Entree Recipe #149: Pork-Stuffed Cucumber
This one was inspired by Chrissy Teigen鈥檚 Cravings, which we鈥檝e been cooking out of. The recipes are delicious but usually not very foodwater - but this one totally is.
Put on a pot of chicken broth to boil.
Mix ground pork with light soy sauce, minced garlic, salt and black pepper. Cut off cucumber ends, peel and hollow out the insides.聽 Stuff the pork mixture into the cucumbers.
Simmer in the chicken broth for 30 minutes with beech mushrooms and green onion. Top with some more green onion and black pepper and some chili garlic sauce if that鈥檚 your jam.聽 Very soothing and easy soup.
