This one's on my #bakingsteel for me. Making this #PZZA from my fresh #roasted #sanmarzanotomatoes and a roasted #jalapeño a #garlic clove and #tassos #evoo #fresh #basil and #pinksalt to taste. Homemade #pzza testing a bunch of things today. My thick #redsauce added flavor, color and texture.! I added EVOO to the #Biga stage by hand. I could've fermented this for 72-hours but I wanted to see if this 69.1 % hydration recipe made a #thincrust chewy and still create a bubbly #crust on our #bakingsteel at 500°F for 11 minutes or less. Success btw, so hopefully I can cut off another minute even frozen.
