Arugula and wild rice salad. Wasn’t sure how I’d feel about rice and lettuce in the same dish but it was tasty. Tossed in walnuts, dried cranberries, green onions and cubes of cheese. Drizzle with a sesame ginger dressing. So i wanted to make shrimp and grits for dinner but discovered that I didn't have the white stone ground corn meal on hand. So dinner became polenta and shrimp. This was so delicious. I wish I'd have a past bowl to plate and show it off properly. Bellow is the original recipe but of course i adapted it by adding extra veggies. Lola’s Spices Southwest Shrimp Tacos 🦐 1 Tbl Lola’s Spices Southwest Blend 1 Lb. Shrimp (peeled and deveined) 2 Tsp. Olive oil 1 Lime *quarted Corn tortillas 🌮 *As pictured toppings-Chopped Cilantro, Guacamole, Shredded Cabbage and Queso Fresco 🌮 Preheat your corn tortillas and keep warm until you're ready to serve 🦐 Combine Lola’s Spices Southwest Blend, Shrimp, and Olive Oil until coated. VEGAN AND GLUTEN FREE BACON STUFFED CORN FRITTERS. Ok so it’s Sunday evening and I’ve had nothing to eat all day. I forgot that’s the bottom line really. I’ve been so engrossed in working on my new workshop cupboard that I’d forgotten all about food. So it’s come down to it and yes I’m hungry but I want something naughty but quick and simple. One of the things I used to make for Christmas breakfast for my kids was bacon pancakes they loved them and fought over them every single time. So I’m doing the fridge scan thing and there do I spy the leftover corn fritters batter and under it in a container the veggie bacon. Well that was it!!! A wicked plan was born and here it is... oh and the red stuff on top... that’s some of the leftover pizza sauce I made the other day warmed through in the same pan the fritters were cooked in and plopped on top. Frankly I have to say ... I ain’t sharin’!!!
