My leaves are up here! This beauty is a stunning microgreen that we grow on the farm that doesn’t get enough attention. I read an awesome article about the benifita of this beauty from @urban.cultivator . Here are some snippets from that article: “Amaranth has been consumed as far back as pre Colombian Aztecs, who referred to it as huauhtil. In fact, It has been said to consist of 80% of their diet at some point”. Probably because, “compared to rice, amaranth has almost 30% more protein”. In addition to protein, they are rich in: lysine, thiamine, calcium, niacin, iron, manganese, zinc, potassium, copper, folate and vitamin A & C There you have it guys. Super food with super looks😍.
