This is Chicken Sisig. I've always wanted to make one but never had the confidence to do so. After watching a few YouTube videos, and after securing the ingredients needed, I decided it was time to give it a shot. Here's what you'll need: - 3 pieces of chicken breast fillet, skin out - 200 grams of chicken liver, chopped - 1 large white onion, chopped - 1 piece of green chili (siling mahaba) - 2 tablespoons of vegetable oil - 1/4 cup soy sauce - 1/4 cup mayonnaise - 2 teaspoons of garlic powder - salt and pepper to taste Here's how to make it: Marinate your chicken breast with salt, pepper, paprika. Let sit for about 30mins - 1hour to allow the flavors to penetrate. Grill the chicken 5-7 minutes per side or until cooked (I used a stove top griller.) Chop into really small pieces. Set aside. In a frying pan, sauté your finely chopped onions in the vegetable oil. Once translucent, add in the chopped liver. When liver is fully cooked, about 5 mins, mix in cooked chicken. Add in chilis, garlic powder, soy sauce and cook for 3-5mins more. Add mayonnaise and completely coat the whole mixture. Remove from heat and serve. If you have a sizzling plate, now is the time to put it on top of your stove top to heat. Put in about a tablespoon of butter and melt completely. Pour your chicken sisig in the sizzling plate, and garnish with chilis. You can also crack an egg and pour over sizzling sisig. Serve and devour! Notes: I decided to also grill the chicken skin until crispy. Then, I chopped it and drizzled it on op of the sisig. It's perfect as garnish and I love that it had a crunchy texture which complimented the smoothness of the liver. :) #IKE #IKEats #food #foodtrip #foodtripmanila #foodpornmanila #foodph #foodiemanila #chickensisig #recipe

After a long day's work, I've decided to reward myself with some steak and eggs. This is half a slab of Rib Eye that we got from Monterey. It's so tender and juicy, this is by far my second favorite cut for my local steak (after tenderloin of course). I just seasoned this with salt, pepper, a sprig of thyme, some garlic and Worcester shire sauce and fried in butter. Homemade Buffalo Chicken Tenders. Here's how I made it: Cut 2 pieces chicken breast fillets (skin removed) into strips. Marinate with salt and pepper for about 20mins. Prepare wet and dry coating. For the wet coating, just beat 1 egg and season with salt and pepper. For the dry coating, mix about 3 tablespoons flour, 1 teaspoon cumin, 1 teaspoon paprika, 1 teaspoon garlic powder, salt and pepper. In a frying pan, heat oil (about an inch high). Coat the strips with egg mixture, then with the flour mixture. Fry till golden brown. In a saucepan, heat 2 tablespoons butter and 2 tablespoons Sriracha (or any hot sauce of your choice), let simmer then mix in the golden brown chicken strips. Turn off heat when chicken tenders are fully coated. Best served with ranch or bleu cheese dressing. Feel like munching on some potato chips? Make some kamote (sweet potato) chips instead! No mandolin? No problem! Use a grater instead. :) Preheat oven to 180 degrees Celsius. Grate about 2 orange sweet potatoes (you can actually use different kinds of root crops if you wish) and place in a container. Drizzle about a tablespoon of olive oil, basil, salt and pepper. Cover the container and shake until everything is incorporated and the potatoes are well coated. Line them on an oiled baking sheet (make sure you don't overlap each potato or they won't cook evenly). Bake for about 12-15 minutes or until you see the chips to start curling. Rest for about 10minutes, then transfer to an airtight container. Ivee has been down with #Gout since Wednesday so we were in a strict fruit and vegetable diet the past few days. Today, I decided to make him a little treat. I made homemade wheat pasta (I will post a separate entry for that soon 😉) and cooked Carbonara. Now this one is very close to the legit Italian Carbonara (I omitted the bacon or Panchetta). I did not use any milk or cream, just egg. Here's how I did it: INGREDIENTS: - about 200grams of fresh wheat pasta (you may use store bought pasta) - half a head of garlic (about 4-5 cloves, but it really depends on you), minced - 2 tablespoons Extra Virgin Olive Oil - a dash of dried basil - 1/4 cup grated parmesan cheese - 1 large egg, slightly beated - salt and pepper to taste - chili flakes (optional) PROCEDURE: Cook pasta until al dente. Set aside. Sauté garlic on EVOO. Mix in pasta, basil, cheese. Once fully incorporated, turn off heat and immediately mix in egg until it becomes silky in texture. Season with salt, pepper and chili flakes. Drizzle with more parmesan if you wish.
