some tips for chopping veg -
hold the knife correctly, it will save your hand from hurting while you struggle. pinch the blade between your thumb and the side of your pointer finger, and hold the handle to the palm of your hand with your other three fingers. this will give you more control over the blade and end up being more comfortable in the long run.
make sure what youre cutting is shorter than the length of your knife, you're going for one stroke per cut. if the veg is longer, chop it in half first. a lot of people tackle chefs knife jobs with paring knives which can be dangerous - if you prefer the smaller knife, cut your product down to size. its important that you can see where the tip and blade of your knife is in relation to your non-knife hand and fingers.
make your bigger cuts first - for example if you're cutting a carrot into cubes;
1. cut the whole carrot in half or thirds in order to get to a good length for the size of your knife
2. cut the pieces into slabs to get the desired thickness of the cubes
3. cut the slabs into sticks, you can usually do two or three at a time, just make sure to keep your fingers out of the way. if youre worried, only do one slab at a time.
4. cut the sticks into cubes. you can grab a bunch, line them up with the side of your knife, hold them down with one hand and chop em into cubes. just go slow when you're cutting around your fingers.
this will help you save time, and youll be able to cut multiple slabs into sticks at one time.
things to avoid -
relying on serrated knives - if you cut yourself with a serrated knife its going to be much more painful and harder to heal than it would be with a chefs knife.
using dull knives - if you use knives a lot, get a sharpening kit. even if its just one of those little v shaped sharpeners that arent great for your knives, it will be safer than leaving them dull. this is because it takes more physical effort to cut things with a dull knife, and if, for example, youre cutting through the skin of a tomato with a dull knife and getting frustrated, once you finally break that skin the knife is going to go shooting through the softer flesh of the tomato and whatever else is in the path of the knife - such as a few fingers. Our skin doesnt have the same surface tension as a tomato and once you have that momentum going its gonna be tough to catch yourself.
lastly, practice makes perfect. plan a mashed potato bar or something and spend a little while cutting potatos because good knife skills can save you a ton of time and probably some hospital bills too, not to mention how valuable it is to be able to cook. once you're good at chopping it gets easier to adlib recipes because you know you can just chop something up and toss it in while youre cooking. plus it makes you look cool.
Any recipe that involves a bunch of vegetable chopping yet promises a mere "10 minutes" of prep...... who the fuck do you think I am, man. You think I'm a chef? You think I'm a professional chef with lightning knife skills and impeccable mise en place? These veggies and I are in it for the long haul, my man, we're gonna be spending at LEAST half an hour struggling along together before they're ready to go in the pan

A Waltz Down Memory Lane: Returning To Campus Post-Stroke (2021)
When I left the campus of my culinary school in December, I seriously thought I was never going to return: I had been accepted to a different culinary school, and was really feeling a mix of emotions concerning my career: a lot of rage, depression, confidence, and even cockiness. I didn't realise as I walked out of the side door on the last day of school that this would be the last time I dawned a chef's coat due to a brain lesion that was patiently waiting to screw me up. I didn't realise that in two months time, I would be left, albeit temporarily crippled: somehow more angry than before, a broken career, and no direction in life.
If I could've warned past me, I would've.
Today, I had a quick college orientation, which, unfortunately for me, took place on the campus that I had exiled myself from nearly a year ago: I sat in a room, listened to a woman go on and on about building each other up, and then was escorted into the hallway I had spent the beginning and end of my career in, walking past my kitchen, where two students made hamburgers at my old station, and I found myself sighing in relief to see neither chefs were there to ask questions about what had happened to me.
Somehow, even though I dispelled the myth ten minutes earlier that I was a failure: looking into the window of my old stomping grounds actually reinstated those sickly feelings I had developed over the last six months. I quickly walked past, before learning we also had another ex-culinary member in the group. Suddenly, there was a kind of empathy in the air; the quiet "oh no, you too?" that is often exchanged by former line cooks from similar kitchens.
Suddenly, I didn't feel that alone anymore.
Look, culinary is hard: I was so ready to sell my soul to the restaurant industry just to realise I didn't need culinary school to do so and to actually ruin my health trying to achieve what would later be rendered a pipe dream. I can still be a part of this industry, but I have to be damn careful about what I due in order not to give myself another stroke.
To the former chef and cooks who had to quit due to their health: you are not a failure: you are an amazing person who deserves to be happy and have a life where you're not stewing over the what ifs. You are also not alone here: there's a lot of us who weren't able to continue, and that's okay.
To students: don't over stress yourself too much: take care of yourself and use coping skills to lower stress levels. Don't hurt yourself trying to be the best chef in the world: your health is more important as your skills and portfolio.
