Koreyan Umbreon (Dark/Dragon)
#197 - Though the Korey region is famous for its technological advancements, these marvels are not all feats of engineering; some of the technologies are actually blessings bestowed by legendary Pokémon. Koreyan scientists, seeking to explore space and test theories of relativity, prayed to Dialga and Palkia. One day, a researcher’s devoted Eevee joined in the prayer; impressed by their devotion, Dialga and Palkia granted the Eevee a special evolution to aid in their mission. This Dark/Dragon-typed evolution, now known as "Koreyan Umbreon," is perfect for space exploration, able to survive without air, withstand strong radiation, and endure high g-forces. These Eeveelutions carry a "gravimeter orb," indicating gravity's direction by the color it displays. To trigger this evolution, trainers must be devout to Dialga and Palkia and knowledgeable about relativity, making Koreyan Umbreons very rare.

I intended to depict it drinking lava, but I suck at drawing liquids. 😅

Everyone asks whether Fire-typed pokémon can swim in lava, and we mostly agree yes. But can they drink lava?
For both, but especially the latter, I think it depends on the Pokemon! IMO, all Fire-type Pokemon do not have equal fire-proofing and heat resistance. 
For example, could Groudon drink lava? Certainly.
Magcargo, Heatran, or Camerupt? For sure!
But Vulpix, Talonflame, or Pyroar? Ehh, probably not?
So I think it's a case-by-case basis. I’m curious where you fall in this debate!

Since the new Legends Z-A seems to feature mega evolution, what pokémon would you like to see having mega evolution granted for? In my opinion, it would be so cool if the eeveelutions were granted.
I'd love for there to be new Mega Evolutions; it's definitely my favorite gimmick. I don't imagine they'll go there, but it would be cool to see the Eeveelutions all get Megas. I think more starter Pokemon should get Megas, to even the field there (I would love Swampert to get a new Mega, but I know that won't happen!). I also hope the lore pulls away from the "Mega evolution is harmful" direction SuMo went in.
Here's a list of who I'd like to see, which is a mix of "cool Pokemon they could make even cooler" and "kind-of-forgettable Pokemon they could really elevate with a Mega":

Loafeon (Grass/Fairy)
#??? - Eevee are uniquely adaptable Pokemon that are shaped by their diet, relationships, and environment. Grass/Fairy-type Eeveelutions, named Loafeon, have never been found far from human settlements and seem to exist solely alongside humankind. While there are several theories on the origin of these Pokemon, an anecdotal story persists as a common myth: There once was an Eevee that lived with a poor baker; without much other food to offer, the Eevee lived off of spare loaves from the baker. Over time, the unbalance nutrition of a bread diet was overcome by the natural adaptability of Eevee, with the apparent side effect of the spare carbohydrates producing an edible outer coat of bread. Though this tale does not explain how Loafeon have become relatively common, it is believed that feeding a beloved Eevee certain types of bread and pastries can trigger this evolution. Because Loafeon’s bread does not require dry heat like regularly produced baked goods, it is full of nutrients and healthy bacteria that are normally lost during the baking process. Similarly to shaving a Wooloo, a Loafeon’s bread can be safely harvested without harming the Pokemon. Rumor has it that pairing a Loafeon’s bread with a Daireon’s milk will boost the healthiness of both ingredients, though this has yet to be formally tested by Pokemon biologists.

This question is hypothetical, but: If a Fire-typed Pokémon commits arson, whom should be arrested?
Oooh, good question. If it's a wild Pokemon, I think it would be considered a natural causes type deal, like a lightning strike or wild fire that reached a town. If the Pokemon belongs to a Trainer, I think the Trainer would be responsible!
I bet home insurance would have wild Pokemon fire as a coverage type, which you would want depending on the types of wild Pokemon that live in the surrounding area.

So I had a weird dream last night. I was looking through this blog, and some new dual-type eeveelutions were there. One of them was Dark/Fire-typed one named... "Informeon"?? It must've been a corrupted reminder to your Fire/Dark Inferneon. What a weird dream...
That's funny! Wow. Informeon (Dark/Fire), the nark Pokemon!
This Eeveelution sneaks along in the shadows, capturing hot gossip and bringing the intel back to their Trainers. The spicier the secrets they learn, the more powerful their attacks become!

