Easy recipes from Frasca, Colorado’s James Beard nominee for outstanding restaurant
Owners of small food businesses are struggling to find many reasons to be thankful — let alone to celebrate — during the coronavirus shutdown. But Boulder’s Frasca Food and Wine can point to a bright spot already this spring, and there is another coming up this summer.
Earlier this month, Frasca was nominated for a James Beard Foundation Award for Outstanding Restaurant. And in July, Frasca’s first cookbook, “Friuli Food and Wine,” will debut on store bookshelves and via online retailers. The book’s release was postponed from last month.
Co-owner Bobby Stuckey knows that Frasca is fortunate.
“We’re going to reopen all four of our restaurants” (Frasca and Pizzeria Locale in Boulder, and Tavernetta and Sunday Vinyl in Denver), Stuckey told The Denver Post last week. “We are very lucky that we’re going to weather this storm,” he said, during a conversation that centered mostly on Italy, wine and recipes.
“I don’t want to be dramatic,” he said, “but if we don’t get a restaurant stabilization fund, there’s going to be one-third fewer restaurants in the U.S., and they’re not going to get replaced by someone else. It’s just a mere numbers deal.”
The timing of a national award nomination plus a cookbook publication at a time when many other restaurants won’t reopen is bittersweet, to say the least.
RELATED: The near future of Colorado’s restaurants could depend on our biggest asset: the outdoors
When Frasca opened in 2004, Stuckey writes in the book, it took a leap of faith just to move “to the culinary middle-of-nowhere in Colorado to open a restaurant where the food and wine would be inspired by the relative middle-of-nowhere Friuli Venezia Giulia, Italy.”
The region lies to the northeast of Venice and shares a border with Slovenia and Austria, in addition to Italy. There, the Carnic Alps spill into the Adriatic Sea, and because of this unique location and landscape, the wine is so diverse and compelling, Stuckey says, and the food so surprising and yet still unknown to Americans, that they had to just “go straight into it.”
“I was so nervous because, when you think about it, when we were working on this (business) 17 years ago, there were no micro-regional restaurants out there, really,” he said. “To be, like, fully into Friuli was just wonky.”
Seventeen years later, Friuli is still largely unknown to Americans. “It is so non-touristy, it could go up 100% and you wouldn’t know,” Stuckey says. On a relatively recent visit during the peak summer travel season, he said “the only other Americans we saw were Kelly (Jeun) and Eduardo (Valle Lobo), our chefs now.”
Now, with Jeun and Valle Lobo running the kitchen (they’re currently offering weekly take-home meal kits), Frasca maintains its micro-regional focus. The cookbook features recipes from them as well as co-owner and founding chef Lachlan Mackinnon-Patterson, as well as the team’s befriended chefs in Italy and other cooks who have impacted Frasca’s kitchen along the way.
And it reads equal parts food, wine and travel. So its authors hope to transport you during this time — to a restaurant dining room, a less-touristed corner of Italy or, just generally, temporarily out of our current situation.
Here are a few recipes from the new cookbook, courtesy Frasca and Ten Speed Press.

Frittata with Mountain Herbs, from “Friuli Food and Wine,” (Ten Speed Press, July 2020). (William Hereford, provided by Ten Speed Press)
This recipe makes a great simple lunch or afternoon snack in Friuli. It’s so popular, in fact, that you’ll be able to pick up a packaged “frittata herb mix” at most any seller of fresh produce. Restaurants buy it, and you will even see the packets of dried herbs in farmers markets. The formula is simple: two eggs per person, whipped with a fork, and lots of minced fresh herbs.
Ingredients
12 eggs (two per person)
1 tablespoon minced fresh mint
1 tablespoon minced fresh flat-leaf parsley
1 tablespoon minced fresh chervil
1 tablespoon minced fresh lemon balm
3 tablespoons unsalted butter
1 tablespoon olive oil
Directions
Preheat oven to 350 degrees. In a large bowl, whisk the eggs with a fork until blended. Stir in the mint, parsley, chervil and lemon balm.
In a large, ovenproof nonstick pan over medium heat, warm the butter and olive oil. Pour in the egg-herb mixture and let the bottom set for 30 seconds. Then, with a nonstick spatula, spread the top of the mixture around until most of the egg feels set but the top is still wet, 2 to 3 minutes.
