Lean Turkey Chili
This is an absolutely amazing dish. I love it most when I am super busy. The recipe yields 10 servings and it keeps well in the fridge. You can even freeze is for later use also !!
What you will need:
2 cans red kidney beans
1 can pinto beans
1 can black beans
1 can canellini beans
2 cans crushed tomatoes
1 can diced tomatoes
2 chopped zucchini
1 chopped red onion
1 chopped yellow pepper
1 chopped red pepper
2 cups chopped celery
2 cups mushrooms
1 can corn
Minced garlic
Ground cumin
Ground chili powder
How to make it:
In a large pan over medium heat, cook all vegetables until slightly soft.
In a separate large pan, cook ground turkey until browned.
Meanwhile, in a large croc pot add tomatoes, corn, beans and spices. ( I did not give measurements because I use them to taste; I would say about 3 tbs garlic, 2 tbs cumin, and 8-10 tbs of chili powder (depending on your preference to spiciness)
Once the vegetables and turkey are done, add into the crock pot.
Let this mixture simmer in croc pot on "high" for about 5-6 hours. Stir occasionally.
Serve with low fat mozzarella or a dallop of fat free sour cream.
ENJOY !
TIP: If you want to lessen the calories by omitting the turkey for a vegetarian style chili it tastes great too !!!!
