Authentic Cuisine: Cocido Madrileñe
Trying authentic #Spanish #cuisine: Cocido Madrileño #TravelWriting #TravelBlogging #Travel
Emily and I had reached the end of our time in Spain, which included our week in La Alberca, a weekend in Barcelona, and a couple scattered days in Madrid. Monday, after our wild Sunday night in Barcelona, we had to catch an early flight back to Madrid. In the morning’s haze light, the city looked a little rough. The party had clearly gone on late, and now as we hustled our way through the alleys…

Back to London Town!
I arrived back in London on Saturday afternoon to take my new best friend, Theo out for a walk! He was so excited, he pooped three times. I was not prepared. And so my ten days of dog sitting begins.
In the evening, I went out for some delicious ramen at a place called Nanban in Brixton. A lot of my days here blend together here but here’s a rough idea: -Saturday afternoon went to the Royal Air Force Museum and then Hampstead Heath for a view of the city
- Sunday night went to Camden Market and then to see Once Upon a Time in Hollywood
- Monday evening met Mom’s friend Amy from Diverbo for Italian food - Tuesday night saw a friend, Chandler perform in The Wheel. I saw on instagram his parents sent him a rolling pin for his first performance with Guildhall School, so I decided to get him flours (instead of flowers) for his performance.
- Thursday night ate lunch at Dishoom for three hours with Chandler and then drinks with my friend from New Zealand, Charlotte
- Friday spent all day getting to the Harry Potter Studio Tour. It was very cool, despite lots of people and it being over an hour outside the city. I saw a bunch of the sets and how they make the costumes and sets. - Saturday went to watch the semi-finals of the Rugby World Cup in a pub (England 19 v. New Zealand 7). I was rooting for New Zealand.
- Sunday went to the Natural History Museum
Somewhere in there I also went to the V&A Childhood Museum, Science Museum, and to Okan at Brixton Market, where they make Okonomiyaki, one of my favorite dishes that Stephanie Izard does a version of. Oh, and a lot of walks with Theo to Clapham Common, Tooting Common, and Agnes Riley Garden. Although it took a few days for Theo to warm up to me, the second half of the week he was sleeping outside my door. And then one night, he was on the floor of my room while I was getting ready for bed, so I let him sleep there. About 15 minutes later, I hear him shuffle around, and he’s just looking at me from the end of the bed. I say “c’mon” and he jumps into the bed and stays there the whole night, only moving once to switch his head to the second pillow. Think he was pretty cozy!

I’ve tried my fair share of Spanish classes in the past: everything from traditional schools to language apps to meet ups. I can honestly say that the Pueblo Español by Diverbo Spanish immersion program was by far the most helpful program in taking my Spanish fluidity and confidence to the next level. If you’re eager to take your Spanish from mal to major, click to find out why I recommend this program!

I haven’t seen anyone post this here before, so I wanted to let y’all know about an easy way for native English speakers to add a week of cheap travel to a European trip!
What’s the deal? There’s a company called Diverbo that runs language immersion camps for Europeans trying to improve their English. You, as a native English speaker, can volunteer at these camps. And in exchange for lots of English conversation, you get (free) accommodations, (amazing) food, and (most likely) some new friends!
Wait really? Yes.
Do you have to pay any money? Nope! Well, I guess you do pay some money. You have to get yourself to the right hub city at the right time. They aren’t paying for your flights or anything. Also, beer/wine is included with your meals, but if you wanna buy yourself more drinks later in the evening, that’s on you. However, there’s not a “program fee” or anything.
But… is it legit? Yes! I did it last year and had an amazing time. To be honest, it appealed to me because I was backpacking around Europe on a budget, and I was looking for ways to save money. But Y’ALL. I was totally blown away. It was one of the best experiences of my 9 months in Europe, and I’m already trying to figure out how I can make it to another one of these in the future.
Okay, where exactly? The programs are in Germany and Spain. You meet up in a major city (it varies by program), and then you take a private Diverbo bus to a more remote city/village for the camp.# I know this sounds kind of weird, but the idea is to be away from everything, in a little English bubble. It’s probably also cheaper for them to rent out entire hotels in the boonies.
More info, pls Um, right??? Here’s a blog post I wrote about my time at Englischhausen in Laubach, Germany. If you have any other questions, feel free to ask!
Disclaimer: I have absolutely no affiliation with this company. This isn’t sponsored. I’m not secretly on the marketing team. I just thought it was a cool thing.

