hello! i just saw you mention that Penzeys uses a cinnamon that you can use despite being allergic to the other cinnamon species. Can I ask how you figured that out? Some of my family is allergic to cinnamon but I'm not sure if they know there is the possibility they could have some species
Hi! To be honest, I figured it out kind of on accident? I knew I reacted to things with cinnamon in them but only sometimes, and I looked it up and realized in the US there are three different plants that are all called cinnamon* on ingredients lists (if they aren't just listed as "spices" or "natural flavors"). I also happened to have gotten a cinnamon sampler box thing from Penzeys, so I did some test baking and realized I reacted to their Penzeys cinnamon blend but not their ceylon cinnamon. Side note, the reason I suspected there were different things all called cinnamon was because sometimes eating a cinnamon thing while drinking Dr Pepper tastes absolutely terrible, and sometimes it tastes okay. Idk what the difference is but cassia and dr pepper do not mix lol Thought of one more reason I love Penzeys: their spice blends tell you not just that they have cinnamon in them but what kind of cinnamon is in them. It makes them the only place I've found with spice blends that contain cinnamon that I can eat, because even spice places mostly don't list that *to be fair, they are very closely related plants so from what I understand it's pretty unusual to be allergic to some but not all? All of them are cinnamomum plants

I can't have commercially baked goods with cinnamon in them because no one specifies which cinnamon they use#so there's no point in me trying to eat them. and I can bake with the ceylon cinnamon so I'm good with that
