With gumbo you can put anything you like into the pot, however, there are some rules. Today my raw ingredients are: parsley, celery, garlic, okra, smoked (chicken, turkey ,and beef) sausages, crablegs, scallops, shrimp, wild caught mahi and some chicken. You can season to your liking but you MUST have PURE GROUND GUMBO FILE or it will not be gumbo. Once all of your ingredients are ready to go, add them to a large pot, set the heat to low and enjoy the aroma. I like to slowly add liquid to my gumbo so that the flavors blend as the proteins break down. Remember to NEVER BURN YOUR ROUX!!! I'll be making a pot on the stove and one in the crock pot.
