Bob and I are suckers for named raisins. There is so much variety out there and so many types of pairing you can do with different chocolates. I’ve just made 100% bars with green Khorag raisins from Uzbekistan. Hey have such a lovely sparkling flavour along with caramel notes. Added to our 100% dark chocolate, Costa Esmeraldas, Ecuador. They give the chocolate a wonderful lift without using any sugar. SELEUSS, SEATTLE, AUGUST 14, 2019:  Introducing our new STOUT-100% Dark Chocolate Truffle made with a 100% Ecuadorian Arriba Nacional cacao and Stout style beer malts.
Ganache: This Uber Dark Chocolate is made with our XOCO™ 100% Ecuadorian Arriba Nacional Chocolate,  organic cream and our proprietary blend of Stout style dark beer malts, for an unique dark chocolate ganache with tastes of sweet malt, caramel, hints of roasted marshmallow, raisin, and graham cracker. Sometimes, further infused with specialty Stout style beer hops as indicated below.
Truffle: The Stout 100% chocolate ganache is typically encased in a 52% semisweet chocolate first and then enrobed in our Moretta™ 75%+ dark chocolate or XOCO™ 100%. Topped with Raw Organic Ecuadorian Arriba Nacional Nibs or dusted with Dutched Cocoa Powder. If hopped, then dusted with grounded hop flowers or as indicated below.
Pairing: Your favorite Stout beers, Port Wines, Scotches, or Coffees.
Malts & Hops: We use only the best specialty brewer’s malts and hops from around the world; from our own state of Washington, to Wisconsin, and across the Atlantic to the United Kingdom, Belgium, and Germany. Lower quality corn and tapioca syrups are never used in our chocolates!
