura salmon fillets, depending on your preference. Other hot entrees included with this indulgent buffet are golden soft-shell crabs with salted egg sauce, hot and spicy African Peri-peri chicken, baked scallops Mornay, Mediterranean mixed vegetables, and a delicious baked macaroni and cheese dish with ham. The Italian seafood pasta is rich with prawns, squid, and clams— a luxurious holiday treat.
Your guests will love the decadent desserts, like assorted premium cheesecake, premium truffle ganache log cake, and sea salt caramel log cake. Other holiday dessert options include a Christmas mixed fruit cake and brownies with Oreo mousse.
Placing Your Last-Minute Holiday Order
Eatz Catering can usually handle last-minute orders for buffets if given at least 24 hours advance notice. However, during the holidays our schedule is unusually full; so please contact us about your order as soon as possible, and we will let you know if we can make the magic happen. We do reserve the right to reject any order if the resources to fill it are not available; and we accept only cash on delivery for last-minute orders. Check out our catering in Singapore website to find out more about the surcharges and extra fees involved with rush orders.