Turn out the frittata onto a plate, then slide it back into the pan, cooked-side up. Finish in the oven until the bottom of the frittata is completely set, 3 to 5 minutes. Serve immediately.

or Spaghetti con Funghi al Cartoccio; makes 4 to 6 servings
Spaghetti con Funghi al Cartoccio, from “Friuli Food and Wine” (Ten Speed Press, July 2020). (William Hereford, provided by Ten Speed Press)
Imagine a dish that arrives in a little parchment-wrapped package (known as a cartoccio, or cartouche) like a baked gift from the spaghetti gods. You open it up, and with the warm steam comes the scent of olive oil, parsley, white wine and wild mushrooms. Bam! That’s this dish right here. It’s very simple to make and is also a great way to get children to eat fungi.
Ingredients
1 pound dry spaghetti
1/4 cup olive oil
2 tablespoons unsalted butter
1 pound mixed fresh wild mushrooms, such as black trumpets or chanterelles, trimmed
2 small shallots, minced
fine sea salt
1/2 cup dry white wine
1 cup vegetable stock
1/4 cup minced fresh flat-leaf parsley
2 tablespoons extra-virgin olive oil
Directions
Preheat the oven to 400 degrees. Bring a large pot of salted water to a boil. Add the spaghetti and cook for 2 minutes short of the timing for al dente on the package.
While the pasta is cooking, in a large sauté pan over high heat, warm the olive oil and butter. Add the mushrooms and sauté until wilted, about 5 minutes. Push the mushrooms to the side of the pan, turn the heat to medium, add the shallots and sauté until translucent, about 3 minutes, seasoning with salt as you go. Stir the mushrooms into the shallots, add the wine and cook until it is almost completely absorbed, about 3 minutes. Pour in the vegetable stock, turn the heat to high, bring to a boil, then turn the heat to low and simmer until the cooking juices reduce slightly, about 5 minutes.
Drain the undercooked pasta and stir it into the sauce, mix in the parsley, and then stir in the extra-virgin olive oil.
On a work surface, lay out one parchment square per person. Place one portion of pasta onto the center of each square. Moisten the edges of the parchment with water and fold up into a triangle shape, crimping along the edges to make a seal. Gently lift and transfer to a baking sheet. Repeat with the remaining squares.
Bake until the parchments puff up (from the steam inside), about 5 minutes. Use a large flat spatula to transfer each parcel to a plate. Serve immediately, letting your dinner guests open their own cartoccio!
New Zoom or IRL party trick: Chocolate Salami
Confectioners’ sugar gives it that aged meat look; makes two 7- to 8-inch “salami”
A Chocolate Salami, from “Friuli Food and Wine” (Ten Speed Press, July  2020).  (William Hereford, provided by Ten Speed Press)
This dish was created by Frasca pastry chef Alberto Hernandez. It also happens to be one of the simplest dishes in the book. It’s a great end-of-meal nibble for a large group, or it could be the surprise hero at your next party. The quality of the chocolate is very important because the salami is all chocolate; look for chocolate wafers made by Callebaut or Valhrona. Make sure your hands are clean before rolling the logs in the powdered sugar, and let the salami come to room temperature before serving.
Note: Amaro Nonino Quintessentia is a digestive herbal liqueur made by the Nonino family in Friuli; they infuse their grappa with a blend of herbs, spices  and roots, including gentian, saffron, licorice, rhubarb, sweet and bitter orange, tamarind, quassia bark, chinchona bark and galangal. You’ll find the amaro in all good liquor stores. Sicilian pistachios are smaller and sweeter than the ones that come from Iran, California, or Turkey. They are grown on the foothills of Mount Etna and are also known as Bronte pistachios. They can be purchased online.
Lachlan Mackinnon-Patterson, left, and Bobby Stuckey, in a photo from “Friuli Food and Wine” (Ten Speed Press, July 2020). (William Hereford, provided by Ten Speed Press)
Ingredients
1/4 cup hazelnuts
1/4 cup shelled Sicilian pistachios
1 cup bittersweet chocolate fèves (discs or wafers)
6 tablespoons unsalted butter, at room temperature
1/4 cup granulated sugar
1 egg
2 tablespoons Amaro Nonino
1/2 cup biscotti crumbs
finely grated zest of 1/2 orange
confectioners’ sugar for coating
Directions
Preheat the oven to 350 degrees. Spread the hazelnuts and pistachios, taking care not to mix them together, on a baking sheet and toast until fragrant, 8 to 9 minutes. Skin the hazelnuts by putting them between two sheets of paper towel or a clean kitchen towel and rubbing vigorously. Pick out the hazelnuts from the dark flakes (it’s OK if some patches of dark skin remain).
