I LIKE BIG BUNDTS AND I CANNOT LIE!

Happy National Bundt Day!

This year I have more to celebrate so I made two Bundts!

My mom moved in with me and my husband after a fire at my grandmother's house [where she'd been living at my grandmother's request]. The arrangement was supposed to have been temporary. That was 12 years ago. We lived as a trio longer than my husband and I lived alone together before that! [We had our 20th wedding anniversary a month ago today.]

She finally bought a house and moved out almost a fortnight ago. [I should say, she started sleeping at her new place a fortnight ago -- most of her stuff is still in our house.] To celebrate both having our home to ourselves again, and Bundt Day, I made up my own recipe this year!

Well, sort of…

I had some mixes that were expiring and decided I couldn't choose between them, so I combined them. The first box I pulled out was Pillsbury Perfectly Pumpkin Premium Cookie Mix. The second was Baker's Corner Apple Cinnamon Quick Bread & Muffin Mix. Neither of those had directions/adjustments for making a Bundt, but I made it work. Added to those dry mixes were [remember, this was for two Bundts]:

6 large eggs

1 cup (2 sticks) of salted butter, melted

1 cup of granulated sugar

2 (15oz) cans of pumpkin purée

1 teaspoon ground cinnamon

1 teaspoon ground gingerbread spice*

4 cups diced apples (tossed in a bit of flour just before mixing**)

*Sorry. I personally hate it when recipes call for spice mixes, because I never have them on hand, and no two mixes are ever the same. But I bought a bunch of jars of gingerbread spice that were marked down and I can only add so much to my porridge.

**I normally toss the fruit with some of the dry cake mix [or flour mixed with spices if I'm making a regular cake] but I forgot to do that this time before I mixed the other ingredients together.

I sprayed two Bundt pans with baking spray and sprinkled cinnamon sugar onto the baking spray. I baked them together at 350F for 60 minutes, though I think they perhaps could have gone a few minutes longer.

(At this point I need to stop apologising for crappy photos. They're crappy because my good camera still isn't fixed, there's very limited daylight where I live this time of year, and I don't have the professional lighting and/or editing software needed to fix them.)

I've named this recipe:

Mixed Up Pumpkin Apple Spice Bundt Cake

It has the typical Pumpkin Spice flavor, but with sweet apple bits, a gingery aftertaste, and a slightly crunchy exterior that I always love on a cake. I'm quite pleased with it. I still have more boxed mixes to use up, so I might just make this again soon.

At the time I'm writing this, my husband and I have already eaten over half of our Bundt. The second cake has been picked up by my mother, perhaps to be shared with her new neighbours.
