Asparagus Chick Pea soup. Knob of #kerrygoldbutter 1 Stick of chopped celery, 1 small white onion 1 chopped carrot. Fry off until soft. Throw in #asparagus and chicken stock. New lunch obsession . Baked potatoes . Medium ones take about an hour in the oven , maybe less. I stopped eating them years ago as I used to use the microwave and mostly they were horrible. I recently copped on that i could set the oven to come on and set a timer. So today I've prepped some small bakers, by rubbing chilli oil and salt into the skin after cutting a cross in the top. Probably top with baked beans or a poached egg and avocado with some chilli flakes.or maybe just melt some cheese my oven is set at 180 for an hour . Popped down to @ripassobray for breakfast, crunchy , ricotta, orange chocolate , cannoli. Dear God , yummy... picked up some bits guanciale (smoked pig cheek) deliciously smoky , gnocchi , rocket and spinach came from the garden. Sweet strawberry baby tomatoes, from @supervalu_bray and delicious creamy gorgonzola. Started out as red lentil dahl ended as #lentil and #chickensoup . Onion , garam masala, smoked paprika , cumin. Add some celery and carrot then lentils and chicken stock. Cooked away for a bit then found my sweet chilli chicken leftovers in the fridge, discarded the skin, shredded and added. Oh ! Wow! that was a good soup. Lovely and grainy with a deep taste Then I chopped onions tomatoes and garlic , was in a rush , so found my @lecreuset dish and threw on top of my lamb shanks ,which I had no time to brown . Added tin of tomatoes and last glass of red from past night and left over olives . Put in oven at 150 for 4 hours . Served with mash and the house smelled like Heaven all day. Didn't know what to eat and all I had was cauliflower and a few spinach bitea I bought in @supervalu_irl ,so this happened @strongroots #spinach bites straight from freezer #cauliflower dipped in egg and flour and all fried in homemade garlic and chilli oil until crispy. Served with warm pitta bread, sweet chilli sauce and a fresh garden mix of lettuce and spinach from my @vegipod cucumber. Also a delicious bowl of homemade cauliflower soup.