In a heatproof bowl over a saucepan of simmering water (make sure the bottom of the bowl doesn’t touch the water), regularly stir the chocolate until melted, about 2 minutes. Alternatively, microwave the chocolate in short 10- to 15-second bursts, stirring well after every burst, until completely melted. Set the melted chocolate aside.
In the bowl of a stand mixer fitted with the paddle attachment, on medium speed, cream the butter and granulated sugar until combined, about 2 minutes. Add the egg and continue to mix until incorporated. Then add the melted chocolate and amaro and mix well. Stop the mixer and, using a spatula, manually fold in the biscotti crumbs, orange zest, hazelnuts and pistachios.
Lay out two large squares of plastic wrap on a work surface. Divide the chocolate mixture into two equal parts. Place one half of the chocolate mixture in the middle of each square and, using a spatula, spread into an approximation of a log shape, 4 to 5 inches long. Pick up the plastic wrap at either end and use it and your hands to tighten and smooth the log into a nice even shape — the log should be about 1 1/2 inches in diameter and 7 to 8 inches long. Twist each end, as you would a candy wrapper, to tighten. Repeat with the second half of the chocolate mixture. Transfer both logs to a small plate or tray and refrigerate for at least 2 hours or up to overnight.
Pour confectioners’ sugar onto a large plate. Unwrap the chocolate logs and roll in the confectioners’ sugar to mimic the white edible mold on an aged salami. Shake off any excess sugar. If you’re feeling fancy, you can also tie up the salami in twine.
The salami will keep in an airtight container, at room temperature, for up to 1 week. Make sure you let them come to room temperature before slicing and serving.

You'll Never Regret the Pursuit of More by Rebecca Bender, In Pursuit of Love As I sat in my tiny apartment, tears ran down my hopeless cheeks. My freshly washed, yard sale pot and pan sat upside down draining on my twenty-five cent Goodwill dish rag. I had just tucked my eight-year-old daughter into bed, plopped like a deflated balloon onto a kitchen chair and cried. Is this all you have God? Is this the hope filled promise that I hear others talk about? I don’t want this either. I was starting my life over with nothing but a promise, lamenting to the Lord, when a piercing thought shattered my loathing. “If You give Me the same amount of time that you gave the enemy, I will never be outdone.” In that moment, I knew God had more, but His promise was not going to come easy. The process would take intentional and deliberate time. I decided that I would dig my heels in, come what may, and fight for a new life, a new me. What if a pursuit could change your destiny?  What if one small step every day toward a new direction, a new habit, a new resolve could literally be the shift you need to redirect your course? I know all about trying my best to create new habits and behaviors. For nearly six years I was sold into an underground world of human trafficking before God saved me. I was branded, brainwashed and abused. And yet, in the midst of my sin and in the depths of my despair, God saw fit to pursue me. He took me out of the muck and the mire and set my feet on solid ground, steadied me as I walked along (Psalm 40 paraphrase). Steadied me as I walked along. That means it wasn’t instant, it wasn’t immediate, it wasn’t fast, and I still have to work at it daily. Changing character and deeply engrained habits from sin and modeled unhealthy behaviors takes time and effort. It takes looking that thing in the eye that you want to fix and going after it, wrangling it down even. Another word for pursuit is HUNT. It speaks of chasing it down — to run it down, to take up, to track, to seek, to stalk, to follow after. It’s a word that speaks of fierce hostility, tenacity and force to overtake, to slay. I heard someone once say, “you can never go too deep with God.” We cannot get to a place in our walk where we think we’ve mined all we can out of the Word of God. He wants us to pursue Him and His Word, dive deeper, hunt for what He has and who He is, a little longer each day, each week, each circumstance. As we stay the course for a new resolve in this next decade, many of us have started the year with a “word for the year.” I have approached this tradition each January and it’s been great to use as a barometer throughout the year. Once, I felt the Lord impress upon my spirit “inhale.” I knew He was calling me to focus on taking a breath and to build internally within my non-profit that fights human trafficking in the U.S. Last year, I heard “strengthen” and knew deep down that it was intended to focus on strengthening my family in 2019 for all that God wanted to birth in 2020. This year my friend told me her word was “believe” and I immediately went and bought her a necklace that said believe. My other friend got “resurrection” and we talked about doing a word study to let the Holy Spirit speak