a temporary family
how could i be closer to someone i’ve known for 10 days than people i’ve known for years? It’s funny how for a couple weeks, they were my whole entire life and then I knew I’d never see them again. Summer camps have that distinct ability to create strong, intense friendships without hesitations in a way that’s different than at school or back home. I think it’s the fact that the friendship is on a timeline that changes things. Knowing that if you desired, you’d never have to see them again - all the embarrassing moments forgotten.
Last summer, I stayed in Spain for 2 weeks to attend and volunteer at an English immersion program and by the end - the teens there were like my family. It was me and about 79 other teenagers, approximately 40 of them from Ireland, Scotland, America and many other native English speaking countries and the remaining half from Spain. We spent two weeks together; a couple days exploring the capital of Madrid with all the other ‘anglos’ and then settling down in a quaint resort in the beautiful Salamanca. Days were filled with community building activities, traditional Spanish foods and cultures as well as incorporating more ‘western’ elements and of course one-to-ones. At the end of my two weeks there, I knew the name and location of all 79 other campers and had built friendships nothing like that of mine back home. Even with the Spanish kids who spoke little English, a connection was created. We broke the language barrier with charades, google translate and my desperate pleas to “habla ingles”. I didn’t speak Spanish back then - I barely know Spanish now, but “no entiendo” and “podo ir al bano” was all I truly needed. The short 12 day timer on us created an impulse to jump right in; to actually be yourself and let it show.
I love camp. Before last summer, I had never been to a ‘real’ overnight camp; my only experiences being from overnight leadership trips with my school, a multitude of day camps, family vacations and trips to my friends’ cottages. It’s the whole living with strangers concept that fascinates me - within days, you’ll discover quirks that would take months to uncover back home. They truly become your family. Especially where no one knows me, I can do whatever I desire and not worry about it following me home to my reality. Camp is a safe haven - a place to run away from problems, life and start something new. It’s a break, creating distance, a change of pace.

It's so awesome having everyone I've met these last two weeks inviting me and my two friends back to Europe next summer. Everyone has been amazing and is offering us places to stay and food and tours and I'm so grateful to have made these friends. I've only been back for two days and I already can't wait to go back. Any advice on traveling Europe?

An All-English Community in the Heart of Spain
An All-English Community in the Heart of Spain
Greetings! I just got back on Friday from a week at La Abadia de Los Templarios in La Alberca, a small town an hour south from Salamanca. What was I doing in the middle of the Spanish countryside might you ask? Well, I volunteered as an English language speaker (not teacher!) at an English immersion camp called Pueblo Ingles. Pueblo Ingles is exactly what it sounds like. The company recreates the…

Hey there! I saw your post about your experience at Diverbo, and I was wondering if you can give me some advice since I'm going this summer. I'm also an Asian girl so I'm a bit worried since I look through all the photos and just see a bunch of white ppl lol
hmmm yea there’s a lot of white people idk both times i went there were some racist people but it’s not worse than your average racist jokes. like the stretched out eyes and especially when we did a karate class they made these really dumb like stereotypical karate yells and made it look super dumb but those were just the couple of douchebags everyone else was really nice and race wasn’t really an issue but i guess they definitely aren’t as used to nor educated about asians as your average american since there’s less racial diversity in europe but yea i hope you have an amazing time and that the dumb racists don’t bring you down!
