These popsicles made with creamy coconut are great for summer. They are easy to make, taste great, and don't have any dairy.

Ingredients: 1 can 13.5 oz coconut milk. 1/4 cup sweetened condensed milk. 1/2 teaspoon vanilla extract. 1/4 cup shredded coconut optional.

Instructions: Put sweetened condensed milk, vanilla extract, and coconut milk in a blender. Mix everything together until it's smooth. You can add shredded coconut for extra texture if you want to. Put the mix into popsicle molds. Put in the popsicle sticks and freeze until solid, which should take at least 6 hours. Run warm water over the molds for a short time to get the popsicles out.

Will you grab one? They are creamy, dairy free, gluten free, sugar free tropical cooling popsicles.  These were the ideal snacks after yesterday workout 💪with kids! Yep parents are now the Physical Education teachers during this quarantine. This new role is motivational to me personally as it makes stick to my workout schedule. For my kids the motivation was this amazing creamy popsicle and also they needed to submit this as an assignment to their actual school PE teachers!
