Definitely didn’t stress bake myself a cappuccino sponge cake this morning. And it definitely hasn’t taken me 3 espressos and a slice of this to make me feel human again…

Ghosti’s Mummy’s sponge cake recipe..
by popular-ish request...
Ingredients:
6oz margarine (I used Lurpak lighter here in the UK, but it does work with regular old butter too)
4oz of caster sugar. The original called for 6oz, I think, but I like it slightly less sweet, plus the buttercream icing makes up for it anyway
3 large eggs, beaten, and if you’re making this a coffee cake, add two heaped teaspoons of instant coffee to the beaten eggs now, and mix well
6oz self raising flour
1tsp baking powder
1tsp vanilla extract
Method:
Preheat the oven to 170C
Beat together the margarine and sugar until light and fluffy
Add the eggs (with coffee and/or vanilla), and then one tablespoon of flour to start with
Fold in the rest of the flour and dry ingredients. Don’t over-work the mix, but make sure there are no lumps of flour left
Divide equally between two 7inch cake tins, lined with cake tin liners and gently smooth out the mixture to fill the base of the tin
Place into the oven on a low shelf, and bake for about 25mins, or until a skewer or knife comes out clean
For the buttercream:
2oz unsalted butter, softened
4oz sifted icing sugar
If making a coffee sponge, add 2 tsps of instant coffee to 1 tsp of boiling water, and 1tsp of vanilla extract
Carefully mix the softened butter in with the icing sugar and the flavourings, and then you can use an electric beater to mix it more thoroughly once you know you’re not going to create an icing sugar explosion!
Wait till the cake is completely cool before icing

I don’t actually do much baking, but here’s a few anyway:
1. vanilla sponge (from Ghosti’s mummy’s recipe - link to the coffee variant)
2. bread
3. gingerbread biscuits
4. plain (no fruit) scones
5. ... struggling... um... banana bread? Basic, I know, but it’s super tasty.
