Serena does let her pokemon roam freely, and they are free to come and go as they please. Since moving into the Anistar house, all of her pokemon have a lot more freedom than when she lived in her apartment. Furthermore, after the Flare HQ incident and her near death experience, her team have learned to break out of their Luxury balls. At the time, Olympe was the only one to know how to do so. If her pokemon want to roam, they'll simply break out of their ball and do so.
This is kind of tough!! I want to say it's a tie between Merlin and Joyeuse. Merlin is very strong, and is her starter, while Joyeuse is just... a powerhouse that stormed through the Elite Four and Champion on her own. Both are feared pokemon on her team for their own reasons; Merlin is very, very smart and has expert control over his flames, able to manipulate them well. And Joyeuse is so offensively strong that she can take down other pokemon before they know what hit them. It just depends!
I feel like Serena has always sort of... liked Sylveon as pokemon a lot. They're such cute and loving pokemon, and them being able to keep people calm was always touching and appealing to her. She does own one too! It was totally by chance when she found Rose as an Eevee, alone and starving. She ultimately left the choice of Rose's evolution up to her, but she was very set on becoming a Sylveon! It just worked out that way, and Rose has been a great help to her.
Funny enough, she did have some troubles with Merlin. He was a very cocky and hotheaded Fennekin, always preferring to do things his own way. It was almost, in a way, like he didn't really believe in her, or believe that she cared for him. He had some insecurities that clouded his vision. It wasn't until he fell into a river during the dead of winter, and Serena immediately jumping in after him to save him with no hesitation that he changed his behavior.
