Puerto Spices include bay leaves, oregano, basil, and cilantro. It also includes parsley, garlic, culantro, and Caribbean thyme. Sofrito is the primary ingredient in making the food palatable. As a kid, the only way you were gonna get me to eat salted cod was either deep fried in a bacalaito or guisado (stewed low and slow). But nowadays? 🤔 This salad, serenata de bacalao, is one of my favorites! It’s light yet filling and something I like to make when I don’t really feel like doing much cooking. Boiled salted cod, ripe tomatoes, crunchy onions, creamy avocado and eggs, and briny capers all come together to make a super balanced bite. 👏🏽 I like leaving everything nice and chunky and pairing it with guanimes de maíz (a cornmeal tamal) but I absolutely love eating serenata with tostones de pana.