to our hearts on what our words means to us. I’m guessing you may have a word that God has stirred in your spirit too. Or maybe this is the first time you’ve heard about this intentional way to press more deeply to Jesus with intention. Wherever you are, I want to invite you into something special this year: Pursuit. Take Inventory of what you NEED Psalms 34:14 is a great reminder of God’s directive to pursue. Turn away from evil and do good; seek peace and pursue it. — ESV Pursuit isn’t just about going after more or increase. Pursuit can be about finding more rest, more space, more peace. Take some time to lean in and take inventory of what you need in this season. How can a young person live a clean life? By carefully reading the map of your Word. I’m single-minded in pursuit of you; don’t let me miss the road signs you’ve posted.[1] What road signs has God posted for you that you need to pay a bit more attention to? Start by simply jotting down the first word that comes to mind. Then close your eyes and imagine how your heart could feel if you had more of it. Fill in the blank with YOUR word for the year and let’s not tip toe into what’s next. Let’s hunt it down and overtake what God has. PURSUE REST PURSUE HOPE PURSUE BELIEF PURSUE DESTINY PURSUE KINDNESS PURSUE SELF-CONTROL PURSUE ___________________ YOU DECIDE. What are you practicing? It’s who you are and the way you live that count before God. Your worship must engage your spirit in the pursuit of truth. That’s the kind of people the Father is out looking for: those who are simply and honestly themselves before Him in their worship. God is sheer being itself — Spirit. Those who worship Him must do it out of their very being, their spirits, their true selves, in adoration. — John 4:23-24[2] Whatever we practice gets stronger. That’s how our physical muscles work, but that too is how our spiritual muscles can work. If we practice gossip, it gets stronger. If we practice being critical it grows and spreads. BUT if we practice biting our tongue and using self-control, that fruit will ripen. If we practice kindness and grace, that too will strengthen. Creating new habits in our lives is being honest with ourselves and with God – being “honestly ourselves” and identifying the areas we need to get stronger in. What is holding you back? Fear? Shame? Lies about yourself you’ve believed. When I started my journey toward true freedom, I had nothing. No money, no social capital, I knew no one. I slept on couches and got on food stamps and kept relying on Him. What are you practicing and what is holding you back? Put in the workout to strengthen what you need and pursue healing in the areas that you need to overcome. If you really want all that God has for you, if you want every promise that He’s gently whispered years ago, and you haven’t yet seen. This is your year to pursue hope, to pursue renewal of dreams, to pursue more. You can choose to do things like you’ve always done, or you can choose to pursue God like never before. Reviving A River With Landscape Design
There’s something about moose being one of the bigger challenges of a project that signals this isn’t an average landscape job. And, the Blue River Habit and Restoration project carried out in 2017 in Colorado certainly was not ordinary.
A sitting area on the banks of the Blue River in Colorado features river rocks underfoot. (Photos: Rocky Mountain Custom Landscapes, Inc.)
Skiers likely recognize Breckenridge, CO for its world-class peaks, but what the snow covers in the winter doesn’t necessarily look quite as glorious come spring. Located just west of the Continental Divide, this area was originally settled by miners who stripped the land and left piles of rocky waste in their path. Work has been ongoing for more than two decades to clean up the rubble and improve fishing along the Blue River, which drains the area and provides drinking water for the Denver metro area.
In fact, the 2017 version of the river restoration project earned a silver award for the Eagle, CO office of Rocky Mountain Custom Landscapes, Inc. This award was part of the 2018 Awards of Excellence (ACE) for the National Association of Landscape Professionals (NALP).
Brian Wells, Rocky Mountain Custom Landscapes’ construction manager for that segment of the project, says the goal was to create a natural park setting where people can hike along the Blue River north of the Breckenridge central business area and restore a stretch of the river along Coyne Valley Road and Colorado Highway 9.
“We were recommended by (Denver-based) DHM Design, who did the overall design,” says Wells. “We had done some work with them over in the Aspen area. It was a bid process, and there was a total of three bids, but we were awarded the contract.”
Wells adds that weekly meetings between Stephen Ellsperman and Jason Jaynes of DHM and Shannon Smith, who oversaw the project for the Town of Breckenridge, contributed to a very cohesive team that was instrumental in the success of the project.