I wonder, why don't we have any Fight-type dual type eeveelutions yet?
Fighting’s just not one of my favorite typings, and I find it a bit narrow and restrictive in contrast to other types that can be interpreted in a wider variety of ways.
That said, I’ve actually been sitting on a fully designed part Fighting-type dual type Eeveelution for a while (it's fully sketched but I haven’t done the final art yet). I’ll have to get that guy out soon!

Is there going to be more food based eeveelutions? The Loafeon one is really nice
I'm glad you like @dannyundos' "Loafeon"!
They're fully responsible for the bread/food concept and general look. I know they have other Eeveeltuions planned, but I'm not sure if any more of them will be food-based.
As for my own designs, I don’t have any food based Eeveelutions planned currently (besides possible Halloween Eeveelutions lol). Since Sylveon exists I usually pull Fairy-type traits from it or other lore rather than food like some other Fairy-type Pokemon, but I’m always open to suggestions and I still have a lot of Fairy-types to go!
(I do have some edible plant based Eeveelutions, such as Citreon and Pitayeon, if that counts for you).
You may also be interested in dannyundos' Daireon, which is not a food-based Eeveelution, but does produce edible milk like a Miltank.

Daireon (Fairy/Water)
#??? - In an effort to take advantage of Eevee's incredible adaptability, some biologists have attempted to artificially create new evolutions through successive breeding with a fixed species. One such successful result was obtained by breeding Eevee with Miltank, resulting in the Fairy/Water Daireon. Due to the genetic influence of their Miltank mother, these Eeveelutions possess small udders, through which they can produce and secrete a nutritious milk. However, unlike Miltank, both male and female individuals are capable of lactating. The milk produced by Daireon is rich in lactose, minerals, and IgA antibodies, making it both a very sweet and healthy drink. As such, biologists are attempting to mass produce the milk, though the rarity of this evolution remains an ongoing obstacle.
Daireon was commissioned by @dannyundos, and is based off of their concept of a fairy/water Eeveelution inspired by dairy cows.

I always love reading (and working on) your Eeveelution concepts. They’re always well thought out and interesting. The way the Korey region produced these Eeveelutions for specific purposes and jobs reminds me of one of my favorite game franchises, Horizon! Very cool.
I hope to see more of the Korey region someday
My concepts of region forms of Eeveelutions
My fanmade Pokémon region is named Korey (adj. Koreyan), based on South Korea. Here's the concepts of Koreyan Eeveelutions, possibly to be commissions to @inprogresspokemon. The common concept is, they all were created by the great genetic technology of Korey for specific purposes:
Koreyan Vaporeon (Water/Flying): Based on cloud. They hover around, and can pour rain down at will. Created for manipulation of weather.
Koreyan Jolteon (Electric/Ground): Based on electric ground. They can sense electric and magnetic fields, and were created for electric safety check.
Koreyan Flareon (Fire/Fighting): Based on firefighters. They were created to rescue people from fire-related danger. Despite being Fire-typed, they don't produce fire, but rather, steam and carbon dioxide.
Koreyan Espeon (Psychic/Steel): A pun on the phrase "balls of steel". Created for mental care, especially for encouraging people to carry on.
Koreyan Umbreon (Dark/Dragon): Based on Einstein's relativity theory, and cosmology. Created for exploration of outer space and testing related physical theories.
Koreyan Leafeon (Grass/Bug): Basically the Eeveelution version of the Leavanny line. Created for manipulating and sustaining the ecosystem.
Koreyan Glaceon (Ice/Ghost): Created for exploration of quantum phenomenons under extremely low temperature, such as superfluids, Meissner effect, and Bose-Einstein condensate.
Koreyan Sylveon (Fairy/Poison): Created for production of antidotes and curing people thereafter. Specialists in emergency units. Their fangs can act as disinfected syringes.
