This chart is wrong. Chickens emit virtually no CO2 throughout their life cycle.
Also, I’d like to know how many bricks of tofu you’d have to eat to equal:
1.) The level of bioavailable iron in steak
2.) The amount of quality protein in a steak.
3.) The essential enzymes in steak.
Just “having protein” isn’t enough. If that shit ain’t as readily metabolized and as easily converted into muscle or soft tissue as cow meat, then you only get a fraction of the credit. And a fucking block of tofu does not have either as much protein as steak nor the quality of protein.
When you account for how much tofu you’d have to eat to equate to the benefits of beef, suddenly it makes more sense to feed that tofu to the cows and chickens and pigs, whom can digest it better.
Now compare methane produced by rice and tofu industries in the waste to cattle farms that have adopted feeding algae to cows.
