If the progress of infection eventually incapacitates the infectee, I imagine there'd be a stage of the outbreak were there are more shambling "corpses" than there are able bodied zombies? Do you think the infection would eventually be able to be contained/die out?

Eventually mobility functions would shut down completely. The person would still be alive but they can't move anymore. The final stage is fully dissolving into a puddle of fire fresh sludge 👍 idk about resulting environmental impact, but it's probably not good! Presumably a good chunk of humanity survive tho, especially places that don't get many/any dragonbreath products.