Hardscape Presents Sitting Areas
Hardscape work consisted of three sitting areas with a path going through the project area, and then work on the river itself.
“The path is granite crusher fines—just pulverized granite,” says Wells. “It’s roughly three feet wide and we put it in four inches deep and did some real loose compaction. The idea is the path will erode and go into the ground as people and wildlife choose their own way. But, honestly, that’s going to be years down the road.”
The sitting areas themselves are also a bit atypical. These are embedded cobble areas that are completely permeable. For this project the company utilized river rock from 3″ to 5″ in size—including some from the job site—in a sand-set base.
“It took a bit of experimenting with the rock size so that it compacted right and felt right under your feet,” he says. “It’s a matter of getting the subgrade correct, but once we got that in there and compacted with the sand and fill material, it’s rock solid and looks great.”
The look and performance so far have been good enough that Rocky Mountain Custom Landscapes is now incorporating the embedded cobble hardscape in work for some of its higher-end residential clients as an alternative to flagstone patios.
“You can install it and forget it,” observes Wells. “It maintains itself; it looks fantastic, and the payoff per dollar is extremely high.”
Attracting wildlife to the restored area has been one of the project goals. Moose, elk, and deer have been increasingly seen in the area. Meanwhile, this stretch of the Blue River is an aesthetically and functionally pleasing area for people to enjoy as well. (Photos: Rocky Mountain Custom Landscapes, Inc.)
River Banks And Plantings
Work on the river involved grading, excavation, and backfill, although Wells says part of the stretch included areas that are designated as wetlands that were not disturbed.
“We did erosion control along the river itself with wetland plantings and fiber mesh along the edges,” he explains. “We also placed boulders and some deadfall logs to give habitat for the fish because they really want to encourage fly-fishing.”
Because of the condition of the river through the project site, efforts on one bank were made to save plant material and blend it with new plantings. However, the other side had been strip-mined and was barren.
All the plantings are native to the area but required additional effort on the part of Rocky Mountain Custom Landscapes to make them work.
“A lot of it was absolutely rock soil, which had to be top-dressed,” Wells says. “We had 3″ to 4″ of soil that was top-dressed in a lot of the areas.”
While a lot of the plantings were immature, the project did incorporate some evergreens in the eight-foot range.
Somewhat surprisingly, the project area also includes a 24-zone irrigation system that delivers 55 gallons-per-minute. Wells explains the decision to irrigate was based on 2017 being at the tail end of a drought in the area. There was the desire to get what he describes as a substantial amount of seeding on top of the plant material to germinate, as well as maintain the trees and plant material the next time a drought occurs.
“In 2017 we watered it pretty heavily, but toward the end of that season we started scaling back,” he says. “Last season we had it down to two days a week, and we’ll see how it goes this year based on snow and moisture. I’d anticipate maybe two days a week, although it took off and established pretty well.”
Protecting Plants, And Moose
More than drought conditions impacted the project. At 9,600 feet in elevation, Breckenridge has a short construction season.
“The weather was a bit challenging, both at the start and the end of our seasons,” says Wells. “The weather was a huge challenge getting going in the spring and then trying to wrap up the job.”
As it was Rocky Mountain Custom Landscapes spent four months on the site in 2017 and an additional two months in 2018.
It’s the plantings that ultimately created one of the biggest challenges on the project, though. Wells says the moose, elk, and deer who use the area and will eventually help create the paths through it, viewed the new greenery as—in his words—“gourmet salad,” and figuring out how to keep the plantings in the ground generated some head-scratching.
Work on a segment of the Blue River included grading, excavation, and backfill. Part of the stretch included areas designated as wetlands that were not to be disturbed. (Photos: Rocky Mountain Custom Landscapes, Inc.)
“We used some natural-type sprays,” he says. “In a lot of cases, the only thing that would work was temporary metal screening around the bigger trees.”
All the screening will ultimately be removed, but for now, it remains until things get better established. And, Wells says the animal incursions are a mark of success for the job.
“The whole goal of the project is to attract the wildlife,” he says. “We want them to use the area, along with people, so it’s really ‘mission accomplished’ if they’re coming already.”
In the meantime, Rocky Mountain Custom Landscapes is still at work on the Blue River. Wells says the company spent part of summer 2018 further south on the little river incorporating a lot of the same plant and hardscape materials and they were back on that site once the weather allowed, with a completion goal around Independence Day this year.
