Fluke In Banana Leaf Caught this bad boy on a solo trip out in the bay. I knew I had to try this recipe after first eating it at a @brooklynfishingclub meeting @crystaleek hosted and cooked her catch for. Thanks for walking me through it Kim. I hope it met up with your standards. Her recipe is below: 1 whole fluke - scaled and gutted 2 tbs chinese five spice 3 lemon grass bulbs - julianed 2 tbs sweet chile sauce 4 tbs fish sauce 4 tbs olive oil Salt & Pepper 1 package banan leaf Carefully rinse then layout banana leaves on a large cookie tray, overlapping each about halfway, until you have a mat large enough to wrap around the fluke. Make several shallow cuts on each side of fish. Rub fish with 5 spice, salt and pepper. Lay fish, dark side down, in center of banana leaves. Whisk oil, fish sauce and sweet chile sauce. Coat white side with half of mixture. Flip fish over and coat dark side with remaining mixture. Leave white side down. Carefully fold over leaves by folding over head and tail first then the sides. Secure loosely with wet twine. Pre-Heat grill for 15 min. Place wrapped fish on center of grill. Lower heat to med, close lid. Let cook approx 10 min. Carefully rotate wrapped fish 180 deg. Let cook an additional 10 min. Check temperature in thickest part of fish. When it reads 135, remove from grill place on platter and let rest 5 min. Cut twine and peel back leaves.
